- Preheat oven to 325°F. Beat butter and sugar with a stand mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 3 minutes. Add eggs 1 at a time, beating well after each addition.
- Stir together baking powder, salt, and 3 1/2 cups of the flour in a bowl. Gradually add flour mixture and lemon extract to butter mixture, beating on medium speed until just combined. Stir together pecans, raisins, and remaining 1/2 cup flour in a separate bowl; stir into batter until combined.
- Coat a 10-inch tube pan with baking spray with flour. Spoon batter into prepared pan. Bake in preheated oven until a wooden pick inserted in center comes out clean, 1 hour, 15 minutes to 1 hour, 30 minutes. Cool in pan 15 minutes. Remove from pan; let cool completely on a wire rack, about 1 hour.
JOHNNY'S COCONUT PECAN CAKE
This recipe was given to my husband by his aunt but he just kind of took it and made it his way. Either way this cake is made it is absolutely moist and delicious!

- 1. Preheat oven to proper temperature indicated on the box for the type of baking vessel you prepfer. In a large bowl, mix cake batter according to package directions.
- 2. Once batter is mixed, add can of frosting. Fold into batter until well incorporated.
- 3. Pour batter into a greased and floured (we use baking nonstick spray with flour) 13 x 9 baking dish. Original recipe calls for the use of a Bundt pan so you can use this pan if desired. Bake until cake is golden brown and toothpick inserted into center comes out clean.
- 4. Remove from oven and let cool completely. If using Bundt pan, cool for few minutes before removing the cake from the pan to completely cool. Spread tub of cool whip all over the top of the cake (or all over cake if used the Bundt pan).
- 5. Sprinkle coconut all over the cool whip and then sprinkle the chopped pecans on top of the coconut. Cake is ready to be served. Refrigerate leftovers.
- 6. *Variations: We substituted Caramel cake mix when Butter Pecan cake mix was not available. If making the cake in the Bundt pan, you can choose to skip the cool whip, coconut, and pecans and just serve the cake with some powdered sugar sprinkled on top. You can also frost the cake with another can of the coconut pecan frosting if desired. You can really make this cake recipe your own by trying different variations.

- Line 3 baking sheets with foil and grease the foil with 1 teaspoon butter each; set aside., In a large heavy saucepan over medium heat, melt cubed butter. Stir in sugars, cream, milk, corn syrup and salt; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes., Remove from heat; stir in pecans and vanilla. Cool, without stirring, to 170°, about 20 minutes. Stir with a wooden spoon until mixture just begins to thicken but is still glossy, about 2 minutes., Quickly drop by rounded tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Refrigerate until completely set, about 1 hour. Store in an airtight container in the refrigerator.

TEXAS PECAN PIE POUND CAKE RECIPE - (3.8/5)

- Preheat oven to 300°F. In a mixer, cream butter, cream cheese, and sugar until smooth. Add eggs, one at a time. Then add flour one cup at a time. Last, add vanilla flavoring. Grease and flour tube/bundt pan and pour in batter. Once the batter has been poured in, sprinkle pecans and brown sugar on top (a cup or little more of each). Lightly press into the batter. Bake at 300°F for 1 hour and 15 minutes. (You may want to tent the top with foil to keep the nuts from scorching.) Then, increase the temperature to 325°F and bake for an additional 30 minutes. Test the cake with a fork or wooden skewer to check for doneness. The utensil should come out dry and clean (no batter). Bake 5 more minutes if needed. Remove from the oven and allow a few minutes to cool before removing from pan. When you invert onto a plate, you may lose a few nuts, but most should bake into the top layer of crust. Turn the cake onto another plate so that the nuts are on top. Drizzle cake with a jar of caramel ice cream topping. Heat from the cake will make the caramel melt over the pecans. Enjoy!
UNCLE JOHNNY'S TEXAS PECAN CAKE
My Uncle Johnny, one of my mother's brothers, sent us this recipe in the '70s. It's a Texas treat I hope you'll enjoy!

- 1. Cream together brown sugar and margarine or butter. Add egg yolks. Reserve egg whites for Step 5.
- 2. Dredge fruit in 2 cups of the flour.
- 3. Mix baking powder and remaining two cups of flour, and add to sugar and egg batter.
- 4. Stir in fruit mixture from Step 2.
- 5. Beat egg whites to a soft peak and fold in.
- 6. Pour into either a prepared 13 x 9 pan or Bundt pan, sprayed with cooking spray.
- 7. Bake at 225 degrees for 3 to 3-1/2 hours, considering not all ovens were created equal. ;)
- 8. Enjoy a big ol' hunk of Texas goodness with a large dollop of your favorite vanilla ice cream. Mmm-mmm good! ;)

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
- Mix butter, milk, coconut milk, and vanilla extract together in a large bowl. Combine flour, sugar, cornstarch, baking powder, and salt in a separate bowl. Slowly mix into the milk mixture. Add egg yolks one at a time, beating well after each addition.
- Divide batter between the prepared cake pans.
- Bake cakes in the preheated oven until tops are golden yellow and spring back when lightly pressed, 25 to 30 minutes.
- Prepare frosting while cakes are baking. Combine sugar, evaporated milk, butter, egg yolks, and flour in a saucepan. Heat over medium-low, stirring constantly, until mixture starts to thicken. Add vanilla and stir for 1 minute. Pour in pecans; cook and stir for 2 minutes more.

- Preheat oven to 325°F.
- Grease and flour a 10 inch tube pan or bundt pan.
- Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Sift 3 1/2 cups flour and baking powder together, reserving 1/2 cup flour.
- Gradually add to creamed mixture alternately with lemon extract, beginning and ending with flour mixture.
- Beat well after each addition (the batter will be quite thick).
- Dredge pecans and raisins in remaining 1/2 cup flour; stir into batter.
- Spoon batter into prepared pan.
- Bake for 1 3/4 hours or until cake tests done with a toothpick.
- Cool in pan 15 minutes.
- Turn out onto cooling rack and let cool completely before serving.
