Provided by Michael Chiarello : Food Network

Categories     appetizer

Time 40m

Yield 8 servings

Number Of Ingredients 6

Unsalted butter, for baking dish
1 large bunch asparagus, about 1 1/2 pounds, trimmed to even lengths and blanched for 4 minutes in boiling, salted water
Gray salt and freshly ground pepper
Seasoned bread crumbs, recipe follows
8 thin slices prosciutto
2 tablespoons extra-virgin olive oil

  • 1/4 cup fine dried bread crumbs
  • Pinch gray salt
  • Freshly ground pepper
  • 1 tablespoon finely chopped fresh parsley leaves
  • 1 teaspoon freshly grated lemon zest
  • 1 tablespoon freshly grated Parmesan
  • To make the seasoned bread crumbs, heat the olive oil in a small skillet over medium-high heat until hot. Tilt the pan and then add the minced garlic and saute briefly until pale gold. Add the bread crumbs, season with salt and pepper, and lower the heat to medium. Cook, stirring occasionally, until the bread crumbs are toasted, about 3 minutes. Pour into a small bowl and add the parsley, lemon zest, and Parmesan. Toss well. (The crumbs keep, tightly sealed and refrigerated, for several days.)

BACON WRAPPED DELIGHTS

Bacon Wrapped Delights image

You can wrap almost anything in bacon and it'll taste great. Here is a recipe that works great as appetizers or as hors d'oeuvres. This dish can be served plain or accompanied with a hollandaise sauce or orange ponzu sauce.

Provided by The Sushi Guy

Categories     Meat and Poultry Recipes     Pork     Bacon     Appetizers

Time 40m

Yield 6

Number Of Ingredients 4

12 spears white asparagus
4 ounces enoki mushrooms
4 ounces shiitake mushrooms, stemmed and sliced 1/4-inch thick
24 slices bacon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Bring a pot of water to a boil. Blanch the asparagus until it is barely cooked and still crisp, 2 to 4 minutes. When done, plunge the asparagus into ice water to stop the cooking. When cool, trim the asparagus to 8-inch lengths. Wrap a bundle of 6 asparagus spears with six strips of bacon, side by side, securing each slice with a toothpick. The bacon should be wrapped around twice so that there are two layers.
  • Trim the enoki mushrooms, and separate into 12 pieces. Stuff each enoki piece with four pieces of shiitake. Wrap each bundle with a slice of bacon, wrapping around twice, and secure with a toothpick. Place the bundles on a wire rack placed over a baking sheet.
  • Roast in preheated oven for 6 minutes, then flip the bundles over, and cook for another 4 to 6 minutes, until the bacon is brown and crisp.
  • To serve, remove all 24 toothpicks, and slice the asparagus bundles between the bacon. Drain on paper towels for a moment before serving.

BACON WRAPPED GARLIC PARMESAN ASPARAGUS

Bacon Wrapped Garlic Parmesan Asparagus image

Make and share this Bacon Wrapped Garlic Parmesan Asparagus recipe from Food.com.

Provided by piranhabriana

Categories     Vegetable

Time 40m

Yield 6 serving(s)

Number Of Ingredients 7

6 slices thick bacon
2 tablespoons olive oil
2 tablespoons parmesan cheese
1/2 tablespoon lemon juice
1 bunch asparagus (approximately 24-30 stalks)
3 minced garlic cloves
freshly ground salt and pepper, to taste

Steps:

  • On a baking sheet covered in foil, put 6 slices of bacon. Put sheet in cold oven, then turn on preheat to 400. Allow bacon to slowly cook for about 10-12 minutes. It should still be rather rare but partially cooked. Take it out and put it aside. Important: KEEP THE FOIL, do not throw it away - see below.
  • Meanwhile, put the other ingredients including asparagus into a gallon size ziplock bag and shake to coat thoroughly.
  • Wrap 4-5 stalks of asparagus about halfway down with the bacon. Place seamside down on the same foil and sheet you cooked the bacon on (right on the bacon grease spots). Cook for 10-20 minutes at 400 degrees, depending on how tender you want your asparagus (I like super tender at 20 minutes).

BACON-WRAPPED ASPARAGUS

Bacon-Wrapped Asparagus image

While asparagus season is here, keep this recipe near. It's a pretty and impressive side perfect for brunch or dinner-maybe alongside a steak! And it's a godsend when entertaining, since it's made with only five ingredients, a single pan and the simplest of techniques. The trick is wrapping bundles of asparagus, instead of individual stalks. As the bundles bake, the bacon drippings infuse the stalks with smoky flavor and transform this sometimes-woody vegetable into a silky smooth and meltingly tender masterpiece which, in our experience, no one can resist!

Provided by By Betty Crocker Kitchens

Categories     Side Dish

Time 55m

Yield 8

Number Of Ingredients 5

2 tablespoons butter, melted
1/4 teaspoon crushed red pepper flakes
1 lb fresh asparagus spears, trimmed
8 slices bacon
1 lemon, cut in wedges

Steps:

  • Heat oven to 425°F. Line 18x13-inch rimmed pan with foil. Place large rack in pan; spray rack and foil with cooking spray.
  • In large shallow bowl or pie plate, mix melted butter and pepper flakes. Add asparagus; toss thoroughly to coat. Divide asparagus evenly into 8 bundles. Wrap each bundle in one slice of bacon. Do not overlap the bacon. If desired, secure each bundle with 2 toothpicks; place toothpick-side down on rack. Drizzle with any remaining butter mixture.
  • Bake 30 to 36 minutes, turning once, until asparagus is tender and bacon is cooked through. Serve with lemon wedges.
