- 1. In a medium size sauce pan add Dr pepper, sugar , orange juice ^ mustard, whisk together till well blended. Bring to a boil then reduce heat to medium-low and simmer 15 to 25 minutes or until mixture becomes syrupy, and makes about 1 1/2 cups.
- 2. Follow package directions to bake ham. usually about 14 minutes per pound for plastic bag or 17 minutes per pound if wrapped in foil at 250 degrees F. But follow package direction. During last 10 to 15 minutes of baking ham. Remove from oven. Roll back bag or peel back foil. Glaze liberally with ham glaze, and return to oven for an additional 10 to 15 minutes, until glaze is sticky. Save extra glaze to serve with ham.

- 1. Add all of the glaze ingredients in a medium sauce pan. Whisk or stir until sugar dissolves into liquid. Bring to a boil over medium high heat and cook until mixture becomes thick and syrupy. About 15 to 20 minutes, maybe a bit longer. NOTE IF YOU COOK TOO LONG GLAZE WILL HARDEN, AND MAY NEED TO BE HEATED. I USUALLY MAKE AN EXTRA BATCH OF THIS GLAZE TO SERVE ON THE SIDE, IT IS THAT GOOD.
- 2. Remove from heat and brush over the outer surface of ham. Then return ham to oven for 10 to 15 minutes. Repeat if desired.
- 3. Place ham on large platter, and garnish as desired. EXTRA GLAZE IS DELICIOUS SERVED ON THE SIDE along with ham.

BAKED HAM WITH ORANGE-PEPPER GLAZE

- Remove the ham from the refrigerator 1 hour before baking. Trim off any skin, leaving an even layer of fat (about 1/2 inch thick). Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Place the ham, flat-side down, on a roasting rack set in a large roasting pan.
- Position a rack in the lower third of the oven; preheat to 350 degrees F. Combine the orange juice, 1 cup chicken broth and the melted butter in a measuring cup. Pour over the ham and tent with foil. Bake, basting with the pan juices every 30 minutes, until a thermometer inserted into the thickest part of the ham registers 130 degrees F, 2 to 2 1/2 hours.
- Make the glaze: Remove the ham from the oven, spoon out about 1/4 cup of the pan juices and transfer to a medium bowl. Whisk the pepper jelly, mustard, brown sugar, marmalade, vinegar, thyme, chile powder, coriander, cayenne and orange zest into the bowl.
- Brush the ham with about one-quarter of the glaze. Add the remaining 1 cup broth to the pan. Return to the oven and bake, brushing the ham with more glaze twice (reserve some for finishing), until the surface is caramelized and a thermometer inserted into the thickest part registers 140 degrees F, 1 1/2 to 2 more hours. Transfer the ham to a cutting board. Brush with the reserved glaze; let rest 15 minutes before carving.
THE BEST HAM GLAZE
A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
- Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
- Let the ham cool for 15 minutes before thinly slicing.
