I got this recipe off of Cooking Live. You can mix and match the toppings as you wish. It is a fast and easy dinner. I make the pizza dough in my bread machine, but you can buy it pre-made.

Steps:
- Preheat oven with pizza stone in it to 450 degrees.
- If you don't have a stone a baking sheet will do.
- Sprinkle a little flour on your work surface.
- Useing a rolling pin roll dough into a 10 x 14 inch rectangle.
- Cover the rectangle with layers of your desired toppings, leaving a 1 inch border around the sides and at the top.
- Mix the 3 cheeses and the herbs together in a small bowl and sprinkle over the top.
- Starting at the end closest to you, roll the stromboli into a log.
- Seal the dough by pinching firmly with fingertips on sides and ends.
- Sprinkle a little cornmeal on a pizza paddle and put stromboli on the paddle.
- Make sure the seam is on the bottom.
- Use a pastry brush or a mister to apply olive oil.
- Carefully place stromboli on preheated stone, turn down oven to 400 degrees and bake for 35 minutes.
- Carefully remove from oven and let rest for 5 minutes.
- Slice with a serrated knife.

- Let dough rise in a warm place until doubled. Punch down. Roll loaves together into one 15x12-in. rectangle. Layer ham and pepperoni on half of the dough (lengthwise). Sprinkle with onion and green pepper. Top with 1/4 cup of pizza sauce. Layer mozzarella, bologna, salami and Swiss cheese over sauce. Sprinkle with basil, oregano, garlic powder and pepper. Spread another 1/4 cup of pizza sauce on top. Fold plain half of dough over filling and seal edges well. Place on a greased 15x10x1-in. baking pan. Bake at 375° until golden brown, 30-35 minutes. - For the pizza dough: Add the yeast, 1 cup warm water and sugar in the bowl of an electric mixer fitted with the dough hook. Let the mixture sit to allow the yeast to activate. The mixture should start foaming and forming small bubbles on the surface, 10 minutes. Gradually add the flour with the mixer on low speed. Add the olive oil and salt. Continue to mix on low and scrape down the sides of the bowl with a rubber spatula as needed. Increase the speed as the flour becomes incorporated, and knead on medium speed, 7 to 8 minutes. The dough is done when it comes together as a single mass.
- Remove the dough from the mixer and knead 4 to 5 times on a lightly-floured surface so the dough is smooth and consistent. Place in an oiled bowl, cover with plastic and allow to sit until the dough rises and doubles in volume, 1 hour.
- For the filling: Preheat the oven to 375 degrees F. Divide the dough in half and, working with one piece at a time, stretch the dough into a 10-by-13-inch rectangle. Arrange the dough rectangle so the 13-inch-long side is closest to you. Brush the surface with half of the melted butter, then spread the minced garlic out evenly over the top, remembering to split the filling ingredient quantities evenly across both stromboli. Leave a 1-inch border around the far and side borders.
- Sprinkle the dough with the Parmesan, then layer with the salami slices. Top the salami with a layer of deli ham and then a layer of bresaola. Shingle the cheese slices over the top and finish with fresh basil and some ground black pepper. With the covered edge closest to you, roll the dough up into a log, gently sealing the ends of the roll as you go. When you get to the end that has no filling on it, gently press to seal, then place the roll seam-side down on a nonstick sheet tray. Repeat the process with second piece of dough. Brush the tops of the dough with the remaining melted butter and sprinkle with Parmesan. Bake in the center of the oven until golden brown and puffy, 25 to 30 minutes.
- Allow the stromboli to cool 5 minutes before slicing it into thick slices with a serrated knife. Serve with the Marinara Sauce on the side or some mustard.
- Heat the olive oil in a medium saucepan over medium-low heat. Add the onions and cook until translucent, about 4 minutes. Add the garlic and cook until the garlic is almost brown, another 2 minutes. Add the tomatoes and simmer, 20 minutes.
- Add the basil and oregano, and continue to simmer to thoroughly marry the flavors, 20 minutes longer. Puree the mixture with a stick blender, food mill or food processor. Season with salt and pepper. Yield: Makes 1 quart.

