CHICKEN PENNE IN SMOKY CHILI CREAM SAUCE
To reduce calories, fat and sodium, you can opt for a light Alfredo sauce. For a spicier dish, increase the amount of chipotle chiles. Recipe is from Family Circle. I like to use "Recipe#111347" for the prepared alfredo sauce.

Steps:
- Cook penne following package directions; drain.
- While penne is cooking, heat oil in a large skillet over medium-high heat and cook chicken for about 4 minutes or until cooked through.
- Remove to a plate and reserve.
- Reduce heat to medium.
- Add onion to the skillet and cook for 3 minutes, stirring occasionally.
- Add garlic and cook 30 seconds.
- Stir in the Alfredo sauce, chipotle, chili powder, maple syrup and salt.
- Cook over medium-high heat until bubbly.
- Stir in the chicken.
- Place the pasta back into the pot and stir in the Alfredo and chicken mixture.
- Spoon pasta onto a large serving platter and garnish with the bacon and cilantro.

SMOKED CHICKEN CHILI
Steps:
- Heat the canola oil in a large pot over medium-low heat. Add the garlic, onions and poblanos and cook for about 10 minutes or until soft. Add the chili powder and continue to cook for approximately 3 minutes, stirring frequently. Add the heavy cream, chicken stock, hominy and shredded chicken thighs. Bring to a simmer, then reduce the heat to the lowest possible setting and cook for 45 minutes.
- To finish, add the white beans and masa harina. Bring back to a simmer to thicken, stirring frequently. Season with kosher salt. If desired, adjust the consistency with either more chicken stock or masa harina.
- Serve with fontina cheese, tortilla chips, sour cream and lime wedges.

- In a deep skillet, fry the bacon until crispy. Remove to a paper towel to drain, then chop.
- In the same skillet, add the chicken and season with salt, pepper, Italian seasoning, and paprika. Cook until no longer pink inside.
- Add the garlic and cook until softened.
- Add spinach and tomatoes and cook until the spinach is wilted.
- Add the cream, Parmesan, an red pepper flakes and bring to a boil.
- Add the penne and bacon, and stir until fully coated in sauce.
- Serve with parsley, Parmesan, and red pepper flakes, if desired.

- Prepare Garlic Bread: Adjust oven rack to upper-middle position and preheat oven to 400°F. Line rimmed baking sheet with foil. Place bread on sheet cut side up. 2 In small saucepan over medium heat, melt butter with garlic. Cook until garlic is fragrant and has softened slightly, about 4 minutes. Spoon garlic butter over bread and season with salt. Sprinkle with Parmesan. Set aside. 3 Make the Pasta: Bring a large pot of salted water to a boil over high heat. In large skillet over medium heat, melt butter. Add shallots and cook, stirring, until softened and just beginning to brown, about 8 minutes. Stir in garlic and cook until fragrant, about 30 seconds. 4 Transfer shallot mixture to blender. Add tomatoes (with juice) and tomato paste. - Preheat the oven to 500°F (260°C), with a rack in the middle position. Bring a large pot of water to a boil over high heat. Meanwhile, in a 13 by 9-inch (33 by 23-cm) baking dish, stir together the milk, cream, tomatoes, chiles, Cheddar, and mustard. Season with 1 teaspoon salt and some pepper, then set the tomato mixture aside.
- When the water boils, season it generously with salt; it should taste like seawater. When it returns to a boil, add the pasta, quickly stir to separate the noodles, then cover the pot. When the water returns to a boil again, uncover and boil the pasta until very al dente, stirring occasionally.
- Drain the pasta thoroughly, then pour the noodles on top of the tomato mixture and toss to combine. Gently "shake" the dish to distribute the ingredients, then top evenly with the Pecorino.*
- Bake until bubbling and lightly browned, about 12 minutes. Let rest for 5 to 10 minutes before serving.

- Serve hot or warm. It will keep, loosely covered, in a 200°F (90°C) oven for up to 2 hours.

- Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, 8 to 10 minutes. Drain, and reserve pasta.
