CREAMY CHICKEN BROCCOLI AND RICE SKILLET RECIPE
This creamy chicken broccoli and rice skillet is flavorful, filling and family-friendly! It's ready to go in just under 30 minutes!

- In a large saute pan or Dutch oven set over medium-low heat, add the butter. Cook chicken until tender, add the shallot and cook until translucent, then add the garlic and saute until fragrant.
- Sprinkle in the flour, taking care to not let it brown. Whisk frequently for a minute or so, then pour in the milk and ½ cup of chicken broth. Turn the heat up to medium and bring the mixture to a simmer, whisking constantly. Add the salt, black pepper, paprika, cayenne pepper and garlic powder. The mixture should thicken up and turn into a nice creamy sauce.
- Add the rice, broccoli and half of the cheese. Stir to combine, then add the additional ¼ cup of chicken stock (if needed to thin it out). Top with remaining cheese, remove from heat and serve once the cheese has melted. Garnish with additional salt, pepper and paprika.

- Heat oil in large skillet on medium heat. Add chicken; cook 5 to 7 min. on each side or until browned on both sides. Remove chicken from skillet, reserving drippings in skillet.
- Stir water into drippings in skillet. Add bouillon cubes. Bring to boil. Stir in rice. Top with chicken; cover. Reduce heat to medium-low; simmer 10 min. Add broccoli; cook an additional 10 min. or until chicken is cooked through (180°F). Remove chicken from skillet; cover to keep warm.
- Add VELVEETA to ingredients remaining in skillet; mix lightly. Cook until VELVEETA is completely melted and mixture is well blended, stirring frequently. Return chicken to skillet; cover. Let stand 5 min. before serving.

- Cook 1 pound of meat in 1 tbsp of hot oil in a large skillet or 10 minutes or until cooked through, stirring frequently.

My friend Christy and I were watching some movies one night and at intermission, decided it was dinner time. Her little boy, Damian was quite the picky tyke and we knew that feeding him would be what we based our meal on. Well, this was something we'd been meaning to try, so we gave it a go. Four adult and two little thumbs up! Easy, one large skillet, and not a lot of dishes to wash. It was also quick. This is something to throw together after working in the field all day too.

- Heat a bit of oil in a large and fry the chicken until done. Shred or cut into bite-sized pieces, if desired. Remove from skillet and set aside.

- In small bowl, combine all spices; set aside.
- In large skillet over medium heat, melt margarine.
- Add chicken.
- Sprinkle spice mix over chicken.
- Stir to coat.
- Saute chicken until lightly browned.
- Do not drain.
- In same skillet as chicken is in, cook rice according to package directions.
- When adding water, also add broccoli.
- Cover and turn heat to low.
