FLOUNDER WITH BROWN BUTTER, LEMON AND TARRAGON



Flounder With Brown Butter, Lemon and Tarragon image

The flatfish family is comprised of numerous popular fish, including sole, halibut and flounder. But all the various boneless fillets are relatively interchangeable and can be prepared in more or less the same way, adjusting cooking time according to size. These pan-cooked fillets are quick, simple and elegant.

1 cup all-purpose flour
Salt and pepper
Pinch of cayenne
1 tablespoon olive oil
4 flounder fillets of equal size, 6 to 8 ounces each
3 tablespoons cold unsalted butter, cut into chunks
1 tablespoon lemon juice
2 tablespoons roughly chopped parsley
1 teaspoon roughly chopped tarragon
A few tarragon leaves, for garnish
Lemon wedges

Steps:

  • Put flour in a low bowl or pie plate and stir in a generous amount of salt and pepper and a pinch of cayenne.
  • Place a large cast-iron skillet over medium-high heat. Add olive oil and tilt pan to coat bottom.
  • Season the fillets lightly with salt and pepper. Dip each fillet quickly into flour mixture, shaking off excess flour.
  • Lay fillets in skillet in one layer. Cook for about 2 minutes per side, until golden. Transfer cooked fish to a warm platter.
  • Leave the heat at medium-high and add cold butter. Let butter sizzle until foamy and brown, but do not let it burn. Add lemon juice, parsley and chopped tarragon and swirl to incorporate.
  • Spoon butter sauce over fish. Garnish with a few tarragon leaves and serve immediately with lemon wedges.

4 flounder fillets
salt and ground black pepper to taste
¼ cup butter, melted
3 tablespoons white wine
3 tablespoons seasoned bread crumbs
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
  • Rinse flounder fillets, pat dry, and place on the baking sheet. Season with salt and pepper. Whisk butter and wine together in a bowl; pour over flounder. Sprinkle each fillet with bread crumbs and then paprika.
  • Bake in the preheated oven until flounder flakes easily with a fork, 25 to 30 minutes.

1 1/2 lbs haddock fillets
3 tablespoons rice wine vinegar
3 tablespoons olive oil
2 tablespoons Dijon mustard
3/4 teaspoon sugar
1 tablespoon grated onion
1/2-1 tablespoon chopped fresh tarragon leaves
1/8 teaspoon pepper
paprika

Steps:

  • In a bowl, whisk the vinegar, oil, mustard, sugar, onion, tarragon and pepper.
  • Rinse fish fillets and pat dry. Add the fish to the marinade and turn pieces
  • to coat completely; let marinate about 1 hour in the refridgerator.
  • After 1 hour, preheat oven to 450.
  • Place fish fillets in a greased shallow baking pan and drizzle with any remaining

1/3 cup unseasoned fine breadcrumbs
1/2 teaspoon salt
ground black pepper, to taste
4 (4 -6 ounce) flounder or 4 (4 -6 ounce) sole fillets
1 tablespoon extra virgin olive oil
lemon wedge

Steps:

  • Heat oven to 450*, then coat baking sheet with cooking spray. Place bread crumbs, salt & pepper in a small dry skillet over medium heat. Cook, stirring 5 minutes or until toasted - remove from heat. Brush both sides of each filet with olive oil and dredge in bread crumbs. Place on baking sheet and cook 5-6 minutes or until opaque in center.
  • Carefully transfer filets to plates using spatula and garnish with dollop of Tarragon Tartar Sauce in middle and serve with lemon wedges.

¼ cup freshly squeezed lemon juice
1 tablespoon chopped fresh tarragon

  • Melt butter in a skillet over medium heat. Cook, stirring occasionally, until butter is a light-tan, nutty color and fragrant, 6 to 10 minutes.
