Sweet Potato and Apple Casserole image

This easy casserole is the perfect combination of sweet and savory. Great for the holidays!

4 sweet potatoes ((approx 2 ½ pounds) peeled and cut into 1-inch dice)
4 small apples ((or 3 large), peeled, cored and diced into 1-inch pieces)
½ cup unsalted butter (melted)
½ cup dark brown sugar
¼ cup maple syrup
2 teaspoons pumpkin pie spice
¼ cup pecans (chopped)
salt (to taste)

Steps:

  • Add the potatoes to a large pot and cover with water.
  • Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
  • Pour mixture over the apples and potatoes and stir to combine.
  • Add to the oven and bake for 25 minutes.
  • Remove from the oven and top with pecans.
  • Add back to the oven and cook for 5 minutes more to toast the pecans.

3 Golden Delicious apples, peeled, cut into 1/3-inch-thick wedges
1/4 cup fresh lemon juice
2/3 cup packed brown sugar
1/2 cup honey
6 tablespoons unsalted butter
1/4 cup bourbon
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
2/3 cup coarsely chopped pecans

Steps:

  • Heat oven to 400°F. Place sweet potatoes on cookie sheet; prick with fork. Roast 1 hour or until almost tender. Let stand 45 minutes or until cool. Peel; cut into 1/3-inch-thick slices.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, toss apples and lemon juice. Arrange potatoes and apples alternately in baking dish. Pour remaining lemon juice in bowl over potatoes and apples.
  • In 2-quart saucepan, stir together brown sugar, honey, butter, bourbon, cinnamon, ginger and salt. Heat to boiling over medium heat, stirring occasionally; boil 2 minutes or until slightly thickened. Pour glaze over potatoes and apples.
  • Roast uncovered 30 minutes. Spoon glaze from bottom of dish over potatoes and apples. Sprinkle with pecans. Roast 14 to 15 minutes longer or until apples are browned. Spoon glaze over top before serving.

6 sweet potatoes
6 large apples - peeled, cored and sliced
1 ¼ cups white sugar
¼ cup cornstarch
1 ¼ teaspoons salt
2 tablespoons ground cinnamon
2 teaspoons ground nutmeg
2 ½ cups water
1 tablespoon butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until just tender, 15 to 20 minutes. Drain and allow to steam dry for a minute or two. Peel and cut into 1/2-inch slices; layer the sweet potatoes and apples into a 9x13-inch baking dish.
  • Meanwhile, stir together the sugar, cornstarch, salt, cinnamon, and nutmeg in a saucepan. Stir in the water and butter and bring to a simmer over medium heat. Cook and stir until thickened and no longer cloudy, 5 to 10 minutes. Pour over the sweet potatoes.

3 1/2-4 lbs sweet potatoes, peeled and cut into 2 inch chunks
1 (20 ounce) can apple pie filling
2/3 cup golden raisin
3 tablespoons butter, cut up
1 1/2 teaspoons apple pie spice
1 cup coarsely chopped pecans
1/3 cup sugar
2 tablespoons butter

Steps:

  • Spray a 4 quart slow cooker lightly with non-stick cooking spray.
  • Add the sweet potatoes, apple pie filling, raisins, 3 tablespoons butter (cut up), and apple pie spice to the slow cooker; gently stir to mix.
  • Cover and cook on LOW for 6-8 hours.
  • In a large skillet, add the pecans, sugar, and 2 tablespoons butter.
  • Over medium heat, cook, stirring constantly, for 8-10 minutes or until sugar mixture that adheres to the nuts turns golden and starts to melt.
  • Pour nut mixture out onto a piece of foil; let cool completely.
  • Coarsely crush the nut mixture.
  • Serve potatoes topped with nuts.

I've looked at a number of sweet potato kugel recipes, and experimented with this one a few times until I was satisfied with it. The trick is to bake the kugel long enough so that the sweet potato softens properly without the top drying out and browning too much. I cover the kugel during the first 45 minutes of baking to prevent this. After you uncover it, it's important to baste the top every 5 to 10 minutes with melted butter.

2 large sweet potatoes (1 3/4 to 2 pounds total), peeled and grated
2 slightly tart apples, like Gala or Braeburn, peeled, cored and grated
1 tablespoon fresh lime juice
1 tablespoon mild honey or agave nectar
3 to 4 tablespoons melted unsalted butter, as needed

Steps:

  • Heat the oven to 375 degrees. Butter a 2-quart baking dish
  • In a large mixing bowl, beat the eggs with salt to taste (I suggest about 1/2 teaspoon). Add the grated sweet potatoes and the apples. Pour the lime juice over the grated apples and sweet potatoes, then stir everything together. Combine the honey and 2 tablespoons of the melted butter and stir together, then toss with the sweet potato mixture and combine well
  • Transfer the mixture to the prepared baking dish. Cover the dish tightly with foil and place in the oven. Bake 45 minutes. Remove the foil and brush the top of the kugel with melted butter. Return to the oven and bake for another 15 to 20 minutes or longer, brushing every 5 minutes with butter. The kugel is ready when the edges are browned, the top is browned in spots and the mixture is set. Remove from the heat and allow to cool for 10 to 15 minutes before serving

Steps:

  • Preheat the oven to 425 degrees. Scrub sweet potatoes and pierce in several places with a sharp knife. Pierce the apples in a few places. The hint of orange really adds some zest(no pun intended) to these everyday ingredients. If you prefer your apples crisp rather than tender, you can bake them for a little less time.
