ROASTED ITALIAN SAUSAGE AND POTATOES WITH MUSHROOMS AND PEPPERS
This is loosely adapted from Judith M. Fertig's recipe in Prairie Home Cooking. The original did not have any cheese or herbs. Either sweet or hot sausages will do; I've also made it with bratwurst. This is a very easy dinner, very nice for cold weather.

Steps:
- Preheat oven to 400°F.
- Combine herbs, olive oil, salt,pepper and potatoes and toss to mix.
- Place sausages and potatoes in large baking or roasting pan.
- Roast at 400° for 30 minutes, or until just beginning to brown, turning several times.
- Add a little more oil if the potatoes appear to be drying out.
- Add remaining vegetables and roast 45 minutes more, turning occasionally, until potatoes are brown on the outside and tender on the inside.
- Sprinkle with mozzarella and return to oven just until cheese is melted.

Steps:
- Preheat the oven to 200°C.
- Slice the sausages into 4cm pieces and place in a large roasting pan.
- Add the potatoes, paprika, rosemary, garlic cloves, sea salt and pepper.
- Tear the ciabatta into bite size pieces and add to the roasting tray.
- Drizzle over the oil and gently toss to combine.
- Place in the oven and cook, stirring occasionally, for 30-40 minutes or until the potatoes are tender and the sausages and bread are golden brown.
- Top with continental parsley and serve with a green salad.

- In a large skillet, cook sausage and onion until sausage is no longer pink; drain. Add sauerkraut, brown sugar and poultry seasoning; cover and simmer for 1 hour. Transfer to an ungreased 13-in. x 9-in. baking dish. , Meanwhile, cook potatoes until tender; drain and mash slightly. Add milk, pepper and salt if desired; mash until smooth. - Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
- Melt 1 tablespoon butter in a large skillet over medium heat. Add sausage, onion, and mushrooms; cook and stir until onion is translucent, about 5 minutes. Add spinach and garlic; cook and stir until spinach is wilted, about 2 minutes. Season with 1/2 teaspoon salt.

- Grease large casserole.
- Cut precooked sausages into 2" pieces, and both peppers into 1/4" slices.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.

- Set oven to 350 degrees.
- Grease a 9-inch square baking dish.
- In a skillet, cook the sausage until no longer pink; drain fat, can cut in large pieces or leave whole.
- Place in the bottom of the prepared baking dish.

- Place the potatoes, carrot and onion in a 2.5 quart lightly greased casserole dish. Add the oil, house seasoning and Italian seasoning. Toss to coat well then dot the potatoes with the butter. Lay the sausages across the top. Cover with tinfoil and place in a 425° oven for 30 minutes. Remove and uncover, return to the oven for 20 minutes. Remove and top with the cheese and place back in the oven for 10 minutes.
ITALIAN SAUSAGE AND POTATOES
This is another one of those Italian peasant dishes that I so love. It's a family recipe which means there really is no recipe. But I took notes while making it tonight. Just three main ingredients so you really can't go wrong. Enjoy.

Steps:
- 1. Brown sausage in a very large fry pan breaking it up with a wooden spoon. When it is no longer pink, remove the sausage to a large oven proof casserole dish. Leave the oil from the sausage in the pan.
- 2. While the sausage is frying, cut the potatoes into quarters length-wise and then slice into 1/4 inch thick slices. Place the cut up potatoes into the fry pan and cook on medium/high heat (you can add a tablespoon of oil if necessary). Keep an eye on the potatoes and toss them every few minutes so they don't burn. You just want them to be golden brown.
- 3. When the potatoes are half way cooked (maybe about 10 minutes), add the sliced onion and season with the salt, pepper and basil. Mix occassionally and cook until the onion is translucent.
- 4. Place the potatoes/onions in the casserole with the sausage and mix.
- 5. Cover the casserole with aluminum foil and bake for approximately 20 minutes at 375 degrees. Remove the foil and bake another 10-15 minutes.
- 6. Sprinkle with a little more fresh parsley and serve.
- 7. NOTE: You can have this as a Main Course with a salad and Italian bread or as a side dish. You can also add peas before placing in the oven.
