- In a small bowl, mix the first seven ingredients until blended. Store in an airtight container in the refrigerator for up to 2 weeks., To prepare hot buttered coffee: Place 1 tablespoon spice mixture in a mug. Stir in hot coffee. If desired, serve with cinnamon stick and whipped cream.

HOT, BUTTERY COFFEE (BULLETPROOF COFFEE)
Coffee with butter - it sounds weird, but we put cream in our coffee so it's not that much of a stretch! This is sometimes know by the name 'bulletproof coffee', but that's a branded thing that also includes MTC oils like coconut and plam, which allegedly add various unproven health benefits. I'm not about the weight loss and psuedo science gimmicks behind that - I just love coffee and butter. This recipe is all about making delicious, creamy coffee. You should use grass fed butter, which is easier to find in some places than other. If you're in the UK, Kerrygold is the best choice, and if you want organic, Yeo Valley is mostly grass fed too. Both salted and unsalted work, so it's really a matter of preference.

- You can use coffee brewed using any method - drip, french press, Americano, or you can buy fresh coffee from a cafe. Don't use instant coffee.
- Place butter in a blender, pour in coffee and blend until emulsified.* A thin froth will form on top. The ratio of coffee to butter can vary as much as you like. I usually use about as much as I would on an average piece of toast.
- Pour into a coffee mug and enjoy!
- * Blending hot liquids can be dangerous, so be careful! Don't use anything air-tight, such as a Nutribullet. I use an immersion blender in a tall cup, and I wrap a tea towel around the top to prevent hot splatter. You can also use a traditional blender with cloth placed over the pour hole.

- In a small bowl, beat butter and brown sugar until crumbly, about 2 minutes. Beat in vanilla and spices.
