The Best Ever Balsamic Grilled Chicken Kabobs image

These juicy Balsamic Grilled Chicken Kabobs are the BEST kabobs you will ever have! Tender chicken marinated in a sweet balsamic sauce then skewered with fresh vegetables and grilled to perfection.

2.5 lbs. boneless skinless chicken breasts, cut into 1″ cubes
2 red pepper, cut into cubes
1 yellow pepper, cut into cubes
1 red onion, cut into cubes
1 pint cherry tomatoes
1 squash, 1/2″ slices
2 zucchini, 1/2″ slices
1/4 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon dijon mustard
1 tablespoon honey
1 teaspoon dry basil
salt & pepper

Steps:

  • To a small bowl add balsamic vinegar, dijon mustard, honey, dry basil, salt, and pepper. Whisk together and slowly add in the olive oil whisking the entire time.
  • To a large bowl, add chicken cubes and half the balsamic mixture, reserve the rest. Stir to make sure all the chicken is coated. Cover with plastic wrap and place in the refrigerator for 30 minutes to marinade.
  • Preheat grill to medium high heat (375-400° F).
  • Remove the chicken from the refrigerator and start to assemble the kabobs.
  • Alternate veggies with chicken on a skewer until everything is used up.
  • Place kabobs on the grill and grill each side for 3-4 minutes, until charred. Brush the remaining marinade on the kabobs for one last flavor burst. Grill for 2 more minutes.
  • Remove from grill.
  • Serve!

1 large each green and red peppers, cut into 1-1/2-inch pieces
3 Tbsp. olive oil
1 clove garlic, minced
1 Tbsp. GREY POUPON Dijon Mustard
1 Tbsp. chopped green onions
2 tsp. lemon juice

Steps:

  • Heat grill to medium heat.
  • Thread chicken onto 4 skewers alternately with peppers; set aside.
  • Mix remaining ingredients in small bowl until blended.
  • Grill kabobs 7 to 9 min. on each side or until chicken is done, brushing frequently with mustard mixture.

1 cup dry bread crumbs
1 cup grated Parmesan cheese
1/2 cup milk
1/2 cup Dijon mustard
1 broiler/fryer chicken (3 to 4 pounds), cut up

Steps:

  • In a large resealable plastic bag, combine bread crumbs and Parmesan cheese. In a shallow bowl, whisk the milk and mustard until blended. Dip chicken, a few pieces at a time, into milk mixture, then place in bag and shake to coat., Place chicken, bone side down, in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350° for 50-55 minutes or until juices run clear.

You can easily double this recipe and I suggest you do so, this chicken is fantastic! Plan ahead the chicken needs to marinate in the sour cream-Dijon mixture for a minimum of 5 hours. If you are using wooden skewers make certain to soak them in cold water for a minimum of 30 minutes before threading.

1 (8 ounce) container sour cream
1/4 cup Dijon mustard
2 tablespoons minced fresh garlic
1 tablespoon prepared horseradish
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper (or use cayenne)
6 boneless chicken breasts (cut into about 1-1/2-inch pieces)
1 large red bell pepper (seeded and cut in desired pieces)
1 large cherry tomatoes (use as many as you want)

Steps:

  • In a large glass bowl mix together the sour cream, Dijon mustard, minced garlic, horseradish, honey, salt, pepper and red pepper; mix well to combine.
  • Add in the chicken to the bowl and toss to combine with remaining marinade; cover and refrigerate for 5 hours.
  • Remove the chicken and discard marinade.
  • Thread the chicken onto skewers alternating with bell pepper pieces and cherry tomatoes.
