EASY CINNAMON BAKED APPLES
Easy Cinnamon Baked Apples requiring simple ingredients and 1 bowl, plus naturally sweetened! The perfect grain- and gluten-free plant-based dessert for the holidays and beyond!

Steps:
- Preheat oven to 350 degrees F (176 C) and set out a 9x13-inch (or similar size) baking dish.
- Peel and core apples, quarter, and use a paring knife to thinly slice lengthwise (see photo). The thinner the better! Just try to be consistent so they cook evenly.
- Add to baking dish and top with lemon juice, coconut oil (optional), coconut sugar, cinnamon, ginger, nutmeg, cornstarch (or arrowroot), apple juice (or water), and a healthy pinch of salt. Toss to combine. Then loosely cover with foil.
- Bake for 45 minutes (covered). Then carefully remove foil and bake for an additional 10-15 minutes or until the apples are very fork tender (especially in the center of the dish) and slightly caramelized (see photo).
- Enjoy as is or with Coconut Whipped Cream or Vanilla Bean Coconut Ice Cream! Best when fresh, though leftovers keep covered in the refrigerator up to 3-4 days or in the freezer up to 1 month. Reheat in the microwave or in a 350-degree F (176 C) oven (covered) until warmed through. Add a bit of water if the "caramel" sauce is too thick.

BAKED APPLES WITH PRUNES, CINNAMON & GINGER

Steps:
- Heat oven to 200C/fan 180C/gas 6. Using a sharp knife, score a line around the equator of each apple. Put them into a baking dish with a small splash of water in the bottom.
- In a bowl, combine the ginger, cinnamon, prunes and sugar. Stuff the mixture into the apples so that they are well packed. Top each with a knob of butter and bake for 35-40 mins, or until cooked through. To test, pierce with a sharp knife - it should slide straight through. The apples can be cooked up to a day ahead, then warmed through in the oven or microwave before eating.
- Remove from the oven and baste the apples with the liquid left in the dish. Serve hot or warm with the ice cream.

BAKED CRISP WITH FIVE SPICED APPLES, PEARS, DRUNKEN PRUNES, AND MASCARPONE CREAM

- In a small pot over low heat, add the prunes and wine. Bring to a simmer and then remove from the heat and let steep for 10 to 15 minutes.
- Plating: Remove the cobbler dishes from the oven and serve hot topped with mascarpone cream.
- In a medium bowl, combine the apples and pears with the lemon juice. Using another small bowl, mix together the sugar, cornstarch, five-spice powder, cinnamon, cloves, and ginger. Add the dry mixture to the apples and pears and toss until coated. Pour the prune and sugar mixture into the fruit and toss again.
- Coat the cobbler dishes with butter and generously fill with the fruit mixture (it will shrink down as it bakes). Top each serving with 1/4 cup oat crisp topping and bake in a preheated 350 degrees F oven for 30 to 45 minutes, until the fruit is tender and topping is golden and crunchy. In a small bowl, mix the mascarpone with the chopped lemon zest. Reserve in the fridge.
- In a food processor, combine the oats, butter, flour, and both sugars and blend just until crumbly. Be careful not to over-process, as the mixture will become pasty.
BAKED APPLES WITH PRUNES, ALMONDS, AND AMARETTO
For an easy make-ahead dessert recipe that's also a showstopper, look no further. Pouring the cream over at the table adds a dramatic touch.

- Preheat oven to 300°F. Toss granulated sugar, 1/2 cup almonds, and 1 Tbsp. butter in a bowl. Spread out on a rimmed baking sheet; bake, tossing once or twice, until nuts are golden brown and sugar is caramelized, 10-12 minutes. Let cool.
- Process prunes, 3 Tbsp. amaretto, 2 Tbsp. brown sugar, 4 Tbsp. butter, a pinch of salt, and remaining 1/2 cup almonds in a food processor until nuts are ground and mixture forms a coarse paste. Transfer to a disposable piping bag or resealable plastic bag.
- Using a paring knife, cut a line around equators of apples, just scoring the skin but not cutting down into the flesh (this will prevent them from bursting during baking). Place each apple on individual squares of parchment paper large enough to form a pouch around apple.
- Snip a 1" hole in pastry bag or one corner of plastic bag and pipe prune mixture into apple cavities to fill. Drizzle with remaining 3 Tbsp. butter, then sprinkle with remaining 2 Tbsp. brown sugar and lightly drizzle with amaretto.
- Gather up parchment paper around each apple and tie tightly closed with kitchen twine. Place parcels on a rimmed baking sheet and bake until apples give no resistance when a skewer is poked into flesh through parchment paper, 35-45 minutes for Macintosh or 50-65 minutes for firmer apples. Let cool slightly, then remove kitchen twine.
- To serve, top apples with caramelized almonds and drizzle with cream.
- Do Ahead
- Apples can be assembled in their parcels 1 day ahead; chill. Apples can be baked 2 hours ahead. Let sit at room temperature. Reheat in a 200°F oven just before serving.

- Preheat oven to 375ºF. Coat a casserole dish (big enough to hold 2 apples) with nonstick cooking spray.
- Peel apples halfway down from stem end. Core apples without cutting through the bottom.
- Place in casserole.
- Mix ginger and butter in small bowl. Spoon half of the mixture into each apple.
- Stir all remaining ingredients in small saucepan over medium heat until sugar dissolves and syrup boils.
- Pour over apples.
- Bake 30-40 minutes.
- Serve with whipped cream, if desired.
- NOTE: May be covered loosely with plastic wrap and done in microwave (on high about 6 minutes) and then remove plastic wrap and put apples under preheated broiler for about 2 minutes.

- Core the apples and pare a 1-inch strip of skin from around the middle of each to prevent splitting.
- Place the apples in two 10-oz custard cups.
- Pack the raisins into the apples.
- Mix the honey and cinnamon, pour over the raisins and into the apples.
- Top with butter.
- Cover tightly and microwave on high (100%) until tender when pierced with a fork, 3 to 4 minutes. If you prefer, they can also be baked at 375°F for 30 minutes.
- Serve warm with cream, if desired.
