Rushed? Need an elegant main dish to serve for an important occasion, that doesn't take a lot of preparation or time? This is it. This dish is not only easy and quick, it serves up beautifully as well. My family loves it. Tip: For a delicious sauce to serve over the chicken and peaches, mix 1/2 tablespoon cornstarch with 1/2 cup cold water and pour mixture into cooking juices. This mixture will thicken and become a sauce to pour over the chicken and peaches.

8 skinless, boneless chicken breast halves
1 cup brown sugar
4 fresh peaches - peeled, pitted, and sliced
⅛ teaspoon ground ginger
⅛ teaspoon ground cloves
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place chicken in the prepared baking dish, and sprinkle with 1/2 cup of brown sugar. Place peach slices over chicken, then sprinkle with remaining 1/2 cup brown sugar, ginger, cloves, and lemon juice.
  • Bake for about 30 minutes in the preheated oven, basting often with juices, until chicken is cooked through and juices run clear.

Very tasty yogurt-dipped, breaded chicken breasts. The yogurt makes the chicken VERY moist and the coating nice and crunchy!

4 skinless, boneless chicken breasts
1 (6 ounce) container plain low-fat yogurt
1 lemon, juiced
1 cup dried bread crumbs, seasoned
½ teaspoon garlic powder
salt to taste
¼ cup butter
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place yogurt in a small bowl and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.) In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.
  • In a 9x13 inch baking dish place 1 scant pat of butter or margarine for each chicken breast. Rinse chicken breasts and pat dry. Dip each breast in the lemon/yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).
  • Place coated chicken in the baking dish and top each breast with a full pat of butter or margarine. Sprinkle with chopped parsley and bake in the preheated oven for 1 hour. Let cool for 5 to 10 minutes before serving.

  • Preheat oven to 375℉ (190℃). In a food processor or blender, reduce the stuffing mix to coarse crumbs. Pour them onto a sheet of wax paper. Coat one piece of chicken breast with yogurt as thickly as possible (admittedly, this is a messy step), then dip it into the crumbs to coat. Lay the chicken in an oiled baking dish large enough to hold chicken and peaches in one layer. Repeat with the remaining chicken. Surround the chicken with the peach halves, cut side down. Sprinkle the peaches (not the chicken) with cinnamon sugar. Bake for 20 minutes, or until the breasts are just cooked through but not dry.

1 cup French dressing
1 ½ cups cornflakes cereal crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place the dressing in a shallow dish or bowl for dipping. Do the same with the cornflakes crumbs or breadcrumbs (see Cook's Note). Dip the chicken breasts, one at a time, in the dressing, then in the breadcrumbs to coat.
  • Place chicken breasts in prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until an instant-read thermometer reads 165 degrees F (74 degrees C).

  • Wash thoroughly the chicken breasts and cut into thick strips (3-4 strips each one, depending on the size of each chicken breast). In a large bowl, add the ingredients for the marinade and whisk to combine. Add the chicken pieces and blend to coat. Cover the bowl with some plastic wrap and leave in the fridge for at least 3 hours. The longer you leave the chicken marinade, the tender it will turn out, so if you have the time, it’s best to leave it overnight.
  • Take the chicken out of the fridge and drain. Prepare the ingredients for the crust. In a bowl, add the yogurt (400g), the water, the eggs, the baking powder and season with salt and pepper. Whisk the mixture until smooth, like a batter. In a separate bowl, add the flour, the semolina, the sesame seeds, 1 tsp of salt, the herbs and spices and blend to combine. (Use any kind of herbs and spices you like, the more the better!)
  • Take 3-4 chicken strips, dip them in the yogurt mixture and place them in the flour-semolina mixture. Shake to coat and set aside, shaking of any excess four. Repeat with the rest. To form a nice thick crust, it is important to repeat this procedure twice, starting again with the yogurt mixture and then dredging with the flour mixture.
  • Butter the bottom of a large non-sticking pan and place the chicken fingers in a single layer. Bake in preheated oven at 200C for about 22 minutes, until golden brown crispy and cooked through. When you turn the chicken fingers out of the oven, you will realise that the pan is completely dry, which means extra juicy and tender chicken, as the crust helped the chicken to withhold all its juices.
