Wild Dandelion Greens with Shaved Fennel and Lemon-Honey Vinaigrette image

1 teaspoon grated lemon zest plus 2 tablespoons lemon juice
2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1 heaping tablespoon honey
1/2 cup extra-virgin olive oil
4 ounces wild dandelion greens
1 small head fennel, thinly shaved
1 small red onion, halved and thinly sliced

Steps:

  • Whisk together the lemon zest and juice, vinegar and some salt and pepper in a small bowl until the salt dissolves. Whisk in the honey, then slowly whisk in the oil until emulsified.
  • Combine the dandelion greens, fennel and onion in a large bowl. Drizzle some of the dressing around the sides of the bowl and then gently push and toss the greens to coat. Season with some salt and pepper and toss again gently. Serve immediately.

1 pound tender young dandelion greens, any tough stems discarded

Steps:

  • Heat oil in a 10-inch heavy skillet over moderate heat until hot but not smoking, then cook garlic and almonds, stirring frequently, until pale golden, about 2 minutes. Add raisins and cook, stirring, until garlic is golden and raisins are plumped, about 1 minute. Remove from heat and add vinegar, sugar, salt, and pepper, stirring until combined.
  • Pour hot dressing over dandelion greens in a bowl, tossing with tongs to coat.

Steps:

  • To a large pot of boiling water, add some salt and the dandelion greens. Cook until bright green, 2 to 3 minutes. Remove the greens with a spider and drop them in a bowl full of ice water to stop the cooking.
  • Add the olive oil to a large saute pan over medium-high heat. Once hot, add the garlic and saute until fragrant, about 1 minute. Add the greens and toss until warmed through. Season with salt and pepper.

This is made in early spring, usually Easter, when the new dandelions are sweet and crisp. It is from my grandma, Callie Brosius, who was Pennsylvania Dutch and a great cook. This is usually served with boiled potatoes with ham at Easter.

2 eggs, beaten
½ cup white sugar
½ teaspoon salt
1 cup mayonnaise
⅓ cup apple cider vinegar
3 tablespoons all-purpose flour
1 ½ cups milk
¾ pound torn dandelion greens

Steps:

  • Fry bacon in a large skillet set over medium heat until crisp. Remove from the pan and drain on paper towels. Reserve about 3 tablespoons of the drippings in the skillet.
  • In a medium bowl, whisk together the eggs, sugar, salt, mayonnaise, and cider vinegar. Set aside. Heat the bacon grease in the skillet over medium heat. Whisk in the flour until smooth. Cook, stirring constantly, until the flour is browned, about 10 minutes.
  • Gradually whisk in the milk so that no lumps form and bring to a boil while stirring constantly. Pour a little hot milk into the egg mixture, whisking constantly; transfer egg mixture to the skillet. Crumble the bacon into the skillet and add the dandelion greens. Cook and stir just until the greens are wilted and heated through.

Dandelion greens are one of my favorite bitters! They're not for everyone, but I enjoy their unique flavor. I decided to try them sauteed instead of in a salad and it was a huge hit! Makes good use of those dandelions in the yard or you can usually find dandelion greens at the grocery or Asian market.

1 teaspoon salt
1 pound dandelion greens, torn into 4-inch pieces
1 teaspoon salt
2 tablespoons olive oil
1 tablespoon butter
½ onion, thinly sliced
¼ teaspoon red pepper flakes
2 cloves garlic, minced
salt and ground black pepper to taste
1 tablespoon grated Parmesan cheese

Steps:

  • Soak dandelion greens in a large bowl of cold water with 1 teaspoon salt for 10 minutes. Drain.
  • Bring a large pot of water to a boil with 1 teaspoon salt. Cook greens until tender, 3 to 4 minutes. Drain and rinse with cold water until chilled.
  • Heat olive oil and butter in a large skillet over medium heat; cook and stir onion and red pepper flakes until onion is tender, about 5 minutes. Stir in garlic until garlic is fragrant, about 30 seconds more. Increase heat to medium-high and add dandelion greens. Continue to cook and stir until liquid is evaporated, 3 to 4 minutes. Season with salt and black pepper.
  • Sprinkle greens with Parmesan cheese to serve.

2 ounces ramps, cleaned, stalks cut into 1/2-inch pieces, leaves left whole
2 tablespoons raisins
1 tablespoon pine nuts
1 quart dandelion greens rinsed at least three times in cold water, cut into 1-inch pieces
1 tablespoon red wine vinegar
Salt and pepper to taste

Steps:

  • Heat olive oil in a sauté pan. Add ramp stalks and sweat until tender, about 3 minutes. Add raisins and pine nuts.
  • When raisins are plump and pine nuts toasted, add dandelion greens and cook until wilted. Add ramp leaves and cook till limp.
  • Stir in vinegar and cook for 30 seconds. Season with salt and pepper. Serve with salmon.

1 1/2 pounds fresh dandelions, washed and stemmed
1 clove garlic, peeled and crushed
2 tablespoons fresh lemon juice
Coarse sea salt, to taste
4 lemon wedges

Steps:

  • Heat the olive oil in a 9- or 10-inch skillet over medium heat. Pat the onions dry between paper towels. Add the onions to the skillet and cook, stirring often, until golden, about 10 minutes. Using a slotted spoon, remove half of the onions from the skillet and set them aside to cool. Raise the heat and continue cooking the remaining onions until crisp and golden brown, about 5 minutes. Transfer the fried onions with a slotted spoon to paper toweling to drain.
  • Blanch the dandelions in lightly salted boiling water until just tender, about 3 minutes. Drain, refresh under cold running water and squeeze out the excess water. Shred the dandelions and chop the reserved half-cooked onions. Heat the oil that remains in the skillet over medium heat.
