SHRIMP TOAST

Shrimp Toast image

For the most part, the shrimp will tell you when they're done. Certainly they're ready once they're pink, though very large shrimp may need an extra minute to cook through. To check, slice one in half; if it's opaque, or even nearly so, season to taste and start eating.

Provided by Aleka Shunk

Categories     Appetizer

Time 15m

Number Of Ingredients 13

4 slices White Bread
4 tbsp Butter
2 tbsp Sesame Seeds, Black and White
1/4 cup Sweet chili sauce ((store-bought))
12 raw Large Shrimp, Peeled and Deveined
1/4 Small Yellow Onion ((2 tbsp minced))
1 tsp Sesame Oil
1 Scallion, roughly chopped
1/4 tsp Salt
1/8 tsp Pepper
1/4 cup Mayonaisse
1 1/2 tbsp Sriracha
1/4 tsp Sugar

Steps:

  • If baking these, pre-heat your oven to 350°F.
  • Add shrimp paste ingredients to a food processor and pulse until fully combined, about 30 seconds.
  • For baking:Melt your butter in a small bowl in the microwave for 30 seconds. Using a brush, generously brush one side of each slide of bread with the melted butter.
  • Flip over and spread shrimp paste, edge to edge, onto the un-buttered side of each slice of bread. Sprinkle sesame seeds over shrimp paste or place seeds on a plate and press each slice into the seeds.
  • Pour the rest of the melted butter onto a baking sheet and place bread slices shrimp side down so the other side also absorbs some butter.
  • Bake for 7-8 minutes or until the shrimp is cooked through and the toast is golden brown. (You don't need to flip your toasts.)
  • For skillet frying:Spread shrimp paste, edge to edge, onto one side of each toast. Sprinkle sesame seeds over shrimp paste or place seeds on a plate and press each slice into the seeds.Add 3/4 of the melted butter to your skillet set over medium high heat. Place shrimp toasts shrimp side down in the skillet and cook for 3-5 minutes or until the shrimp is cooked through and has turned light pink. Then flip toasts over and add remaining melted butter. Remove when non-shrimp side is golden brown and crispy.
  • Trim the crust on each shrimp toast (optional) and cut each on a diagonal so you have two triangles per slice.
  • Garnish with more scallions and serve hot alone or with sauces on the side.
  • Spicy Mayo: Mix ingredients together in a small bowl.

SHRIMP TOAST

Shrimp Toast image

Shrimp toast is one of the tastiest bites at the dim sum table. I didn't actually like shrimp toast growing up, but when I finally got around to trying it, I couldn't believe how much flavor was packed into one tiny unassuming square. These are crunchy on the outside, soft in the middle and really dangerous because they are so so addictive.

Provided by Molly Yeh

Time 25m

Yield 12 servings

Number Of Ingredients 12

8 ounces raw shrimp, peeled, deveined and tails removed (the size does not really matter here)
1 large egg white
1 teaspoon sriracha, plus more for serving
1/2 teaspoon kosher salt
1/2 teaspoon toasted sesame oil
5 turns black pepper
2 cloves garlic, minced
2 scallions, trimmed and thinly sliced
1 stalk lemongrass, end trimmed, dry outer leaves discarded, bottom few inches of white part bruised with the back of a knife and finely minced
3 slices potato bread (or white bread), crusts removed
2 to 3 quarts neutral oil (vegetable or peanut are fine)
1 teaspoon sesame seeds

Steps:

  • Put the shrimp and egg white in a food processor and pulse until pasty but still a little chunky. Add the sriracha, salt, sesame oil, black pepper, garlic, scallions and lemongrass and pulse until just combined.
  • Divide the mixture among the bread slices and spread in an even layer to the edge. At this point, you can freeze the toasts while you heat the oil (although freezing is not totally necessary, it makes for cleaner cuts and easier handling).
  • Bring 1 1/2 inches of oil to 350 degrees F in a heavy-bottomed pot.
  • Cut each bread slice into 4 squares and sprinkle with the sesame seeds. Carefully place each piece shrimp-side down into the oil. Fry until golden, 2 to 3 minutes. Remove onto a rack or paper towel. Serve immediately drizzled with sriracha.

1/2 tsp cajun seasoning
1/4 tsp fresh cracked black pepper

Add the garlic and sprinkle the skillet with the Cajun seasoning and black pepper. Cook for 1 minute stirring constantly. Reduce heat to very low. Add cream cheese, Parmesan and Fontina. • Divide mixture among bread slices, spreading it evenly to edges, and sprinkle with sesame seeds. Cut each bread slice into 4 triangles.
  • In a 6-quart heavy saucepan heat 1 1/2 inches oil to 350°F. on a deep-fat thermometer and fry shrimp toasts in batches, coated sides down first, about 1 minute on each side, or until golden. Transfer shrimp toasts with a slotted spoon to paper towels to drain and serve warm.

