Steps:
- Heat oil in heavy medium skillet over medium heat. Add garlic; stir 30 seconds. Add next 4 ingredients; bring to simmer. Remove from heat. Season mojo sauce to taste with coarse salt and pepper.
- Arrange buns on plates. Top each with lettuce, grilled hot dog, avocado, mojo sauce, and pineapple. Serve with remaining mojo.

- Relish: Preheat oven to 400 degrees. place each head of garlic,cut top side up, in center of square of foil; drizzle each with 1 teaspoon oil.
- Enclose garlic in foil. Place packets on oven rack; roast until garlic is tender, about 45 minutes. Open packets; cool 15 minutes.
- Hot Dogs: Arrange buns on plates. Top each with grilled hot dog, then cheese, garlic, relish, and a drizzle of vinegar.

- In a large saucepan, combine the yucca with enough water to cover by at least 2 inches and add the salt.
- Bring the water to a boil over medium-high heat.
- Reduce the heat to low, cover and simmer gently for 30 minutes, until the yucca is fork-tender but still intact.
- Drain the yucca in a colander.
- Heat the olive oil in a large skillet over medium heat.
- Add the yucca and stir occasionally for 5 minutes, until slightly browned.
- Add the garlic and lemon juice and toss to coat the vegetables evenly.
- Cook for 2 minutes, just to release the aroma of the garlic, and add the cilantro and bell pepper julienne.
- Toss again just to mix and transfer to a warm serving platter.
