Bananas tend to be well-tolerated by many GPers. If you're tired of banana smoothies, give this recipe a try instead.

cooking spray
4 firm bananas, peeled and halved lengthwise
¼ cup maple syrup
1 tablespoon ground cinnamon
1 (1 inch) piece fresh ginger, grated
1 ½ teaspoons ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.
  • Bake in the preheated oven until heated through, 10 to 15 minutes.

4 medium unpeeled ripe bananas
4 teaspoons miniature chocolate chips
4 tablespoons miniature marshmallows

Steps:

  • Cut banana peel lengthwise about 1/2 in. deep, leaving 1/2 in. at both ends. Open peel wider to form a pocket. Fill each with 1 teaspoon chocolate chips and 1 tablespoon marshmallows. Crimp and shape four pieces of heavy-duty foil (about 12 in. square) around bananas, forming boats., Grill, covered, over medium heat until marshmallows melt and are golden brown, 5-10 minutes.

Banana boats are a classic campfire dessert: a delicious gooey mess of softened banana, melted chocolate and sticky marshmallows meant to be eaten with a spoon. Tweaking the recipe so it can be done at home in an oven or on a grill means that this treat can be enjoyed year round, even if you're far from a campfire. Bonus: If you're making them at home and feeling adventurous, you can add sprinkles, nuts or ice cream.

One 1.55-ounce milk chocolate bar
Nonstick cooking spray
4 regular marshmallows
2 unpeeled bananas
Sprinkles, nuts or ice cream, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F or prepare a grill for medium indirect heat. For a gas grill (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For a charcoal grill, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. (Be sure to consult the grill manufacturer's guide for best results.)
  • Break the chocolate bar into squares. Lightly spray kitchen shears with cooking spray and cut the marshmallows in half crosswise.
  • Use a paring knife to cut a slit down the center of 1 unpeeled banana lengthwise, being sure not to cut all the way through. Gently insert alternating pieces of half the chocolate and 4 marshmallow halves. Press the marshmallows into the banana as much as possible so they don't stick out too much. Wrap the banana in nonstick aluminum foil. Repeat with the remaining banana, chocolate and 4 marshmallow halves.
  • Bake or grill over indirect heat, covered, until gooey, 12 to 14 minutes. Let cool 1 minute before unwrapping and eating.

1/2 cup unsweetened crushed pineapple, drained
1/4 cup granola without raisins
1/4 cup chopped pecans
4 teaspoons miniature semisweet chocolate chips

Steps:

  • Cut each banana lengthwise about 1/2 in. deep, leaving 1/2 in. uncut at both ends. Place each banana on a 12-in. square of foil; crimp and shape foil around bananas so they sit flat. Gently pull each banana peel open, forming a pocket. Fill pockets with pineapple, granola, pecans and chocolate chips., Place on a baking sheet. Bake at 350° for 10-12 minutes or until chips are softened.

8 bananas
1 bag caramel bits or caramels cut into bits
1 bag chocolate chips
1 bag mini marshmallows
1 package original graham crackers, crushed into crumbs

Steps:

  • Split the bananas lengthwise, but don't cut all the way through. The goal is to create a boat to hold the ingredients. Load the bananas 1/4 cup each of the caramel bits, chocolate chips and mini marshmallows. Crumble 1 whole graham cracker onto each loaded banana. Wrap individually in 8-by-10-inch squares of foil, and then place near the campfire to melt the candies. Open up and eat with a spoon.

1 1/2 cups small marshmallows
6 tablespoons toasted hazelnuts, chopped

Steps:

  • Using a small paring knife carefully slice the banana peel from top to bottom. Open up the peel like a pocket. Spread the banana with the chocolate hazelnut spread, equally divided between the 6 bananas, top each with the marshmallows and sprinkle with chopped nuts. Gently fold the banana peel back in place, wrap the bananas in aluminum foil and cook over the coals for about 10 minutes.
