- In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally., Add tortellini; cook for 7-9 minutes or until tender. Stir in the spinach, vinegar and pepper. Cook and stir until heated through and spinach is wilted. Sprinkle with cheese.

- In a large pot over medium heat, cook onion, zucchini and garlic in oil three minutes, until onion is translucent. Stir in crushed tomatoes, broth, sugar, Italian seasoning, wine and pepper sauce and bring to a boil.
- Reduce heat and stir in corn and Parmesan. Simmer 30 minutes.
- Stir in tortellini and simmer 10 minutes more, until pasta is tender.

TORTELLINI SOUP
It's a wonderful comfort food. Friends and family always rave about this soup and want the recipe. Tastes even better after warming up the leftovers. This is a family favorite I got from my Mother-in-law. I use the dry packaged tortellini. If you're a garlic lover, don't be afraid to add more. If you're a spinach lover add more to the leftovers when warming over. When serving the soup sprinkle desired amount of parmesean cheese on top of individual portion and stir in.

- Heat olive olive over medium heat.
- Saute garlic and onion 10 - 15 minutes.
- Add chicken broth and italian herbs. Bring to a boil.

Steps:
- Preheat oven to400 degrees.
- In roasting pan, combine sausage, onion, garlic and pepper. Add olive oil and toss to coat.
- Roast, uncovered, stirring occasionally, 20-30 minutes until sausage is browned.
- Remove from oven and reduce oven temperature to 325 degrees.
- Drain grease from sausage and cut into ¼ in slices.
- Return to roasting pan. Add beef broth, water, Italian seasoning, and carrots.
- Cover and return to oven. Bake 30 minutes, until sausage is tender. Remove from oven.
- Stir in tomatoes with juice, beans, olives, and zucchini. Bake 15-20 minutes.
- Add tortellini and bake 5 minutes longer.
- Garnish with parmesan cheese.
- The soup may also be prepared entirely on the stove.

For this baked tortellini casserole, I used one large skillet and one casserole pan. I made a quick basic meat sauce with onions, garlic, ground beef and canned tomatoes. But instead of simmering and reducing the sauce, I combined the cheese and fresh uncooked tortellini, and let the entire mixture bake in the oven. Just be sure to keep it tightly covered with foil so it stays moist. The foil keeps the moisture in and cooks the tortellini as it bakes.
