SPICY PORK BAGUETTE BITES
Here's an interesting twist on mini cocktail sandwiches. Lime mayonnaise provides a cool counterpoint to the nicely spiced pork, and toasted baguette slices contribute the crunch.

- In a small bowl, combine the first seven ingredients; rub over tenderloin. Place in a large resealable plastic bag; seal and refrigerate overnight. , Place tenderloin on a rack in a foil-lined shallow roasting pan. Bake, uncovered, at 425° for 20-30 minutes or until a thermometer reads 145°. Let stand for 5 minutes before slicing. , Meanwhile, in a small bowl, combine the mayonnaise, lime juice and zest. Thinly slice pork; serve on toasted bread with a dollop of lime mayonnaise. Sprinkle with additional lime zest if desired.

SPICED PORK PATTY BAGUETTE

- Heat half the oil in a frying pan and add the sliced onions, the pepper and some seasoning. Cook on a low heat for 15 mins until the pepper is soft and the onions are caramelised.
- Meanwhile, put the chilli flakes, garlic, fennel, mince and grated onion in a bowl. Whizz the bread ends into breadcrumbs and add those, too. Season and mix everything thoroughly. Heat a griddle pan and shape the meat mixture into 12 patties. Rub the patties with the remaining oil and griddle for 3-4 mins each side, or until cooked through.
- Stir the ketchup into the onion mix, heat through, then spoon onto the baguette bottoms. Lay 3 patties on each, scatter with some lamb's lettuce and top with the other half of baguette.

SPICED PORK AND CABBAGE

- Preheat the oven to 425 degrees F. Combine the rice, raisins and 2 cups water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook until the rice is tender and the water is absorbed, about 18 minutes. Remove from the heat and let stand, covered, until ready to serve.
- Meanwhile, toss the cabbage, tomatoes and garlic with 1 tablespoon olive oil, 1 teaspoon curry powder and 3/4 teaspoon salt on a rimmed baking sheet. Spread in a single layer, leaving some room in the middle for the pork.
- Rub the pork with 1/2 teaspoon salt and the remaining 1 teaspoon curry powder. Heat the remaining 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add the pork and brown on all sides, about 5 minutes total. Add the pork to the baking sheet with the cabbage, transfer to the oven and roast until the cabbage is tender and a thermometer inserted into the center of the pork registers 145 degrees F, 25 to 30 minutes. Transfer the pork to a cutting board and let rest 2 minutes, then slice. Serve with the vegetables and rice. Season with pepper.

- Marinate the minced pork with fish sauce and chili paste. Add the turmeric powder. Add chopped the Kaffir lime leaves and basil leaves.

- Whisk mayonnaise and lime juice in large bowl. Season with salt and pepper. Cover; chill. Puree green onions and next 3 ingredients in processor unitl smooth. Add mushrooms; process until finely chopped. Transfer to large bowl. Mix in pork and next 3 ingredients. Divide into 6 equal patties.
- Heat oil in heavy large skillet over medium heat. Fry burgers until brown and cooked through, about five minutes per side. Spread 1 tablespoon lime mayonnaise on bottom of each bun. Place burger atp mayonnaise. Add cabbage to remaining myonnaise in bowl; toss to coat. Top burgers with cabbage mistsure, dividing equally. Place buns tops on cabbage.

These are so easy to put together. Make them as spicy as you like, we used a very hot chili, and hot curry paste, but you could tone it down if you wanted. Make them into 12 little patties for appetizers, or 4 large for dinner (cook longer). Serve with a thai dipping sauce, or a cucumber raita.

- Mix all ingredients, except the oil, in a large bowl and chill for 30 minutes.
- Divide the mixture evenly into 12 portions and shape each one into a flat round pattie.
- Heat the oil (enough to cover the bottom of the non-stick frying pan) over moderate heat for 3-4 minutes on each side, or until cooked through.