Categories     Appetizer     Snack     Appetizers and Hors d'Oeuvres

Time 30m

Yield 8

Number Of Ingredients 12

1/2 pound peeled and deveined shrimp
1 egg white
2 teaspoons soy sauce
4 scallions, finely sliced
2 teaspoons cornstarch
1/4 cup loosely packed cilantro leaves
2 teaspoons sesame oil
1 clove garlic, grated on a microplane grater
8 slices sandwich bread, crusts removed, split into 16 triangles
1/2 cup toasted sesame seeds (optional)
2 quarts peanut, vegetable, or canola oil
Kosher salt

Steps:

  • Combine shrimp, egg, soy sauce, scallions, cornstarch, cilantro, sesame oil, and garlic in the bowl of a food processor. Pulse until extremely finely minced. Alternatively, chop shrimp by hand with a knife until extremely finely minced, then fold in remaining ingredients in a medium mixing bowl.
  • Spread mixture evenly over one side of each piece of bread. Dip shrimp side into sesame seeds to coat if desired.
  • Heat oil in a wok or dutch oven to 325°F (use a thermometer). Carefully transfer half of toasts to the oil, shrimp side-down. Cook until golden brown, about 2 minutes, adjusting flame as necessary to maintain heat, then carefully flip toast and cook until second side is golden brown, about 1 minute longer. Transfer to paper towel-lined plate and repeat with remaining toasts. Season with salt and serve immediately.

SHRIMP TOASTS

Shrimp Toasts image

Provided by Food Network

Yield Makes about 30

Number Of Ingredients 14

4 cups vegetable oil, for deep-frying
1 pound large shrimp, peeled and deveined
1 teaspoon finely-minced ginger
1 scallion, finely minced
1 tablespoon Shao Hsing (Chinese rice wine)
1 1/2 tablespoons lard
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon MSG
1/4 teaspoon ground black pepper
10 to 12 slices white bread, crusts removed (such as Wonder)
1 egg, beaten, for sealing
About 1 cup sesame seeds, for dipping
Coarse salt

Steps:

  • In a deep-fryer heat oil to 365 degrees. In a food processor combine next 9 ingredients; puree until a slightly chunky paste is formed. Using a rolling pin, flatten bread, one slice at a time. Spread 1 to 2 tablespoons of shrimp paste evenly over bread, and roll up in a tight cylinder; brush edge with a little beaten egg to seal and let dry while you make more cylinders.
  • When all shrimp paste is used, cut each cylinder in thirds into small logs. Dip both ends of each log into egg, then into sesame seeds. Deep-fry logs, in batches, until golden-brown, about 2 to 3 minutes, turning several times with a metal spoon. Using a slotted spoon, remove shrimp toasts and drain on paper towels; keep warm while you fry remaining batches. Sprinkle with coarse salt and serve immediately.

  • Heat broiler (set to low if you have that option). Mix shrimp, scallions, capers, red pepper flakes, salt, and ½ cup aioli in a medium bowl to combine. Spread bread slices with remaining 2 Tbsp. aioli.
  • Arrange shrimp, cut side down, in a snug, even layer on bread, all the way to the edges. Pack capers and scallions on, under, and between shrimp—wherever they will fit. Press shrimp mixture into the bread to ensure good contact. Place on a plate and chill at least 10 minutes and up to 30 minutes (this will help shrimp better adhere to bread).
  • Heat 1 Tbsp. oil in a large ovenproof skillet over high. Cook 2 toasts, bread side down, 15 seconds, then transfer skillet to oven. Broil, watching toasts carefully, until golden and crisp in spots and shrimp turn pink and curl slightly, 5–7 minutes. (Broiler heat varies widely, so check on toasts every minute or so.) Transfer toasts to a cutting board. Repeat with remaining 1 Tbsp. oil and 2 toasts.
  • Cut each toast in half and transfer to a platter. Sprinkle with parsley and serve with lemon wedges for squeezing over.

  • Process cilantro, garlic, white pepper, and salt in a food processor until finely chopped, about 15 seconds, stopping to scrape down sides of bowl as needed. Add shrimp and pork fat. Process until mixture forms a smooth paste, about 2 minutes, stopping occasionally to scrape down sides of bowl as needed. Transfer mixture to a medium bowl. Stir in seasoning sauce and sugar.
  • Spread 3/4 ounce (about 1 heaping tablespoon) shrimp mixture on each bread triangle in an even layer. Pour oil to a depth of 1/8 inch in a large skillet; heat over medium-high until shimmering. Working with 8 to 10 bread triangles at a time, fry bread, shrimp side down, until shrimp side is golden brown and shrimp is cooked through, 3 to 4 minutes. Carefully flip, and cook until bread is golden brown, 15 to 30 seconds. Transfer shrimp toasts to a wire rack set over a baking sheet lined with paper towels. Repeat process with remaining bread triangles and shrimp mixture.
  • Top shrimp toasts with mayonnaise and sriracha. Garnish with cilantro leaves and pea shoots. Serve hot.