- In a large skillet, cook the sausage over medium-high heat until browned and the fat is rendered, about 5 minutes. Remove with a slotted spoon and drain well on paper towels. Discard all but 1 tablespoon of fat from the pan. Add the onions, bell peppers, and jalapenos and cook, stirring, until very soft, 4 to 5 minutes. Add the garlic and Italian seasoning and cook, stirring, for 1 minute. Remove from the heat and cool.
- Punch down the dough and divide half. On a lightly floured surface, roll out half of the dough to a large rectangle, about 10 by 14 inches. Spread half of the cooled sausage mixture across the dough leaving a 1-inch border. Overlapping slightly, layer half of the ham, pepperoni, olives, provolone and mozzarella cheeses over the top. Using a pastry brush, paint the border of 1 long edge with egg wash. Starting at the opposite long end without egg wash, roll up the dough into a cylinder, pinching the edges to seal. Place on the prepared baking sheet and repeat with the remaining ingredients. Let the dough rise, 20 to 30 minutes.
- Brush the top of each stromboli with egg wash. Bake until nearly completely golden brown and starting to crisp, about 20 minutes. Sprinkle each stromboli with Parmesan cheese and return to the oven until the cheese is melted and the dough is golden brown, about 5 minutes.

The stromboli that I make uses pre-made pizza dough. But bread dough can be used as well. Kids love this pizza creation and adults love the grown-up pizza creation. Also, I always have left-over mixture, which I use the following day with Spaghetti.

- Preheat oven to 400 degrees F (200 degrees C).
- In a skillet over medium heat, brown the ground beef until no pink shows; drain. Mix in the ham, bell pepper, onions, pizza sauce and mushrooms.
- Lay pizza dough flat on cookie sheet. Distribute pepperoni slices over dough. Place a heaping pile of the sauce mixture on one side of dough (some may be left over). - Preheat oven to 400° F with baking stone in oven. Heat butter in large skillet over medium heat and saute mushrooms for five minutes until tender and then remove from skillet and set aside.
- Using the same skillet, brown meatballs for about five minutes over medium heat while stirring with a wooden spoon. Remove from heat and set aside.
- Tear a long rectangular sheet of parchment paper and roll dough out to approximately 9 x 13 inches. Use a large tablespoon to slather about 1/2 of the marinara sauce down center of dough, about 2-3 inches in width. Place single layer of mushrooms on marinara sauce and then place meatballs (about 2 abreast) on top of mushrooms and sauce. Reserve remaining mushrooms to serve as a side to the stromboli. Place optional roasted red pepper strips over meatballs and cover with remaining marinara sauce and fresh oregano. Place slices of cheese over sauce.
- Using a sharp knife, cut 1" strips of dough on each side of stromboli contnts, To wrap the stromboli, fold the ends in first and then wrap alternate strips of dough over top (like a shoe lace) between left and right. Brush stromboli with egg wash and then place pizza peel under parchment paper and slide parchment paper with stromboli onto hot baking stone.
- Bake for 25 minutes or until golden brown. Serve with warm marinara sauce and cold beverage of your choice.

This is a really fantastic recipe for a kind of filled bread, a bit like a rolled-up pizza! It can also be made with ready-made pizza or bread dough and bought tomato pizza sauce. We cooked this at Si's sister's family feast at her house near Florence.

