Cauliflower is aaaaall the rage nowadays, and there's nothing like a new trend to get you excited to fire it up in the kitchen! Maybe you love cauliflower rice, or you're often found chowing down on a cauliflower crust pizza. But we're throwing it back with the recipe that started all the #cauliflowerlove: buffalo cauliflower. They're so flavor-packed that won't even miss wing night with these around.

¾ cup all-purpose flour
1 teaspoon paprika
2 teaspoons garlic powder
1 teaspoon salt
½ teaspoon pepper
¾ cup milk or milk alternative
1 head cauliflower
¼ cup buffalo sauce or hot sauce
2 tablespoons coconut oil or vegetable oil
1 tablespoon honey

Steps:

  • Preheat the oven to 450˚F (230˚C). Line a baking sheet with parchment paper.
  • In a large bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined.
  • Break the head of cauliflower into florets, about 1½-inches wide. Add the cauliflower florets to the batter, making sure each piece is evenly coated. Arrange the coated cauliflower on the baking sheet. Bake for 20 minutes, flipping halfway.
  • Meanwhile, in a small bowl, combine the buffalo sauce, coconut oil, and honey and stir until evenly combined. Brush the buffalo sauce mixture on the cauliflower and bake for another 20 minutes.

Reynolds Wrap® Non-Stick Aluminum Foil
1/2 cup water
1/2 cup milk
3/4 cup all-purpose flour
2 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp smoked paprika
1/4 tsp salt
1/4 tsp ground pepper
1 head of cauliflower, washed and cut into florets (approx. 4 cups of florets)
1/2 cup Frank's red hot sauce
1 tbsp butter
1 tsp honey
Sliced green onion, for garnish

Steps:

  • Preheat oven to 425˚F. Line a rimmed baking sheet with Reynolds Wrap® Non-Stick Aluminum Foil.
  • In a medium bowl, stir together water, milk, flour, and spices until well-combined.
  • Dip florets into the batter, shaking off the excess before adding to the lined baking sheet in a single layer.
  • Bake for 20 minutes, flipping halfway through, until crispy and golden brown.
  • While the cauliflower is baking, melt butter in a small saucepan over medium heat. Stir in hot sauce and honey. Cook for another 5 minutes until slightly thickened. Remove from heat and cool slightly.
  • Add florets to large bowl and toss with ¾ cup of the buffalo sauce. Return to the lined baking sheet in a single layer. Bake for another 15 minutes, then drizzle with remaining sauce.
  • Serve immediately with ranch or blue cheese.

AIR FRYER BUFFALO CAULIFLOWER BITES

You know you've reached buffalo cauliflower perfection when everyone proclaims these bites "as good as the best wings ever!" And that's no big surprise: Cauliflower florets have the same crispy "fried" exterior and piquant buffalo flavor as the classic chicken variety. The secret lies in double breading each floret in cheesy breadcrumbs, then carefully coating every nook and cranny with nonstick spray. Serve this appetizer with your favorite ranch or blue cheese dressing and watch it disappear in minutes.

Nonstick cooking spray, for the basket and cauliflower florets
1 small head cauliflower (about 1 1/2 pounds), cut into even 3/4-inch-florets (4 cups)
1 cup breadcrumbs seasoned with Parmesan
1 1/2 cups panko breadcrumbs seasoned with Pecorino Romano
4 large eggs
1/3 cup whole milk
6 tablespoons unsalted butter
3/4 cup Buffalo-style hot sauce
Diced chives, for serving
Ranch or blue cheese dressing, for serving

Steps:

  • Spray the basket of a 6-quart air fryer with cooking spray and set aside.
  • Arrange the cauliflower on a baking sheet and set up a breading station next to it: Fill one shallow bowl with the Parmesan breadcrumbs, another shallow bowl with the panko breadcrumbs and third shallow bowl with the eggs and milk. Whisk together the eggs and milk together until combined.
  • Working with several cauliflower florets at a time, roll them in the egg mixture until fully coated, shake off excess egg, then roll them in the Parmesan breadcrumbs until fully coated. Roll them in the egg mixture a second time, shaking off excess egg, and finally, roll them in the panko breadcrumbs until fully coated. Transfer the breaded pieces back to the baking sheet. Repeat until all the cauliflower florets are breaded.
  • Preheat an air fryer to 370 degrees F. Preheat your oven to 250 degrees F.
  • Pick up each cauliflower floret and spray it all over with nonstick spray, making sure to coat every nook and cranny. Arrange some of the florets in a single layer in the air fryer basket without touching (you will probably have to work in two batches). Air fry the florets, flipping them once, until golden and crispy, about 12 minutes. Transfer the cooked cauliflower to a baking sheet and place in the oven to keep warm. Air fry the remaining cauliflower.
  • Meanwhile, melt the butter in a large, shallow microwave-safe bowl, about 1 minute. Whisk in the hot sauce. Add the cauliflower to the bowl and toss to combine with the hot sauce until fully coated.
  • For the crispiest results, serve the bites immediately sprinkled with chives with the dressing alongside. As the bites sit, they'll become slightly less crispy, just like wings, but they'll still be just as tasty.

I get asked for this recipe all the time because it's just so irresistibly moreish. Crisp-baked battered cauliflower florets are coated in a sticky, sweet and sour sauce, fresh chopped cilantro and scallions.

Olive oil, for the baking sheets
1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1 teaspoon granulated garlic
1 teaspoon ground ginger
1 pinch of flaky sea salt
1 cup chilled sparkling water
1 medium head cauliflower, cut into bite-sized florets (about 1 pound)
3 tablespoons light brown sugar
2 tablespoons ketchup
2 tablespoons tamari or soy sauce
2 tablespoons apple cider vinegar (rice or white vinegar also work well)
1 tablespoon toasted sesame oil
1 tablespoon sriracha (less or more, depending on how hot you like it)
2 medium cloves garlic, finely chopped
2 tablespoons fresh cilantro, finely chopped
2 scallions, green and white parts, thinly sliced

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Liberally grease 2 parchment-lined baking sheets with olive oil.
  • In a medium-large mixing bowl, combine the flour, cornstarch, baking powder, garlic, ginger, and salt. Make a well in the middle and stir in the sparkling water, whisking with a fork to form a smooth batter.
  • Add the cauliflower florets and gently toss to coat them evenly in the batter.
  • Place the florets onto the baking sheets, allowing a space between each piece to help them crisp up in the oven (if they are too close, they will steam each other). Bake, turning once, until crispy and golden brown, about 10 minutes.
  • Meanwhile, make the sauce: Place the brown sugar, ketchup, tamari, vinegar, sesame oil, sriracha and garlic in a small saucepan. Using a wooden spoon, mix well and bring to a gentle, bubbling simmer. Cook, stirring often, until it reduces into a glossy consistency that coats the back of the wooden spoon, about 10 minutes.
  • Remove the cauliflower from the oven and tip into a bowl. Drizzle over the sweet and sour sauce, add most of the cilantro and scallions, leaving some behind for garnish, and gently toss to coat each floret.
  • Transfer to a serving plate and sprinkle over the remaining cilantro and scallions before serving. Enjoy.

1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
  • Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
  • For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.

½ cup hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet with cooking spray.
  • Mix flour, water, garlic powder, salt, and pepper together in a bowl using a whisk until batter is smooth and somewhat runny. Add cauliflower to batter and mix until cauliflower is coated; spread onto the baking sheet.
