1 package spice cake mix (regular size)
1/2 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 cup water
1/4 cup molasses
6 teaspoons vanilla extract

Steps:

  • In a large bowl, combine the cake mix, ginger and baking soda. Stir in water, molasses and vanilla and mix well. Roll into 10 balls. , Place 3 in. apart on greased baking sheets. Flatten slightly with a glass coated with cooking spray. , Bake at 375° for 13-15 minutes or until surface cracks and cookies are firm. Remove to wire racks to cool.

With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

½ cup butter, softened
½ cup butter flavored shortening
1 cup packed light brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

2 1/4 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground pepper
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/2 cup packed light-brown sugar
1/2 cup granulated sugar, plus 1/3 cup for coating
6 tablespoons molasses
1 large egg

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Line two baking sheets with parchment paper; set aside. In a medium bowl, whisk together flour, baking soda, salt, ginger, allspice, and pepper.
  • With an electric mixer, cream butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy. Beat in molasses and egg. With mixer on low, gradually beat in flour mixture until just combined. Flatten into a disk, wrap in plastic, and freeze for 20 minutes.
  • Divide dough into twelve 2-inch balls. Place remaining 1/3 cup granulated sugar in a bowl. Roll balls in sugar to coat; place at least 4 inches apart on prepared baking sheets. Flatten into 3-inch rounds. Sprinkle with sugar remaining in bowl.
  • Bake until brown, rotating sheets halfway through, 12 to 15 minutes. Cool cookies on a wire rack.

2 cups all-purpose flour, spooned and leveled
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 1/2 cups sugar, plus more for sprinkling
1 large egg
1 teaspoon pure vanilla extract
1/4 cup sour cream

Steps:

  • Preheat oven to 350 degrees, with one rack in upper third and another in lower third. In a medium bowl, whisk together flour, baking powder, salt, and baking soda; set aside.
  • Using an electric mixer on medium-high, beat butter and sugar until light and fluffy, 2 to 4 minutes. Add egg and vanilla; beat well to combine.
  • With mixer on low, add half the flour mixture, followed by sour cream, then remaining flour mixture; mix just until smooth. (Dough will be stiff; you may need to finish mixing it by hand with a wooden spoon.)
  • Drop mounds of dough, each equal to about 3 tablespoons, 3 to 4 inches apart, onto two ungreased baking sheets; sprinkle with sugar. Bake until edges of cookies are just firm and tops are barely beginning to brown, 20 to 25 minutes, rotating sheets once halfway through. Transfer cookies to a rack to cool.

1/2 teaspoon finely ground black pepper
1/2 teaspoon baking soda
8 ounces unsalted butter
1 teaspoon vanilla
1 cup granulated sugar
1 cup light brown sugar, firmly packed
2 eggs
3 cups quick-cooking rolled oats

Steps:

  • Sift flour with spices, salt and baking soda. Set aside.
  • In large bowl of electric mixer, cream butter. Add vanilla and both sugars, and beat well. Add eggs and beat to mix.
  • On low speed, beat in sifted dry ingredients.
  • Stir in oats with spoon.
  • Line two cookie sheets with aluminum foil, shiny side down. Measure out 1/4 cup of batter for each cookie and place 5 to 6 cookies on each sheet.
  • Bake at 375 degrees for 12 to 15 minutes on racks that have been placed on the second and third rungs in the oven. Reverse sheets once during baking. The cookies should still be quite soft when they are done. Cool on rack before removing from sheet.

2 tablespoons water
2 tablespoons butter or 2 tablespoons margarine
3 1/2 cups all-purpose flour
1 1/4 teaspoons ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup hazelnuts, coarsely chopped
1/2 cup dried cranberries or 1/2 cup raisins
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon lemon juice

Steps:

  • Mix honey, sugar and water in a medium-size saucepan.
  • Add butter and bring to a boil, stirring once or twice.
  • Let cool.
  • Heat oven to 400 degrees.
  • Grease large cookie sheet(s).
  • Mix flour, spices, baking soda and salt in a large bowl.
  • Stir in nuts, cherries, then honey mixture (dough will be sticky and stiff).
  • Divide in 4 pieces.
  • With floured hands, pat 2 pieces in 6-inch rounds on each prepared cookie sheet.
  • Bake 1 sheet at a time 13 to 15 minutes until cookies are golden brown around edges but still soft to touch.
  • Loosen with spatula. Slide onto wire rack to cool.
  • Stir Glaze ingredients until smooth. Brush on cookies.
  • Let set, about 1 1/2 hours. Wrap individually.
