Sweet, Savory and a PERFECT Bacon Jam Recipe to have on hand for guests! Who doesn't love the great smoky taste of bacon with sweet onions, a dash of bourbon and a splash of cola?

Number Of Ingredients 13

1 ½ lb bacon (cut into 1 inch pieces)
2 tsp butter
4 Large Sweet Onions
1 tsp salt
½ Cup Brown Sugar (packed)
¼ Cup Sherry Vinegar
¼ Cup Cola
2 Tbs bourbon
1 ½ tsp fresh thyme (divided)
1 tsp ground black pepper
¼ tsp cayenne pepper
2 tsp balsamic vinegar
2 tsp extra virgin olive oil

Steps:

  • Heat a heavy bottomed stock pot over medium heat on the stove top until warm. Add the bacon all at once and stir frequently. Cook until the bacon is crispy and until all of the liquid in the pan is foamy and bubbling (see video if you aren't sure what this means).
  • Remove the bacon from the pan to a paper towel covered plate and set aside.
  • Pour the bacon grease into a metal container or shatter proof glass container and set aside.
  • Add two tablespoons of the bacon grease and the 2 tsp of butter to the stock pot and set it back on the stove. Reduce the heat to medium low. Add the onions all at once and add 1 tsp of salt.
  • Cook on medium low until the onions begin to look translucent (this will take about 10 minutes).
  • While the onions are cooking, chop bacon up into small bits and set aside.
  • When the onions appear translucent, stir in brown sugar, sherry vinegar, the cola, the bourgon, 1 tsp of thyme leaves, black pepper and cayenne pepper into the onions. Add the chopped bacon bits into the onion mix and continue to cook over medium low heat until a dark brown color results and the mixture is as thick as jam. This takes at least another 10 minutes but depending on the water content of the onions and other products, could take up to another 25 minutes.
  • Remove from the heat, stir in the remaining thyme and add the balsamic and olive oil, stir well. Serve warm.

1 lb bacon, thick-cut, cut into 1in (2 1/2 cm) pieces
1 large yellow onion, finely chopped
4 cloves garlic, minced
⅓ cup apple cider vinegar
½ cup dark brown sugar, packed
½ cup maple syrup
½ teaspoon cayenne
½ teaspoon ground cumin
2 teaspoons kosher salt
1 ½ teaspoons black pepper

Steps:

  • Add the bacon to a cold large skillet. Turn the heat to medium and cook the bacon until crispy, 18-22 minutes. Using a slotted spoon, transfer the cooked bacon to a paper towel-lined plate to drain, leaving the rendered bacon grease in the pan.
  • Reduce the heat to low. Add the onion and garlic to the pan with the bacon fat. Slowly cook the onions and garlic, stirring occasionally, until completely softened and dark golden brown, 70-80 minutes.
  • Add the apple cider vinegar to the pan and cook, stirring frequently, until the liquid is reduced by half, about 10 minutes. Add the brown sugar, maple syrup, cayenne, cumin, salt, pepper and stir to incorporate. Return the cooked bacon to the pan. Continue to stir until a jam-like consistency is reached, another 5 minutes.
  • Let cool for 5-10 minutes, then transfer the mixture to a food processor and pulse until mostly smooth with a bit of texture, similar to pesto. Transfer to a glass bowl to cool completely, skimming any excess fat that rises to the top.
  • Store the jam in an airtight container in the refrigerator for up to 4 weeks. Warm before serving, then use on toast, mac 'n' cheese, and more!

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Using your hands or a pastry cutter, work the butter into the dry ingredients until the butter breaks down to pea-sized pieces.
  • Add the milk and fold with a rubber spatula until fully incorporated and the dough comes together in a ball.
  • Scoop the dough into 12 portions onto the prepared baking sheet. Top each biscuit with cheddar cheese.
  • Bake for about 20 minutes, or until the tops are golden brown.

2 pounds bacon strips, cut into 1/2-inch pieces
2 large Vidalia onions, chopped
4 garlic cloves, minced
2 cups strong brewed coffee
1 cup cider vinegar
1 cup unsweetened pineapple juice
1/2 cup Nutella
1/4 cup crushed pineapple, drained
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon pepper
1/3 cup peach nectar

Steps:

  • Rinse four 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly. , In a 6-qt. stockpot, cook bacon in batches over medium heat until it starts to brown, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 3 tablespoons in pan. , Add onions to drippings; cook and stir over medium heat 5-6 minutes or until tender. Add garlic; cook 1 minute longer. Return bacon to pan. Stir in coffee, vinegar, pineapple juice, Nutella, pineapple, brown sugar, cinnamon and pepper; bring to a boil. Reduce heat; simmer, uncovered, 45 minutes, stirring occasionally. Cool slightly. Transfer to a blender in batches; cover and pulse until chopped., Return mixture to pan; bring to a boil. Simmer, uncovered, 15 minutes longer, stirring occasionally. Add peach nectar; simmer, uncovered, 20-30 minutes longer or until jam is thickened., Cool slightly. Store in airtight containers in the refrigerator up to 2 weeks.

