4 boneless pork chops, 1/2-inch thick
1 tablespoon butter
1 tablespoon olive oil
1 cup beer
2 tablespoons red wine vinegar
2 tablespoons stone ground mustard
2 tablespoons brown sugar
2 tablespoons finely chopped fresh rosemary

Steps:

  • Combine flour, salt, and pepper in a large resealable plastic bag. Add pork chops and shake well to coat thoroughly.
  • Melt butter in a large skillet over medium-high heat. Add olive oil and heat until sizzling. Add pork chops in a single layer. Saute until browned on one side, 1 1/2 to 2 minutes. Turn pork chops over and cook for an additional 1 1/2 to 2 minutes. Transfer pork chops to a plate.
  • Add beer, vinegar, mustard, brown sugar, and rosemary to the skillet and mix well. Bring to a boil over medium-high heat. Return pork chops to the skillet, cover, and reduce heat to medium-low. Simmer until pork chops are no longer pink in the center, 10 to 12 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Transfer pork chops to a plate. Increase heat to medium and boil pan juices in the skillet until thickened, whisking often, about 3 minutes. Top pork chops with sauce.

1-1/2 cups soft bread crumbs
3 teaspoons minced fresh parsley, divided
1 teaspoon minced fresh thyme
4 bone-in pork loin chops (7 ounces each)
1 teaspoon salt, divided
3/4 teaspoon pepper, divided
1/3 cup canola oil
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup heavy whipping cream
1/2 cup beef broth

Steps:

  • In a shallow bowl, whisk egg and milk. In another shallow bowl, combine the bread crumbs, 1 teaspoon parsley and thyme. Sprinkle pork chops with 1/2 teaspoon salt and 1/2 teaspoon pepper. Dip chops in egg mixture, then crumb mixture., In a large cast-iron or other ovenproof skillet over medium-high heat, cook pork chops in oil for 4 minutes on each side. Bake, uncovered, at 425° until a thermometer reads 145°, 10-15 minutes., Meanwhile, in second skillet, melt butter. Stir in flour and remaining salt and pepper until smooth; gradually stir in cream and broth. Bring to a boil; cook and stir until thickened, 2 minutes. salt & freshly ground black pepper
all-purpose flour
1 tablespoon unsalted butter
2 tablespoons vegetable oil
3 large onions, thinly sliced
3 garlic cloves, minced
8 fluid ounces Guinness stout (about) or 8 fluid ounces full-bodied dark beer (about)
8 fluid ounces chicken stock (about)
1 tablespoon coarse grain mustard (or more)
1 tablespoon chopped fresh parsley
1 1/2 teaspoons balsamic vinegar (or more)

Steps:

  • Season the pork with salt and pepper.
  • Dredge them in flour and shake off excess.
  • Melt the butter with 1 tablespoon oil in heavy large deep skillet over medium-high heat.
  • Add the pork in batches and brown well, about 6 minutes per side.
  • Transfer the pork to plate and set aside.
  • Dredge the onions in flour; shake off excess.
  • Heat the remaining 1 tablespoon of oil in the same skillet over medium heat.
  • Add the onions and garlic.
  • Season with salt.
  • Cover and cook for 5 minutes, stirring once.
  • Uncover and cook for 4 more minutes, stirring occasionally.
  • Add 2 fluid ounces of Guinness 6 fluid ounces of the stock and bring to a boil, scraping up any browned bits.
  • Return the pork to the skillet.
  • Spoon some of the onions over the pork.
  • Add enough additional Guinness and stock to bring liquid halfway up sides of pork.
  • Cover the skillet with foil, and then the lid.
  • Reduce the heat and simmer for 20 minutes.
  • Turn the pork over and cook until very tender, about 25 more minutes.
  • Transfer the pork and onions to a platter using a slotted spoon.
  • Degrease the pan juices.
  • Boil the juices until thickened slightly, about 10 minutes.
  • Whisk in 1 tablespoon of mustard.
  • Add chopped parsley and 1½ teaspoons of balsamic vinegar.
  • Taste and add more mustard or vinegar if desired.
  • Pour the gravy over the pork.
  • Garnish with parsley and serve.

1 jar (12 oz.) HEINZ HomeStyle Brown with Onions Gravy

Steps:

  • Sprinkle chops with thyme and pepper.
  • Cook and stir bacon and onions in large skillet on medium-high heat until bacon is crisp. Remove bacon mixture from skillet with slotted spoon; place in medium bowl.
  • Add chops to reserved drippings in skillet; cook 5 min. on each side or until chops are evenly browned on both sides. Meanwhile, stir gravy into bacon mixture.
  • Pour gravy mixture over chops; cover. Simmer on medium-low heat 15 min. or until chops are done (145ºF). Remove from heat. Let stand 3 min. before serving.

2 medium onions, sliced
1 teaspoon instant chicken bouillon granules
12 ounces beer (1 1/2 cups)
1/4 teaspoon crushed thyme leaves
1/3 cup cold water
3 tablespoons flour
salt and pepper

Steps:

  • Salt and pepper pork chops; sear over high heat until browned.
  • Place chops in crockpot; lay sliced onions over pork chops.
  • Dissolve chicken bouillon in beer; stir in thyme leaves; pour over pork chops.
  • Cover and cook on LOW heat setting for 8-10 hours.
  • For Gravy: Skim fat from cooking liquid; place cooking liquid in a saucepan.
  • In a jar or gravy shaker, combine cold water with flour.
  • Whisk into cooking liquid, stirring constantly until it comes to a boil; boil 1-2 minutes.
  • Serve over rice, noodles, or mashed potatoes.
