1 pound fresh Divine Flavor Tribelli peppers (sweet mini peppers)
1 pound mild Italian sausage (cooked, crumbled, drained of fat)
8 ounces cream cheese (at room temperature)
1/2 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
Salt and freshly ground pepper to taste

Steps:

  • Cut peppers in half lengthwise and remove ribs and seeds. Place them on a parchment lined baking sheet.
  • Preheat the oven to 350 degrees.
  • Make the filling by mixing the sausage, cream cheese, cheddar and Parmesan together until well combined. Taste filling and add salt and/or pepper if needed.
  • Fill the peppers with the sausage mixture. Bake for 12-14 minutes. Serve warm.

1 pound bulk sage-flavored pork sausage
1 (8 ounce) package cream cheese, at room temperature
1 cup shredded Parmesan cheese
1 tablespoon bacon bits, or to taste
1 clove garlic, minced, or to taste
salt and ground black pepper to taste
4 large bell peppers - halved, seeded, and stems removed
2 tablespoons shredded Cheddar cheese, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a square baking pan with aluminum foil.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Combine cream cheese, Parmesan cheese, bacon bits, and garlic in a bowl. Stir in cooked sausage and season with salt and pepper. Mix with your hands until all ingredients are well combined.
  • Scoop sausage mixture into the pepper halves; press lightly to pack. Don't overstuff or understuff. Place in the prepared pan.
  • Bake until stuffing has hardened slightly on the top, 18 to 20 minutes. Remove from the oven and immediately sprinkle with Cheddar cheese.
  • Let sit for 5 minutes before removing from the pan.

This easy, cheesy dinner is one of me and my wife's favorites! Depending on the peppers you get, these can have a little zing to them! We liked to prepare spaghetti with our favorite pasta sauce as a side dish for these stuffed peppers with cream cheese.

4 large Cubanelle peppers, stemmed and seeded
1 pound mild Italian pork sausage
1 (8 ounce) package cream cheese, softened
¼ cup pasta sauce, or to taste
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil.
  • Bring a large pot of water to a rolling boil. Drop peppers into the boiling water. Turn heat off and let peppers soak until softened a bit, about 5 minutes. Remove peppers and set aside until cool enough to handle.
  • Mix sausage and cream cheese thoroughly in a bowl. Fill peppers with sausage mixture and place on the prepared baking sheet. Roll any extra sausage mixture into meatballs and place next to the stuffed peppers. Spoon pasta sauce over peppers and meatballs and sprinkle with Parmesan cheese.
  • Bake in the preheated oven until sausage mixture starts to turn golden brown and an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 35 minutes.

1 pound Italian sausage
1 teaspoon Lowry's seasoned salt
1/2 teaspoon pepper (freshly ground)
1 teaspoon minced onion (or 1/2 cup freshly chopped onion)
1 1/2 cups shredded cheddar cheese (Colby can be substituted)
4 ounces cream cheese (softened)
1/4 cup grated parmesan cheese
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 400°F and grease a 9x13 baking pan and a smaller square pan - I use an 8x8 baking dish.
  • Brown meat and drain.
  • Wash, clean and halve green peppers.
  • Add seasonings, cream cheese and cheddar cheese to meat.

Spicy Chorizo Stuffed Poblano Peppers With Cheese image

Fresh whole Poblano peppers blanched and stuffed with a spicy chorizo sausage, rice, and vegetable filling, covered in enchilada sauce and cheese and baked. Serve with refried beans and sour cream on the side... and you've got an explosion of flavor! I created this recipe after my husband planted jalapenos and harvested Poblanos... the seed company had labeled them wrong! A fortunate mistake in my opinion as these peppers are so delicious and this recipe really highlights their unique smoky flavor!

