1 tablespoon of cumin
1 tablespoon of coriander
1 teaspoon of sea salt
1/2 teaspoon of cracked black pepper
1 tablespoon of fresh rosemary, chopped
2 teaspoons of fresh basil, chopped
2 teaspoons of balsamic vinegar
2 teaspoons of olive oil
14 oz garbanzo beans, drained
14 oz kidney beans, drained
1 cup of corn kernels
1/2 cup of cooked Lima beans
2 radishes, chopped
3 baby peppers
2 shallots, sliced
3 spring onions, sliced
3 cloves of garlic, finely diced

Steps:

  • Drain the kidney beans and garbanzo beans and rinse well (this removes a lot of the sodium.)
  • Combine the beans and the rest of the salad ingredients in a large bowl.
  • Add the dressing ingredients to a small bowl and whisk until well combined.
  • :Pour the dressing over the salad and mix well.
  • Store in an airtight container in the fridge for up to a week.

Simple Chickpea Salad with onions, cucumber, dates and a dressing made with paprika, oregano, olive oil, mustard and red wine vinegar!

1 cup chickpeas (raw, 205 grams, soaked overnight)
1/2 cup red onion (chopped )
1/3 cup cucumber (diced)
1/3 cup olives (I used mix of green and black)
3 medjool dates (chopped)
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/8 teaspoon black pepper (or to taste)
1/2 teaspoon salt (or to taste)
3 tablespoons olive oil (extra-virgin, 45 ml)
1.5 tablespoons red wine vinegar (22 ml)
1 teaspoon dijon mustard
1/2-3/4 tablespoon maple syrup (adjust to taste)
1-2 tablespoons parsley (chopped)

Steps:

  • Soak chickpeas overnight in 3 cups water. In the morning, drain the water, rinse the chickpeas and transfer then to an Instant Pot with 2-3 cups water. Cook on high pressure for 15 minutes. Let the pressure release naturally.Or you can use 2 3/4 cups of canned chickpeas.
  • Transfer the cooked chickpeas to a bowl. Add the chopped onions, cucumber, olives and dates.Add the dried oregano, paprika, salt and pepper.
  • In another jar or bowl, make the dressing by mixing together olive oil, red wine vinegar, dijon mustard and maple syrup. Mix until it's all well combined.
  • Pour dressing over the salad and mix really well until everything is well combined.
  • Add in the freshly chopped parsley and mix. You can serve this chickpea salad immediately but I like to cover and chill for 20 to 30 minutes before serving. This helps in brining the flavors together.

1 Tbsp olive oil or extra virgin olive oil, plus more for drizzling if you wish
3 large garlic cloves, minced
1 tsp paprika
1 tsp dried rosemary
½ tsp dried thyme
¼ tsp chili flakes (or crushed red pepper, same thing)
2 (15 oz each) chickpeas
1 6oz-180 grams) large potato, diced
2 cups (480 ml) low sodium vegetable broth
salt & black pepper, to taste

Steps:

  • Drain only one of cans of chickpeas and pour the second one with its liquid into a blender. Purée until smooth.
  • Heat the olive oil in a pot over medium heat, add the garlic and sauté for about 45/60 seconds, or just until fragrant.
  • Add the puréed chickpeas, the second can of drained chickpeas, the potato, parprika, thyme, rosemary, chili flakes, and some freshly cracked pepper and give a good stir. Add broth and stir again.
  • Place a lid on the pot, turn the heat up to medium-high, and bring the soup to a boil. Then turn the heat down to medium low and allow it to simmer for 25 minutes, stir occasionally.
  • Taste and adjust the seasoning according to your liking (it depends mostly on the salt content of your broth, I added about ¼ tsp of salt).
  • Serve hot with freshly ground pepper, a drizzle of olive oil if you wish, and delicious crusty bread for dipping!

  • Use a wooden spoon, potato masher, or fork to mash the majority of the garbanzo beans (it's okay if there are some whole ones).
