Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet.
- Bake in the preheated oven until bacon is crispy, about 15 minutes.

Steps:
- 1. Cook and drain ground meat. Set aside.
- 2. Wash jalapenos. Cut the stems off first then cut them lengthwise. Scrape all the seeds out. (You may want to wear gloves for this part.)
- 3. Line a cookie sheet with parchment. Lay out the jalapeno halves. Preheat oven to 375 degreed.
- 4. Mix together the cream cheese, garlic powder, onion powder, 4 oz shredded cheddar (reserve the other 4 oz for later), cooked hamburger meat, and Buffalo wing sauce.
- 5. Fill the jalapeno halves with the filling.
- 6. Cut the bacon in half.
- 7. Place a slice of bacon under a jalapeno half. Sprinkle a little cheese on top.
- 8. Wrap the bacon around the jalapeno and secure it with a toothpick. Repeat the process to all the jalapeno halves.
- 9. Bake in preheated oven for 35-40 minutes until the bacon gets crisp.
- 10. Remove peppers from the oven. Allow to cool slightly before handling.
- 11. ***Please make sure you wear gloves while handling the peppers***

- Cook the bacon in a nonstick skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Transfer to a paper towel-lined plate with a slotted spoon. Reserve 1 tablespoon of the drippings.
- Mix together the cream cheese, Cheddar, sour cream, milk, vinegar, jalapenos, bacon and reserved drippings in a medium bowl. Spread the mixture in a baking dish and bake until golden and bubbly, about 30 minutes. Sprinkle with the scallions before serving.

Steps:
- Devein jalapenos by scraping insides with a potatoe piller.
- Wash well.
- Stuff each jalapeno with approx 1 oz of cream cheese. (we buy the packets at our local wholesale supplier). They come with several in a package but each PACKET is one ounce and you can easily squeese it into the jalapenos this way). MUCH easier than using a spoon.
- Slice bacon in 1/2.
- Top the opening of each jalapeno with 1/2 slice of bacon and secure with a tooth pick.
- Cook on grill or open flame until done. We prefer the jalapeno to be black in some parts.

- Preheat oven to 350°. In a 6-qt. stockpot, cook macaroni according to package directions., Meanwhile, in a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk and mustard. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in jalapenos and 3 cups cheese until cheese is melted., Reserve 1/4 cup crumbled bacon; stir remaining bacon into sauce., Drain macaroni and return to pot; stir in cheese sauce. CREAM CHEESE STUFFED JALAPENOS WRAPPED IN BACON
Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

- Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
- In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
- Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
- Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
- Enjoy!

STUFFED BACON WRAPPED JALAPENOS

- 1. Slice jalapenos in half and dig out seeds and veins. (I use the tip of a carrot peeler)
- 2. Fill the "cup" of the jalapeno with cream cheese (you can add cheddar cheese to the cream cheese too if you prefer)
- 3. If you have long slices of bacon, cut them in half. Then wrap bacon all the way around the jalapeno.
- 4. Place wrapped jalapeno on a pan covered with tin foil and sprayed with non stick cooking stray. (If you have a wire rack, place it on top of the pan to keep the jalapenos out of the grease)
- 5. Bake @ 300-350 until bacon is fully done.

- Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F and add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F on the indirect side.
- Prep. Cut the tops off of the jalapeños. Remove the seeds and ribs from the interior of the jalapeños with a jalapeño corer. Or use the handle end of a small kitchen spoon to scrape the ribs and seeds from inside the jalapeños.
- Combine the cream cheese and cheddar cheese in a medium mixing bowl and blend well. Stuff the peppers with the cheese mixture.
- Cut the bacon slices in half crosswise. Wrap each one with 1/2 slice of bacon and secure the bacon with a toothpick.
