Cranberries and pineapple, for garnish

Steps:

  • Stir all ingredients in a large pitcher or punch bowl.
  • Garnish with cranberries and pineapple slices, optional.
  • Serve as soon as you add the champagne. To make ahead: mix all but the champagne and add that at the last minute.

1 cup fresh cranberries
1 cup fresh mint leaves
2 (750 ml) bottles dry champagne
1½ cups white rum
1½ cups cranberry juice

  • Place lemon slices, cranberries, and mint leaves into a large bowl that's about ⅓ the size of the bowl you plan to use for your punch. Fill the bowl with water and freeze until it's party time, at least 2 hours.. Run warm water over the bottom of the bowl to release the giant ice cube; Place it flat-side up into your punch bowl. Pour champagne, rum, and cranberry juice into the bowl; stir.
