Here's what you need: bagel, eggs, cheddar cheese, bacon, green onion, milk

1 bagel
2 eggs
2 tablespoons cheddar cheese
2 strips bacon, chopped
1 tablespoon green onion
1 tablespoon milk

Steps:

  • Preheat oven to 375°F (190°C).
  • In a small bowl, mix cheese, bacon, and green onion.
  • In a small bowl, whip 2 eggs with milk.
  • Carefully hollow out 1 bagel with a small silver spoon. Place both bagel halves on a baking sheet.
  • Fill both bagel halves with cheese and egg mixtures. Bake in the oven for 25 mins, or until the egg is cooked.
  • Enjoy!

The original Baked Egg Boats! Delicious, fluffy quiche filling baked into a hollowed out baguette! It's simple, versatile breakfast perfection that can be taken on the go!

2 sourdough demi baguettes ((each about 12"x 2.5" in size))
6 eggs
⅓ cup heavy cream
2 ounces finely diced pancetta
4 ounces grated gruyere cheese (divided)
2 thinly sliced green onions
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Cut a deep "V" through the tops of each baguette until about a ½ inch to the bottom and remove top. Un-stuff demi baguettes as much as possible, while keeping the shell of the baguettes intact. It's very important not to puncture through the crust while slicing the tops off and while un-stuffing. Set hollowed baguettes aside and discard the tops and removed stuffing.
  • Sprinkle about tablespoon of shredded cheese into the bottom of each hollowed baguette.
  • Whisk together eggs and cream, then stir in the remaining ingredients. Lightly season with salt and pepper.
  • Place baguettes onto a baking sheet and fill each with half the egg mixture. (the egg and cream will pour out faster than the filling "bits" so it's best to switch off pouring into each baguette to ensure each one get equal parts of everything in the egg mixture)
  • Transfer baking sheet to oven and bake for 35 to 30 minutes or until golden brown, puffed and eggs have set.
  • Remove baked egg boats from oven and cool for about 5 minutes. Cut each baguette into pieces and serve.

1 tablespoon butter (, softened to room temperature)
2 large eggs
1 tablespoon whole milk
1/8 teaspoon salt
1/8 teaspoon pepper
pinch of cayenne pepper
2 tablespoons bacon bits
1/4 cup grated sharp cheddar cheese
2 teaspoons diced fresh chives
1 large bagel (, split in half)
1 tablespoon butter (, softened to room temperature)
2 large eggs
1 tablespoon whole milk
1/8 teaspoon salt
1/8 teaspoon pepper
pinch of cayenne pepper
3 tablespoons salsa verde
1/4 cup grated Monterey Jack cheese
2 teaspoons diced fresh cilantro

Steps:

  • Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Hollow out each bagel half, being very careful not to tear into the center hole or through the bottom (or the eggs will leak out.) Discard excess bread or save for another use. Spread some of the butter on the inside of each bagel half. Transfer all 4 bagel halves to the prepared baking sheet.
  • In a mixing bowl, whisk together the eggs, milk, salt, pepper, and cayenne.
  • For two bagel halves, evenly divide the bacon bits, cheese, and chives. Then pour in the egg mixture.
  • REPEAT this process with the other two bagel halves, using the salsa, Monterey Jack cheese, and cilantro.
  • Bake for about 20 minutes or until eggs are cooked through and set and the bagel is toasted and golden around the edge.

2 oval sandwich rolls
4 eggs
3 tablespoons whole milk
1 (4 ounce) can chopped green chile peppers
1 cup shredded sharp Cheddar cheese
½ cup shredded pepper Jack cheese
½ teaspoon smoked paprika
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
  • Make a V-shaped cut in each roll, leaving the ends intact. Lift out V-shaped wedge. Hollow out rolls gently to make shallow bread bowls, being careful not to cut through the bottom or sides. Place bread bowls on the prepared baking sheet.
  • Whisk eggs in a bowl. Add milk; whisk until well blended. Stir in green chile peppers, Cheddar cheese, pepper Jack cheese, paprika, and salt. Pour mixture slowly into the prepared rolls, spreading evenly with a spoon.
  • Bake in the preheated oven until egg mixture is completely set and cheese is lightly browned, about 30 minutes. Cool for 3 minutes before serving.

1 large egg
1 bagel, split
2 tablespoons ketchup, or to taste
⅛ teaspoon chile-lime seasoning (such as Tajin®), or more to taste
salt and ground black pepper to taste

Steps:

  • Crack egg into a small, nonstick skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
  • Meanwhile, toast bagel.
  • Spread ketchup on both sides of the toasted bagel. Add fried egg to the lower half, season with chile-lime seasoning, salt, and pepper, and add top half.