I heard about bacon jam on tv and searched for a recipe since none was posted here. I found this on babble.com. This was used as a hamburger topping though you could come up with more ideas. It's really quite tasty and not too hard to make.

16 ounces bacon
1 small onion, chopped fine
4 garlic cloves, chopped fine
1/2 cup brown sugar, packed
1/2 cup coffee (optional cola or beer)
1/4 cup maple syrup (optional honey)
1 tablespoon balsamic vinegar

Steps:

  • Chop the bacon and cook until crisp.
  • Remove bacon from the pot, drain on paper towels.
  • Using a small ammount of the drippings saute onion and garlic 5 minutes until soft and golden.
  • Return bacon to the pot and add remaining ingredients.
  • Cook on medium heat about 1 half hour or until thickened to a jam like consistency.
  • You can let it cool a bit and pulse in a food processor a couple of times for a finer texture.
  • Store refrigerated for 1-2 weeks.

500g smoked bacon lardons
1 large white onion , finely sliced
2 garlic cloves , crushed
85g light brown sugar
2 tbsp cider vinegar
1 tbsp bourbon whiskey
2 tbsp maple syrup
100ml freshly brewed strong black coffee

Steps:

  • Fry the bacon in a large non-stick pan for 5-10 mins mins until golden and crisp. Remove with a slotted spoon and transfer to a plate, leaving the fat in the pan.
  • Turn the heat to low and cook the onion in the bacon fat for 15-20 mins until soft and starting to brown. Stir in the garlic, sugar, cider vinegar, bourbon, maple syrup, coffee and the bacon.
  • Cook slowly for 25-30 mins, stirring occasionally until thick and syrupy. Turn off the heat, leave to cool for a few mins, then carefully tip everything into a food processor. Pulse briefly to chop into small pieces, then leave the mixture to cool before packing it into two sterilised jars. Will keep for up to one month in the fridge.

1 large shallot, minced
1/4 cup packed brown sugar
1 tablespoon honey
1 teaspoon crushed red pepper flakes
2 pounds sliced bacon, cooked and crumbled
2 cups beer, such as Heist Brewery Hive Five

Steps:

  • Start with a large saute pan over medium heat. Add the olive oil and shallots, and cook until the shallots are slightly translucent and give off a nice fragrance, about 3 minutes. Add the brown sugar, honey and crushed red pepper; stir until well mixed. Now add the crumbled bacon, and stir. Turn the heat down to low, add the beer, and bring to a simmer.
  • Cook, stirring occasionally, until the liquid has reduced by half and you have a shimmery, glossy mixture, about 2 hours.

2 sheets puff pastry, thawed
¼ cup fig jam
24 brie cheeses, rind removed
¼ cup crumbled bacon
1 large egg, beaten with 1 tablespoon water
fresh thyme, for garnish

Steps:

  • Preheat the oven to 400°F (200°C). Grease a mini muffin tin with nonstick spray.
  • On a lightly floured surface, roll out the sheets of puff pastry and cut into 24 2-inch squares. Place each pastry square in a muffin cup, pressing down so the pastry is flush with the bottom.
  • Fill each pastry cup with ½ teaspoon fig jam, 1 square of Brie, and ½ teaspoon bacon.
  • Brush the edges of the pastry cups with the egg wash.

¼ cup maple syrup
¼ cup water
3 tablespoons bourbon
½ teaspoon vanilla extract
⅛ teaspoon kosher salt

60 butter crackers
3 large eggs, beaten
1 cup all purpose flour
4 cups vegetable oil, for frying

  • Make the blueberry maple bourbon sauce: In a small saucepan, stir together the blueberry jam, maple syrup, and water. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes. Add the bourbon and continue simmering for 1-2 minutes, until the alcohol cooks off. Remove the pot from heat and stir in the vanilla, salt, and pepper. Set aside until ready to serve. If making ahead of time, cover and refrigerate for up to 1 month. Re-warm before serving.
  • Make the Brie sticks: Line a baking sheet with parchment paper.
  • Cut each Brie wheel into ½-inch-wide sticks. Transfer to the prepared baking sheet and refrigerate while you prepare the breading station.
  • Add the butter crackers to a food processor and process into fine, uniform crumbs. Transfer to a wide, shallow bowl.
  • Add the eggs and flour to 2 separate wide, shallow bowls.
  • Dredge each Brie stick in the flour to coat completely. Coat in the egg, ensuring there are no visible dry spots, then roll in the cracker crumbs to coat. Dip again in the eggs and cracker crumbs. Freeze the Brie sticks for at least 30 minutes, up to overnight.
  • Heat the vegetable oil in a wide, shallow pan over medium heat until the temperature reaches 375˚F (190˚C). Set a wire rack over a baking sheet.
  • Working in batches to avoid overcrowding the pan, fry the Brie sticks in the hot oil until golden brown, 1-2 minutes. Transfer to the wire rack and immediately sprinkle with salt.
  • Serve the Brie sticks hot with the warm blueberry maple bourbon sauce and bacon jam alongside for dipping.
