This recipe is a no fail for the most tenderest wings, drumsticks, and even turkey necks you will find. You can do just wings, or just drumsticks, or just necks. Also, You can lightly brush them with your favorite bbq sauce just before putting them in the oven. Enjoy. :)

1 tablespoon butter
1 tablespoon olive oil
2 turkey wings
2 turkey drumsticks
4 turkey neck (optional but definitely worth trying)
3 tablespoons butter, melted
salt
black pepper
1/4 cup barbecue sauce, your favorite (optional)

Steps:

  • Preheat oven to 250F (low). Heat 1 tbsp butter and the olive oil in a large ovenproof skillet (or transfer to 9x13 after browning) over medium high heat.
  • Add wings and drumsticks only. Sear outside to brown, turning as needed, about 5 minutes.
  • Add necks so that all the meat is single layer in the pan. Season well with remaining butter, salt, and black pepper. (Brush with BBQ sauce now if using).
  • Cover tightly with lid or aluminum foil and bake for about 3 1/2 hours (4 hrs if using legs).
  • Carefully remove lid (watch for steam). Enjoy.

Most of us cherish the food we ate as children. When I was a little girl, I loved eating chicken necks, despite them not having much meat. As an adult, I learned that turkey necks have a similar flavor and more meat!

4 lb Turkey Necks
3 Carrots
1 Onion
4 Bay Leaves
Salt (to taste)
Light Olive Oil (for frying)

Steps:

  • Optionally, cut turkey necks into smaller pieces.
  • Dice the onion into half rings, then clean carrots and cut it into large pieces.
  • On an oiled hot skillet, cook turkey necks, creating browned sides. Remove them from the skillet and set aside.
  • Cook onion in the same skillet, until it's slightly browned.
  • Season meat and vegetables with salt, add one cup of hot water to the dish, cover it with a lid. Place it in an oven at 350F to bake for 1.5 hours or until the meat begins to separate from the bone.
  • Serve turkey necks with potatoes, rice or simply on their own, while they are still warm.

If you love Jamaican oxtail then you will definitely enjoy this recipe. I'm talking pieces of turkey neck that are generously seasoned, seared to lock in that flavour then cooked in the slow cooker for several hours until a rich gravy is formed.

2 lb turkey neck ((900g) chopped into small pieces)
1 tbsp browning sauce ((15g)(only used this amount if using my homemade version, see notes))
2 tbsp all purpose seasoning ((30g) see notes for the link)
1 tsp black pepper ((5g))
½ tsp ginger ((3g))
½ tsp paprika ((3g) optional)
½ tsp onion powder ((3g) optional)
1 large onion
4 garlic cloves (minced)
1 large carrot (sliced)
1 cho cho (christophine) (chopped very small)
2 tbsp tomato paste ((30g))
6 sprigs of thyme (tied into a bundle)
2 tbsp browning sauce ((30g) only add more if using my homemade version)
1 tbsp pimento berries ((15g))
1 tsp hot sauce ((5g))
3 cups water or turkey/chicken stock ((700ml) use hot water)
1 cup butter beans (dried (or 1 15oz can, drained) cannellini beans works too.)
3 tbsp olive oil ((45g))
additional pink salt if needed
2 tbsp tapioca starch ((30g))
2 tbsp warm water ((30ml))

Steps:

  • Wash the meat as per Caribbean custom (see notes section) and dry it off completely.
  • In a large bowl, add the turkey neck, all purpose seasoning, black pepper, ginger, paprika and onion powder/granules (if you are using) and browning sauce..
  • Use your hands to thoroughly coat each piece of turkey neck.
  • Now fold in the onion, garlic, pimento and carrots.
  • Wrap the bowl in saran (cling film) and refrigerate overnight or for 3 hours.
  • On medium heat, add oil to your skillet, scrap the onions, carrots etc... off the meat and proceed to sear and seal the meat (this will take about 10 minutes or so).
  • Add the ingredients that were in the bowl (onion, garlic, carrots and pimento) and cook the onions until they are soft.
  • Transfer everything from the skillet into your crockpot.
  • Pour in your stock/water Stir in the tomato, hot sauce, another 2 tbsp of browning (only do this if you are using my homemade recipe), tie the thyme leaves into a bundle and add those and dried butter beans if you are using them (canned beans can be added 45 minutes before finishing time)
  • Place the lid on your crockpot and set on high for 4 hours.
  • 45 minutes before finishing add the canned butter beans, cho cho and the slurry.
  • Do a taste test/adjust for seasoning if needed.
  • Remove the thyme stems prior to serving

1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
3 lbs turkey neck
2 tablespoons shortening (Crisco or oil)
1 cup onion, chopped
1 celery rib, chopped
4 garlic cloves, minced
1 bay leaf
4 chicken bouillon cubes
2 teaspoons celery seeds
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Combine flour,salt,and pepper on paper or plastic bag. Add a few necks at a time. Shake to coat.
  • Heat shortening or oil in stockpot on medium heat. Brown necks on all sides. Add onion, celery, garlic and bay leaf. Saute 3 minutes. Add water, bouillon cubes, celery seed and red pepper flakes. Cover. Cook on medium-low heat 2 hours or until meat is very tender. Add additional salt and pepper to taste, if needed.

4 pounds turkey parts (thighs and legs work well for this recipe)
1 teaspoon salt
2 large onions, sliced into 1/4-inch rings
Bundle of fresh herbs, tied (any combination of the following are appropriate: sage, thyme, parsley, marjoram, or savory), or 2 tablespoons dried
1/3 cup red wine vinegar or cider vinegar
2 tablespoons (1/4 stick) salted butter
2 tablespoons sugar
1 teaspoon black peppercorns
1/4 teaspoon ground cloves
6 to 8 (1-inch-thick) slices of hearty bread, cut in half and toasted or fried until browned

Steps:

  • Rinse the turkey pieces and place them in a pot large enough to accommodate them. Cover with cold water and add the salt. Cover the pot and bring the contents to a boil over medium-high heat. Reduce the temperature to keep the broth at a low simmer for 1 hour. Periodically, skim any froth that rises to the surface.
  • After an hour, remove the turkey pieces and set aside to cool. Raise the heat until the broth comes to a boil. Continue boiling, uncovered, until the liquid is reduced by half. (This will take about an hour.)
  • When the broth is reduced, add the sliced onions, herbs, vinegar, butter, sugar, peppercorns, and cloves. Simmer for about 20 minutes, until the onions are soft. While the broth is simmering, cut the cooled turkey into serving pieces.
  • Before serving, taste the broth and adjust the seasoning. Place the meat into the broth and "let it take a walme or two," that is, let it simmer gently for just a minute. Pour the turkey and sauce into a serving bowl. Pass the "sippets" (toasted bread slices) to serve as a base for the turkey and to sop up the sauce.
