1 (14.5 ounce) package penne pasta (such as Barilla® Plus)
2 cups water
1 (14 ounce) can artichoke bottoms, drained
1 tablespoon dried basil
2 cubes vegetable bouillon
1 pinch coriander seed
6 skinless, boneless chicken breast halves
salt and ground black pepper to taste
2 zucchini, sliced
½ red bell pepper, sliced
1 tablespoon olive oil, or as needed
¼ cup shredded Italian cheese blend, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix tomato-vegetable juice cocktail, penne pasta, water, artichoke bottoms, basil, vegetable bouillon, and coriander seeds in a large oven-safe pot. Layer chicken atop pasta mixture and season with salt and pepper. Layer zucchini and red bell pepper on chicken; drizzle with olive oil and sprinkle with salt.
  • Roast chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle each serving with Italian cheese blend.

4 tbsp olive oil
1 onion , finely chopped
2 garlic cloves , crushed
¼ tsp chilli flakes
2 x 400g cans chopped tomatoes
1 tsp caster sugar
6 tbsp mascarpone
4 skinless chicken breasts, sliced into strips
300g penne
70g mature cheddar , grated
50g grated mozzarella
½ small bunch of parsley , finely chopped

Steps:

  • Heat 2 tbsp of the oil in a pan over a medium heat and fry the onion gently for 10-12 mins. Add the garlic and chilli flakes and cook for 1 min. Tip in the tomatoes and sugar and season to taste. Simmer uncovered for 20 mins or until thickened, then stir through the mascarpone.
  • Heat 1 tbsp of oil in a non-stick frying pan. Season the chicken and fry for 5-7 mins or until the chicken is cooked through.
  • Heat the oven to 220C/200C fan/gas 7. Cook the penne following pack instructions. Drain and toss with the remaining oil. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce. Top with the cheddar, mozzarella and parsley. Bake for 20 mins or until golden brown and bubbling.

1 cup pastina pasta (or any small pasta)
2 tablespoons olive oil
1/2 cup cubed chicken breast (1-inch cubes)
1/2 cup diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-ounce) can diced tomatoes with juice
1 cup shredded mozzarella
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup bread crumbs
1/4 cup grated Parmesan
1 tablespoon butter, plus more for buttering the baking dish

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl.
  • Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, about 30 minutes.

  • In a shallow bowl, beat the egg. Place the bread crumbs in another shallow bowl. Dip chicken in egg, then coat with crumbs. 250g/9oz penne
1 onion, roughly chopped
3 skinless, boneless chicken breasts, cut into thin strips roughly the size of your little finger
1 tbsp paprika
2 tbsp olive oil
salt and freshly ground black pepper
50g/1¾oz butter
50g/1¾oz plain flour
750ml/1 pint 6 fl oz hot milk (see tip)
1 tsp Dijon mustard
100g/3½oz Parmesan cheese, coarsely grated
2 large tomatoes, deseeded and cut into small cubes

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7. Butter a shallow 1.75 litre/3 pint ovenproof dish.
  • Cook the penne with the onion in boiling, salted water according to the packet instructions. Drain, refresh in cold water and leave to drain again in the colander.
  • Put the chicken strips in a resealable freezer bag with the paprika and a little salt and pepper, seal the bag and shake to coat.
  • Heat 1 tablespoon of the oil in a large frying pan and quickly fry the chicken over a high heat for about 2 minutes until golden-brown and just cooked through (you may need to do this in batches). Using a slotted spoon, transfer the fried chicken to a plate and set aside.
  • To make the sauce, melt the butter in a large saucepan, add the flour and whisk together to form a roux. Cook for 1 minute, then gradually add the hot milk, whisking over a high heat until the sauce is smooth and thickened, and allow to boil for 4 minutes. Stir in the mustard and half the cheese and season with salt and pepper.
  • Add the pasta and onion to the sauce in the pan and stir together. Spoon half this mixture into the dish, arrange the chicken strips over the top and spoon the remaining pasta and sauce on top of the chicken. Scatter over the tomatoes and then top with the remaining cheese. Bake in the oven for about 20 minutes until piping hot and golden-brown on top.

