PESTO SALMON
This easy Pesto Salmon is covered in basil pesto and then oven-roasted. It's delicious, ready in minutes, and is perfect for weeknight dinners.

Steps:
- Preheat oven to 425 F
- Line a baking sheet with aluminum foil, and place salmon fillets skin side down. Drizzle with salt, and pepper. Spread pesto over the top of fillets with a spoon or small spatula (try to cover them as evenly as possible). Sprinkle thyme over the pesto.
- Roast the salmon 4-6 minutes per 1/2 inch thickness. The fish should flake easily with a fork when it's finished.
- If the salmon has skin, remove it now if desired. It should peel off easily. Serve with lemon wedges and fresh basil (optional).

- Line baking pan with a sheet of foil wrap.
- Season the salmon with salt and black pepper and transfer onto the baking sheet.
- Combine basil pesto sauce with Dijon mustard and lemon juice in a small bowl.
- Spoon over salmon evenly with the basil mixture.
- BAKE for 15 minutes, or until the salmon is opaque and separates easily.
- Serve salmon with an extra lemon wedge squeezed on top.

- Preheat the oven to 450° F. Line rimmed baking sheet with foil.
- In a small bowl, mix together: 2 Tbsp parsley, 2-3 pressed cloves garlic, ½ Tbsp Dijon, ½ tsp salt, ⅛ tsp pepper, 2 Tbsp oil and 2 Tbsp lemon juice.
- Slice salmon into 4 portions and arrange them on a lined baking dish, keeping salmon skin-side-down.
- Generously brush top and sides of salmon with sauce and top with fresh lemon slices.
- Bake at 450°F for 12-15 min or until just cooked through and flaky. Don't over-cook.

This salmon recipe is so simple and yet extremely impressive; I often serve it to company or on special occasions and I'm always asked for the recipe. I serve it with angel hair pasta (lightly tossed with fresh herbs and olive oil), a basic spring mix salad with vinegarette, and a crusty, hearty garlic bread - enjoy!

- Lightly coat a baking pan with cooking spray.
- Place each salmon fillet in the baking pan and drizzle with olive oil.
- Apply freshly ground pepper to taste over each fillet.
- Gently spread pesto sauce over each fillet.
- Sprinkle parmesean cheese over each fillet.
- Optional: Place plum tomatoes slices on each fillet and sprinkle with a bit of additional parmesean cheese.

I had some already made pesto in the fridge, so this was quick and delicious. I can't remember eating more delicious salmon. - Preheat oven to 450. Place a baking sheet in oven to heat while you prep the salmon.
- Tear two pieces of foil (big enough to wrap salmon with some overlapping).
- Place foil pieces one on top of the other.
- Put about 2 teaspoons olive oil in center of top piece of foil and lay salmon on top of oil.
- Spread each piece of salmon with about 2 teaspoons basil pesto.
- Arrange sliced tomatoes over pesto so they cover the top of the salmon.
- Wrap salmon securely in foil, doubling over the seam and ends several times.
- Place salmon packet on heated baking sheet and cook 15 minutes.
- Remove from oven after 15 minutes and let sit 2 to 3 minutes.
- Then open carefully and serve immediately, while salmon and tomatoes are hot.

- In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.

PAN SEARED SALMON WITH LEMON BASIL PESTO
This is a salmon fillet served with a fresh pesto on top. You could use a store-bought pesto if you like, but homemade is so much better and so easy to do.

- Heat a dry skillet, over medium heat, and lightly toast pine nuts (gently toss and shake pan occasionally); then place in a food processor.
- To the food processor, add basil and garlic; pulse just to combine.
- With processor running, drizzle in olive oil, and process, scraping down sides once or twice with a rubber spatula, to desired consistency (I like it sort of chunky).
- Add in Parmesan cheese, red pepper flakes, lemon juice, and salt and pepper to taste; pulse to combine; set aside.
- Wipe the salmon dry with paper towels (to allow a nice sear), then season lightly with salt and pepper.
- Heat the skillet, over medium-high heat, then spray with cooking spray.
- Cook salmon about 4 minutes per side or to desired doneness (I like it a little pinkish in the center since it will continue cooking a little when removed from the pan).
- Serve salmon with pesto spooned over top.
- Can also be served at room temperature.
