BAKED SALMON FILLETS
I used my daughter's recipe with some modifications. For those who don't really fancy the taste of fish, this recipe will cure you of that. It is light and no overpowering fishy taste. Serve with rice and a vegetable of your choice (we like it with steamed broccoli).

- Preheat oven to 375°F.
- Pour 1 Tbsp of olive oil evenly in the bottom of a 9x9-inch glass baking dish.
- Place the fillets in the bottom of the baking dish.
- Pour the remaining olive oil over the fillets.
- Sprinkle half of the garlic over the fillets.
- Sprinkle the bread crumbs over the fillets.
- Sprinkle the cheese over the fillets.
- Bake for approximately 18 to 20 minutes making sure not to over bake.
- Squeeze the juice of a lemon quarter over each fillet (optional).

- Preheat oven to 350 degrees F (175 degrees C). In a saucepan bring 2 1/2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- In a large pan, add enough water to just cover the bottom of the pan. Lay the salmon fillet in the pan, pink side up. Place cooked rice around the outside of the fish. Sprinkle the orange juice over the fish and rice.

SIMPLE BAKED SALMON
Great method and recipe for a whole or half baked salmon. Quantities aren't important. Can be baked in either the oven or on a grill.

- If your salmon is frozen thaw it out, rinse, and pat dry. You can use a whole or half fish or steaks or fillets for this recipe.
- Lay a sheet of aluminum foil flat that is about 4" wider than the fish all the way around.
- Coat the aluminum foil with olive oil.
- Cut the lemon in to 1/4" slices and lay them down on the olive oil where the salmon will cover them.
- Sprinkle 1/3 to 1/2 the dill over the lemon.
- Sprinkle salt and pepper all over the salmon.
- Lay the salmon over the lemon and dill.
- If you have a whole fish oil the inner cavity and insert dill and lemon slices.
- Sprinkle dill then lay lemons on the top of the fish.
- Coat the inside of another sheet of aluminum foil the save size as the first with olive oil, put it over the top of the fish and seal the two pieces of foil all the way around.
- Place in a preheated grill or 400F oven and cook about 40 mins (for a whole fish) or until the internal temperature reaches 135F - a fork should easily be able to pierce the foil and through the fish when it is done.
- Remove top layer of foil, dill and lemons. Draw a knife down the back bone from front to tail. Slide the top fillet off the bones and place on a serving platter. Gently pull the spine with all the bones and tail off the lower fillet. Place the lower fillet on the serving platter without the dill and lemon. Enjoy! The fist is wonderful as is but may also be served with Hollandaise sauce.

EASY BAKED SALMON
Steps:
- Arrange rack, preheat the oven, and prepare the baking sheet: Place the rack in the middle of the oven. Preheat the oven to 375°F. Line a large-rimmed baking sheet with foil, being sure to leave several inches of overhang on both long ends to make your foil packet.
- Prepare the salmon: While the oven preheats, remove the salmon from the fridge to come to temperature, 15-20 minutes. Place the salmon on the prepared pan and pat both sides dry with a paper towel. Feel the flesh for any bones and remove them with fish tweezers or your fingers.
- Season the salmon: Season both sides of the salmon with salt and pepper.
- Make the butter sauce and pour over salmon: In a small bowl, combine the melted butter, garlic, honey, and lemon juice. Fold up the edges of the foil to contain the liquid and pour the butter mixture evenly over the top of the salmon.
- Seal the salmon with foil: Bring the two long sides of the foil together and then fold them down a few times to close the top of your packet. Then, tuck each end under to close the sides. If your piece of foil is not large enough, take a second sheet of foil and cover the salmon, pinching the foil to seal the edges.
- Bake the salmon: If you're cooking farm-raised salmon, it should be done in 18-20 minutes, depending on the thickness. If you're using wild-caught salmon, check for doneness beginning at 10 minutes. If you open the packet and see the fish isn't finished cooking, it should be opaque on top and flake easily with a fork, close the foil packet back up, return it to the oven, and check again in another 2-3 minutes.
- Broil the salmon: Carefully open the foil package to uncover the salmon completely, pushing the foil down and out of the way. Set the oven to broil on high. If you have an electric stove, return the salmon to the oven, still on the middle rack. Broil the salmon for 2-3 minutes. You'll see it turn just slightly golden with some charred spots but be sure not to burn the garlic. If you have a gas stove, you may want to reduce your broiling time to 1 minute or skip it all together.
- Serve: Let the salmon rest for about 5 minutes. Garnish with chopped herbs. Transfer to a serving platter or serve directly from the pan!

- Lay a piece of silver foil, large enough to wrap the salmon in a very loose parcel, on a baking tray.
- If the salmon is to be served hot, grease the foil with the butter, or use the oil if serving the salmon cold.
- Thinly slice the lemon and put about half on the foil.
- Put the salmon on top, with a few slices of lemon inside with onions, if using, and lay the rest of the lemon along the top of the salmon.
- Season generously and wrap loosely, making sure the edges are securely folded together so that no steam can escape.

SALMON FILLETS BAKED IN FOIL
This is one of my favourite ways to cook salmon now! It's so easy and foolproof... I usually make a whole bag of frozen fillets at a time. Whatever isn't eaten right away gets crumbled up on salads or mixed into pasta later on. Yum! (Measurements are approximate because I generally just eyeball it as described.) NOTE: Prep time includes minimum marinade duration!

- Place fillets in a glass dish large enough that they can all lie flat. Mix the water and soy sauce together (if you want it saltier, don't water the soy sauce down) and pour over the fillets. However many fillets you choose to make, just make sure the marinade comes up about halfway on each fillet.
- Dust the top of each fillet with garlic powder, then pepper them generously. It's okay to almost cover the tops with pepper, if you like.
- Marinate a minimum of two hours in the fridge, covered--I usually use frozen fillets and let them defrost in the marinade overnight.
- Preheat oven to 350 degrees.
- Place each fillet on a piece of aluminum foil large enough to fold into a sealed packet, but before you seal it, add a couple of splashes of fresh soy sauce.
- Bake sealed packets in an uncovered glass casserole dish (for convenience) for 30-40 minutes or until salmon flakes easily when prodded with a fork.
- Unwrap and serve!
