1/2 cup butter
1/2 cup shortening
1 1/2 cups brown sugar
2 teaspoons vanilla extract
2 beaten eggs
2 1/2 cups sifted flour
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1 tablespoon hot tap water
2 cups pitted dates, cut into thirds
2 cups candied cherries, halved
2 cups diced candied pineapple
1 cup toasted pecans
1 cup blanched almond
1 cup brazil nut, cut in thirds

Steps:

  • Cream butter, shortening, brown sugar and vanilla all together.
  • Add beaten eggs, until fluffy.
  • Sift two cups flour with the salt and spices.
  • Dissolve the baking soda in hot water.
  • Add soda to creamed mixture alternately with the dry ingredients.
  • Blend well.
  • Toss the fruit with the last 1/2 cup of remaining flour.
  • Work this into the dough by hand.
  • Drop from a teaspoon 1 inch apart onto greased cookie sheet.
  • Bake 325 degrees F.
  • for ABOUT 15 minutes.
  • Remove to cooling rack.

1 ½ cups white sugar
½ cup butter
3 eggs
2 ½ cups sifted all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon hot water
2 cups dates, pitted and chopped
3 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream the butter and sugar. Add eggs, one at a time, beating after each. Dissolve the baking soda in the hot water, add it to the egg mixture. Stir in the flour and cinnamon until well blended. Finally, stir in the dates and walnuts so they are evenly distributed.
  • Drop by heaping spoonfuls onto an ungreased cookie sheet. Bake for 10 to 15 minutes in the preheated oven, until golden.

An old recipe from my Great Aunt. She made these every holiday. This recipe makes a lot, so am entering here so I can adjust the recipe. Try them this year - you'll be surprised how yummy they are.

1 cup butter
1 1/2 cups white sugar
3 large eggs
3 cups flour
1 tablespoon cocoa
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon mace
1/2 teaspoon ginger
1/2 teaspoon allspice
3/4 teaspoon baking soda
1 tablespoon strong coffee
1 1/4 cups currants
1 cup raisins
1 lb chopped nuts (pecans or what you like)
1/4 cup chopped candied cherry
1/4 lb chopped candied pineapple
1/4 lb chopped citron
1/4 lb chopped dates
1/4 lb chopped candied grapefruits or 1/4 lb orange peel

Steps:

  • Preheat oven to 325 degrees. Prepare cookie sheets by greasing or covering with parchment paper.
  • Dredge chopped fruits in some of the flour. Using mixer, cream softened butter and sugar. Add well beaten eggs. Sift flour with spices, cocoa, baking soda and add to mixture, along with coffee. Add fruits and nuts and fold in, making sure to incorporate thoroughly.
  • Drop cookie dough by teaspoon onto prepared cookie sheets. Bake for 12 to 18 minutes or until a rich biscuit color. Cool on racks.
  • Store in jars. If you like, you may sprinkle with sherry occasionally or place a cut apple or orange inside the jar (to keep cookies moist). The longer the cookies stand, the better they taste. These cookies also freeze well in moisture-proof bags.
  • You can use other fruits or nuts - whatever you prefer.

  • Place the eggs in a stand mixer with the whisk attachment in place. Beat the eggs until foamy. Add the powdered sugar, a little at a time along with the vanilla extract and anise oil.Once all the powdered sugar has been added continue to beat the mixture for 10 minutes. Yes, that's 10 full minutes, do not reduce the time. The batter needs to be very loose and airy.
  • Combine the flour, baker's ammonia and salt in a bowl. Add HALF of the flour mixture to the wet mixture along with the lemon zest and beat it for a full 15 minutes, do not reduce the time (if the mixture is too dry for your whisk attachment, use the paddle attachment).Attach the paddle attachment, add the remaining flour and beat for another 5 minutes.The dough should be very soft but not wet and sticky. If the dough is too dry or stiff mix in a little more lightly beaten egg.Form the dough into a ball, flatten it to an inch-thick disk, wrap it in plastic wrap and refrigerate for at least an hour or overnight.
  • The next day roll out the cold dough to about 1/3 inch thick (1 cm) on a floured work surface.Use your molds or rolling pin to make the shapes and cut them out with sharp knife or pastry cutter. If you're using molds lightly dust them with flour to prevent the dough from sticking.Toast the whole anise seeds in a dry pan over medium-high heat until aromatic, being careful not to let them scorch. Place the anise seeds on a lined cookie sheet, spreading them out evenly.Lay the Springerle on top of the anise seeds on the baking sheet. Let them dry at room temperature for a full 24 hours, longer if you're in a place with high humidity. The outside of the Springerle should be dry.
  • After the cookies have dried for at least 24 hours, lay a damp towel on the counter and gently press the Springerle down onto it to very lightly and evenly moisten the bottoms. Return the Springerle back to the cookie sheet.In an oven preheated to 300 degrees F with the rack positioned in the middle, bake the cookies for 20-30 minutes. Do not let the cookies turn golden, they're supposed to stay very pale, basically the same color as when you put them in the oven.