- To make the dough, sift the flour into a large bowl and stir in the semolina and yeast. Mix the sea salt and olive oil with the water and stir into the flour. Mix with a large wooden spoon until the dough comes together and forms a soft, spongy ball.
- Transfer the dough to a lightly floured surface and knead it for five minutes until smooth. Place the dough into a bowl, cover with lightly oiled cling film and leave it for about an hour in a warm place or until it has doubled in size.
- While the dough is rising, make the tomato sauce. Heat one tablespoon of the olive oil in a nonstick frying pan and fry the onion over a low heat for five minutes until softened and lightly browned. Stir regularly and add the garlic for the last minute of the cooking time. Tip the tomatoes into the pan and add the oregano and caster sugar. Season with salt and pepper. Place over a fairly high heat and cook the sauce for 5-8 minutes until very thick, stirring constantly. Remove the pan from the heat and leave the sauce to cool.
- Roll out the dough on a lightly floured surface into a rectangle measuring about 44cm x 32cm/17in x 13in.
- Spread the tomato mixture over the dough, leaving a 2cm border around the edge. Lay the prosciutto in a single layer over the sauce. Tear the mozzarella into small pieces and dot over the prosciutto, then scatter the basil leaves on top.
- Tuck in the two short ends and roll the stromboli up firmly to enclose the filling. Place it, seal-side down, on a large baking sheet lined with baking parchment and leave to rise for 30 minutes.
- Preheat the oven to 200C/400F/Gas 6.
- Brush the remaining oil over the dough, season with a little more salt and pepper and bake the stromboli for 25-30 minutes until well risen and golden brown.
- Slice thickly and serve with some good olive oil and balsamic vinegar for dipping, and a fresh green salad.

- Preheat oven to 400 °F. Line a baking sheet with parchment paper.
- Roll the dough into a rectangular shape which covers the baking sheet and leaves a 1 inch border around the edges.
- Spread the marinara sauce, half of the mozzarella, pepperoni and ham along the middle of the dough. Sprinkle the remaining mozarella on top.

- Select settings for your bread machine for dough.
- Add liquid ingredients to pan.
- Add dry ingredients, except yeast, to pan.
- Tap pan to settle dry ingredients, pushing some of the mixture into corners.
- Make a well in center of dry ingredients; add yeast.
- Lock pan into bread maker.
- Program for dough.
- Program timer if used.
- Start bread maker.
- When done, unlock pan from bread maker.
- Place dough onto floured surface.
- Cut in 2 pieces for thick crust, 3 pieces for thinner crust.
- Roll out to 2 or 3 14 x 8 rectangles, place the 6 slices of provolone cheese along one edge of each rectangle overlapping each slice enough to run the 14 inch length of crust.
- Place 3 rows of pepperoni along 14 inch edge overlapping each slice by 1/2.
- be sure to leave 2-3 inches along opposite edge free of filling so when you roll up it will make a good seal.
- roll to make a 14 inch loaf making sure to not wrap tightly.
- Place diagonal slices across top about every 2 inches to vent.
- Bake at 350°F for 30-40 minutes.
- Place on oven broiler pan greased (no foil) so any oil from pepperoni can run to bottom pan not soaking into crust.

- Preheat the oven to 375. Take a big cookie sheet and grease the pan with a very little bit of olive oil. Rub it in all over with a paper towel. Unrool the dough on to the cookie sheet.
- Sprinkle a little mozzarella and Pecorino Romano right on the dough. Next make a single layer of ham on top of the cheese, leaving about a 1/4 inch border around all sides. Then sprinkle a little more of both cheeses. Then make a single, slightly overlapping layer of pepperoni on top of the ham/cheese. Top with a heavier layer of both cheeses.
- Start with one of the short sides and fold over looking to see that the dough line created is even. Continue to roll until you reach the end. Before you make your last roll you will have to pull the dough out a little from the edge to make sure that the meat and cheese are covered.
- Place the log seam side down in the center of the pan. You want to try to put the weight of the Stromboli on top of the seam so it doesn’t open. Next we have to close up the ends. Take the left and right pieces in both hands and push them towards each other like you’re wrapping a gift. Then take the bottom piece and fold toward the top, and take the top piece and place over the entire end, tucking it under the Stromboli. When you’re done, it should look like a loaf of bread.