4 poblano peppers, medium to large
2 tablespoons olive oil
1 lb chorizo sausage, ground
1 pint brown rice or 1 pint white rice, cooked
1 small onion, chopped
1/4 cup red bell pepper, chopped
1 tablespoon tomato paste
1/3 cup water
1/2 lime
1 cup cheese, grated (a blend of your choice, cheddar, Mont. Jack, etc... I just buy the "Mexican" blend at the store)
1/2 cup enchilada sauce, plus more for serving (make your own or buy a can of mild green chile enchilada sauce)

Steps:

  • *If you can't find a package of ground Chorizo sausage, buy them whole and remove the casings before cooking.
  • In a large pan on medium heat, add a tablespoon of olive oil. Put the ground Chorizo in the pan, and break it all up so it can cook evenly. Stir occasionally and continue cooking as you work on the ingredients.
  • Meanwhile, start a large pot of salted water to boil.
  • While you are waiting for the water to boil, start preparing your Poblano peppers. Slice the tops off of the pepper, and scoop out the inner seeds. Discard the seeds, but save the tops of the peppers.
  • Add the Poblano peppers to the boiling water, and set up an ice bath ready on the side. After about 8 minutes, plunge them in the ice water.
  • Start another pan on medium heat with a tablespoon of olive oil.
  • Take the reserved tops of the Poblano peppers and trim off the stem and inedible parts. Mince the remaining pepper.
  • Add the pepper and chopped onion to the pan. Saute a few minutes, then add the chopped red bell pepper. Saute for a few minutes longer.
  • Next, add the rice, and mix all together. Stir in the tomato paste and water.
  • Add the cooked Chorizo sausage and stir well.
  • Season with salt and pepper or seasoning salt to your liking. Finish with a squeeze of half of lime.
  • Remove the peppers from the ice bath and shake off excess water. Have a 13 x 9 pan ready, and begin stuffing each pepper with the mixture. Lay the stuffed peppers in the pan.
  • Pour the enchilada sauce over all the peppers, allowing excess to drip into the pan.
  • Sprinkle cheese evenly over the tops of the peppers.
  • Bake in a 400 degree oven for about 10 minutes, or until cheese is melted.
  • Serve with extra enchilada sauce, refried beans, and sour cream.
  • Enjoy!

Steps:

  • Preheat oven to 400 degrees F. Brown and drain sausage. Mix with next 4 ingredients in a large bowl.
  • Wash and slice large banana peppers in half (cut them long ways and remove stem; try to cut them the best way possible so they can be stuffed). Stuff each banana pepper with about 2 tablespoons of cheese mixture (roll the mixture into a small log shape in your palms to make stuffing the peppers easier).
  • Arrange peppers cheese side up on a baking sheet lined with aluminum foil and bake for about 15 minutes.

I have been making this recipe for 2 years now and everyone I make if for loves it and always request seconds. The stuffing in this recipe can also be used quite nicely in stuffed mushrooms as well.

8 banana peppers
1 lb jimmy dean hot sausage (for extral kick)
1/2 cup parmesan cheese, grated
1 cup ritz butter flavored cracker, finely crushed
1 tablespoon minced garlic
1/8 teaspoon pepper
2 tablespoons melted butter (optional)
1 pinch parsley
1/2-1 lb mozzarella cheese, shredded
1/2-1 cup olive oil

Steps:

  • Clean peppers by carefull slicing a T into pepper being careful not to cut the cap off. slice down the length of pepper but leave enough at the bottom so that pepper is not cut to the very end. Remove all seeds. If you don't like your peppers too hot you can soak the cleaned peppers in cold water for and hour and this will lessen the heat of the pepper.
  • Brown your sausage with the minced garlic, pepper & parsley.
  • While sausage is cooking, crush the Ritz crackers into a fine crumbs. Add parmesan cheese to cracker mix and combine well.
  • Remove cooked sausage and chop finely in blender so it appears more like ground sausage. Place ground sausage in bowl. Add crushed Ritz crackers and parmesan cheese and mix well. Add 1-2 Tbsp of melted butter to mix so help make the stuffing moist if it appears to dry but not wet.
  • Preheat stove to 375 degrees.
  • Spoon stuffing into peppers. Fill generously from top to bottom of pepper.
  • Depending what type of dish or dishes you use to bake the peppers, I ususally use 2 casserole dishes and pour the olive oil into the bottom of the pans so there is about a 1/2 of olive oil in pans. Lay peppers in baking dishes. Bake for 30-35 minutes. Pull peppers out and generously spread shredded mozzarella cheese over peppers. Bake for 5-10 minutes so cheese is melted well.
  • Cool slightly and serve.
