OVEN-BAKED BACON

Oven-Baked Bacon image

I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

Categories     Side Dish

Time 35m

Yield 6

Number Of Ingredients 1

1 (16 ounce) package bacon

Steps:

TWICE-BAKED POTATOES WITH BACON AND EGGS

Twice-Baked Potatoes with Bacon and Eggs image

Provided by Food Network Kitchen

Time 1h

Yield 4 servings

Number Of Ingredients 8

4 large russet potatoes
6 slices bacon
1/4 cup milk, warmed
1 cup shredded cheddar cheese (about 4 ounces)
2 scallions, thinly sliced, plus more for topping
1 tablespoon chopped fresh parsley
Kosher salt and freshly ground pepper
4 large eggs

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave, turning halfway through, until tender, about 16 minutes. Set aside until cool enough to handle.
  • Meanwhile, cook the bacon in a large nonstick skillet over medium heat, turning occasionally, until crisp, 9 to 11 minutes. Drain on paper towels, reserving the drippings. Roughly chop 4 slices and break the other 2 slices in half; set aside.
  • Slice off the top 1/4 inch of the potatoes lengthwise. Scoop the flesh from 3 potatoes into a medium bowl, leaving a 1/4-inch-thick shell. Repeat with the remaining potato but discard the flesh. Add 2 tablespoons of the reserved bacon drippings and the warmed milk to the bowl and mash with a potato masher or fork until smooth. Stir in the cheese, scallions, parsley, chopped bacon, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Season the inside of the potato skins with salt and pepper. Divide the filling among the skins, then press the back of a spoon down the center of the filling to create a long, deep well. Brush the outside of the skins with the remaining bacon drippings and transfer to the baking sheet.
  • One at a time, crack an egg into a ramekin or teacup, then carefully pour into each potato (it's OK if some of the egg white overflows). Transfer to the oven and bake until the whites are set, 20 to 25 minutes. Season with salt and pepper and top with more scallions and the halved bacon strips.

BAKED BEANS WITH BAKED BACON

Baked Beans With Baked Bacon image

This combines Recipe #187790 and Recipe #29709, with tweaks (like doubling the bacon). Made for July 4th party. It tastes so good, with a big wallop of flavor, I don't feel guilty about starting with Bush's Homestyle Baked Beans.

1 lb applewood-smoked bacon
2 (28 ounce) cans brown sugar baked beans (Bush's Homestyle)

BAKED BACON

Baked Bacon image

Bacon acquires a crunching coat with wonderful zipped-up flavor. When I started making this more than 40 years ago, egg substitute was not readily available. Now I use that instead of egg yolk, which will work, too. The recipe came from a newspaper years ago and is yellow with age. I make this often.....for breakfast, brunch or a snack!

Provided by NoSpringChicken

Categories     Brunch

Time 30m

Yield 4-5 serving(s)

Number Of Ingredients 5

3 tablespoons egg substitute or 1 egg yolk, from a large egg (use egg white for another use or discard)
2 tablespoons Worcestershire sauce
1/8 teaspoon dry mustard
8 -10 slices bacon, sliced thick
2/3 cup fine cracker crumb

Steps:

  • Preheat oven to 350 degrees.
  • In shallow bowl, whisk together the egg substitute or egg yolk, Worcestershire sauce and dry mustard.
  • Dip bacon slices in egg mixture, then in cracker crumbs, patting to coat each side.
  • Place on rack in shallow baking pan.
  • Bake in preheated oven for 15-20 minutes or until bacon is crisp and browned.

BAKED BACON (OVEN FRIED BACON)

Baked Bacon (Oven Fried Bacon) image

Serves 100; allow 3 slices per serving. Reduce bacon by 6 lbs. for 2 slices per person. I used bacon I got over the meat counter in the store, so it was thicker. There were 12 slices per pound, so ask your butcher to weigh a pound and then count the slices. That way you'll have the correct amount. The bread is only here because I need more then one ingredient to post this. I like to fix ours this way when we have BLT's. Then all the bacon is still warm when we sit down to eat.

Provided by Charlotte J

Categories     Pork

Time 30m

Yield 100 serving(s)

Number Of Ingredients 2

18 lbs thick sliced bacon
1 teaspoon oil (optional)

Steps:

  • Oil not needed, only for a second ingredient so it would post.
  • Arrange slices in rows, across pans with fat edges slightly overlapping lean edges.
  • Bake 375 degrees without turning 20-25 minutes (depending on thickness) until bacon is slightly crisp.
  • I have been draining the grease and flipping the bacon, then back in the oven for 5 minutes or so.
  • Watch closely.
  • DO NOT OVERCOOK.
  • Drain or skim off excess fat at needed.
  • Drain thoroughly on paper towels.
  • For those with a convection oven use 325 degrees 20-25 minutes.
  • The longer you bake after 20 minutes the greater the risk of producing a dry, burnt piece of bacon.