It will be in my regular rotation from now on, it was easy, quick and very tasty. I will change a few things though...I will use tomatoes with Italian seasoning and maybe a little more cheese next time! I even think it would be good if you added some ricotta to the mix. There are a lot of possibilities, but it was good as it is written. I doubled the recipe and it was fine. Enjoy!

1 pound penne pasta (cooked and drained to package instructions in well-salted water)
1 pound chicken (cooked, and diced into bite-sized pieces)
25 ounces Marinara sauce ((I am using a jar of Aldi organic Marinara))
1 1/2 cups shredded part skim mozzarella
1/4 teaspoon oregano
2 Tablespoons chopped fresh parsley ((optional, fresh basil would also be fantastic!))
1 pound part skim ricotta cheese
1/3 cup parmesan cheese (grated)
1 teaspoon parsley (dried)
3/4 teaspoon garlic powder
1/4 teaspoon salt and pepper ((1/4 teaspoon each))

Steps:

  • Preheat oven to 375 degrees.
  • Mix up the ricotta parmesan filling in a medium bowl, and set aside.
  • Toss the cooked pasta with the jar of sauce. I do this in the same (empty, removed from heat) pot I cooked the pasta in to dirty up fewer dishes.
  • Pour half the pasta and sauce in a casserole dish. I am using a Corningware 2.5 quart casseroled dish. A 9 x 13 also works.
  • Spoon on ricotta filling, and use the back of your spoon to carefully spread it around evenly.
  • Add the other half of the pasta mixture.
  • Layer on the bite-sized chicken pieces, making sure to spread them somewhat evenly.
  • Sprinkle on the mozzarella cheese.
  • Sprinkle the dried oregano on top of that.
  • Bake in a preheated oven at 375 degrees until the cheese melts, about 15 to 17 minutes. See notes for baking pre-prepped refrigerated version.
  • Remove from oven, and sprinkle on fresh herbs (parsley or basil) to garnish, if desired.
  • Serve immediately.

This chicken pasta bake is family-friendly and has a healthy style with its high vegetable content of Cauliflower and Spinach

3 cups uncooked pasta (300g)
300 g sliced chicken breast
400 g cauliflower
3 handfuls spinach
30 g butter
3 Tbsp flour
¾ cup milk
¾ cup stock
1 Cup grated cheese (100g + additional for the topping)

Steps:

  • (Pasta) Pop on a large pot of water to boil- once boiling cook the pasta. Use the packet directions as a guide for cooking time, as the pasta will also be baked I tend to cook the pasta for approximately two-thirds of the suggested cooking time, but while this is happening you can move on to the other steps.
  • (Chicken) Heat a pan and brown your chicken
  • (Veggies) Cut the cauliflower into florets, add to a second pot, cover with water and bring to boil (leave to boil until tender)
  • (White Sauce ) Add butter to a third smaller pot, heat over a medium/low heat until melted
  • (White Sauce ) Heat your milk and stock (you don't have to, but the sauce making is much faster with warmed milk and stock)
  • (White Sauce ) Add the flour to the pot and cook off for the basis of your roux/white sauce
  • (White Sauce ) Gradually add the milk and stock to create a thick velvety sauce
  • (White Sauce )Add cheese to the white sauce and allow to melt into the sauce. Once done remove from the heat (you do not want a white sauce to boil, as it goes runny)
  • (Pasta) Remeber to check back on your pasta water and cook your pasta as per the packet instructions, once ready drain thoroughly
  • (Veggies) Remember to check on your cauliflower, once tender add 2 handfuls of spinach to the pot and let steam until wilted for a few minutes.
  • (Veggies) Drain the water from the cauliflower and spinach, blend to create a purée (I use a stick blender to do this)
  • Add the veggie purée to the cheese sauce and mix (do this in whichever is the bigger pot, ie the white sauce pot or the cauliflower pot. Be sure to taste the sauce at this stage, season with salt and pepper to your tastes.
  • Mix the sauce mixture and with the cooked pasta and browned chicken, add one more handful of spinach if desired and mix through
  • Pop the pasta mix into a baking/lasagna dish, top with grated cheese
  • Bake in an oven at 180 degrees for 30-35mins, until cheese, is melted and golden

  • Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.

1 large courgette (160g), coarsely grated

500g carton passata

1 tsp chilli powder (optional)
25g Kalamata olives (about 8), sliced
