MOM'S BAKED BEANS
Steps:
- Preheat the oven to 350 degrees F.
- Line a plate with a paper towel. In a saute pan over medium heat, add the bacon. Cook until tender and cooked but not crisp, flipping once, about 8 minutes. Remove to the paper-towel lined plate. Let cool and then chop.
- To the pan with the bacon drippings, add the onion and cook until tender, soft and translucent, about 7 minutes. Add the garlic and cook until fragrant, another 1 to 2 minutes. Remove from heat.
- To a large bowl, add the baked beans, molasses, dark brown sugar, barbecue sauce and bacon mixture. Pour the mixture into a 9-by-13-inch baking dish and bake, uncovered, for about 1 hour. Remove from the oven and let cool for at least 10 minutes before serving.

- Preheat oven to 375 degrees. In a medium bowl, combine molasses, ketchup, and mustard. Add beans, and season with salt and pepper; mix to combine.
- Transfer to a 2- to 3-quart covered baking dish. Scatter onion over beans; then lay bacon slices on top, in a single layer, covering onion as completely as possible.
- Cover dish and bake, 30 minutes. Uncover; cook until bacon is crispy, 30 to 40 minutes more. Let sit 5 minutes; mix well before serving.

- Place beans and 2-1/2 qts. water in a 6-qt. Dutch oven; bring to a boil and boil for 2 minutes. Remove from the heat; soak for 1 hour. Drain and rinse beans; return to pan with remaining water. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until beans are tender. Drain, reserving cooking liquid. Return beans to pan; add remaining ingredients and mix well. - Soak Beans overnight, with plenty of water above the beans. They soak it up!
- In the morning, drain the beans, cover with water, add 1 tsp salt and cook until slightly tender -- 20-30 minutes. However, you must watch these babies, because they have a big tendency to boil over!Just bring them to a boil (watching them), then lower the heat --- and still watch them!
- After the beans are cooked, drain again and rinse them under hot water, and place them in a lightly sprayed or greased (oleo) casserole dish.
- Dab Butter over beans; mix "lightly"! or they get squishy.
- Stir in Molasses.
- Finally, pour in sour cream and mix "tenderly".
- Bake at 350 for one hour. (again, keep an eye on them, I don't think I usually bake them for and entire hour).

- Cook bacon in heavy large pot over medium heat until fat is rendered and bacon is crisp, about 5 minutes. Using slotted spoon, transfer bacon to paper towels; drain. Discard all but 2 tablespoons drippings in pot. Add onions, bell pepper and garlic to pot; sauté until vegetables are tender, about 8 minutes. Stir in bacon, beans and remaining ingredients. - Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
- Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
- Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

- In 5-quart Dutch oven, heat 8 cups water and beans to boiling over medium-high heat. Boil uncovered 2 minutes. Remove from heat; let stand 1 hour; drain.
- Heat oven to 350°F. In same 5-quart Dutch oven, cook and stir salt pork over medium-high heat 5 to 6 minutes, until lightly browned. Stir in remaining ingredients. Bring to boiling over medium-high heat. Cover; place in oven and bake 1 hour.
