1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
2 cups shredded Swiss cheese
2 cups shredded sharp cheddar cheese
1 cup crumbled cooked bacon (about 12 strips), divided
1/2 cup chopped pecans, toasted, divided
1/2 cup finely chopped onion
1 jar (2 ounces) diced pimientos, drained
2 tablespoons sweet pickle relish
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced fresh parsley
1 tablespoon poppy seeds
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. Refrigerate, covered, at least 1 hour., In a small bowl, mix parsley, poppy seeds and remaining bacon and pecans. Spread half the parsley mixture on a large plate. Shape half the cheese mixture into a ball; roll in parsley mixture to coat evenly. Cover. Repeat. Refrigerate at least 1 hour. Serve with crackers.

3 cups Original Bisquick™ mix
1 lb uncooked lean (at least 80%) ground beef
4 cups shredded Cheddar cheese (16 oz)
12 slices bacon, crisply cooked and crumbled
1/2 cup grated Parmesan cheese
1/2 cup milk
1/4 cup dill pickle relish
Ketchup and mustard, if desired

Steps:

  • Heat oven to 350°F. Lightly grease bottom and sides of 15x10x1-inch pan.
  • In large bowl, stir together all ingredients except ketchup and mustard, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
  • Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with ketchup and mustard for dipping.
  • Make-Ahead Directions: Make as directed through step 2. Cover and refrigerate up to 12 hours. Uncover, and bake as directed in step 3.

⅓ cup sour cream
1 cup diced dill pickles
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
2 tablespoons dill pickle juice
3 green onions, chopped
1 teaspoon paprika
1 teaspoon dried dill
1 ½ cups Cheddar cheese-flavored pretzels
6 slices bacon, cooked and crumbled

Steps:

  • Combine cream cheese, sour cream, diced dill pickles, Cheddar cheese, Monterey Jack cheese, dill pickle juice, green onions, paprika, and dried dill in a large bowl. Stir until evenly combined. Form mixture into a ball. Cover and refrigerate for a minimum of 1 hour.
  • Just before serving, place pretzels in a food processor and pulse until bread crumb consistency. Combine pretzel crumbs and bacon on a flat plate.

8 ounces cream cheese, softened
1 cup cheddar cheese (shredded)
1 cup cheddar cheese (for outside of ball)
1/3 cup mayonnaise
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 cup onion, chopped (you can use green onion or whatever you have)
1 teaspoon parsley flakes
1/3 cup bacon, crumbled and cooked

Steps:

  • Mix all items together except the additional 1 cup of cheddar cheese that you will use to roll the ball inches.
  • With a spoon pull mixture toward middle of the bowl and try to form a ball.
  • Then cover and place in refrigerator until chilled and firm.
  • After it has chilled, it will be easier to work with.
  • Roll the cheese mixture into a ball and roll in additional cup of grated cheddar cheese.
  • Roll until all sides are coated and press the cheese into the ball.

Steps:

  • Place the softened cream cheese in a large bowl and stir in the pickle juice and garlic powder until smooth.
  • Stir in the chopped pickles, cheddar, and half of the crumbled bacon until well combined.
  • Use your hands to shape the mixture into a ball.
  • Pour the remaining crumbled bacon and the diced onion in a single layer on a large plate.

1/2 cup mayo
5 slices bacon (crumbled)
1 tbsp Scallions (white part only)
1/2 tsp Dill
1/2 tsp black pepper
1 cup sliced almonds

Steps:

  • Blend cream cheese and mayo together
  • Mix in the scallions, dill, pepper and bacon.
  • Spread out a piece of plastic wrap and spoon to mixture onto it and fold the plastic wrap around the mixture.
  • Form it into a ball.
  • Refrigerate for at least 1-2 hours.
  • Remove from wrap and roll in sliced almonds. I find it easiest to put the ball on a plate of almonds then turn it over to coat the other side. Then roll the sides.
  • Serve with crackers.

1 1/4 cups whole natural almonds
1 (8-ounce) package of cream cheese
1/2 cup real mayonnaise
3 crispy cooked bacon slices, crumbled
1/2 teaspoon dill weed
Salt and pepper
1 tablespoon chopped green onion
Sprigs, for garnish

Steps:

  • Preheat oven to 300 degrees F.
  • Place and spread all the almonds on a cookie sheet or in a shallow pan, pushing the almonds around until they turn color, about 20 minutes.
  • Mix together the cream cheese and the mayonnaise. Add the bacon, salt and pepper, dill, and onion. Chill overnight.
  • On a serving platter, make 2 pine cone shapes with the cheese. Begin to press the almonds at a slight angle into the cheese, starting at the narrow end of the pine cone shape.
  • Do this in rows, continuing to overlap rows until all the cheese is covered. Garnish with fake sprigs, or real ones, or with rosemary.
  • Serve at room temperature and spread on crackers.
