This Edible Cookie Dough Recipe is eggless and safe to eat raw! There's no flour, we use homemade oat flour instead, & is free of eggs! Edible cookie dough for the win!

1/2 cup unsalted butter (softened to room temperature (1/2 cup = 1 stick) )
1/3 cup granulated sugar
1/2 cup brown sugar (packed)
1 teaspoon vanilla extract
2 tablespoons milk (room temperature)
1 1/2 cup homemade oat flour (directions below (you'll need about 2 cups old fashioned oats))
1/2 teaspoon salt
2/3 cups chocolate chips

Steps:

  • Cream together softened butter, granulated sugar, brown sugar, vanilla, and milk until fluffy, about 60 seconds.
  • Beat in oat flour and salt.
  • Once combined, stir in chocolate chips.
  • Serve immediately or store in the fridge, covered, for later!

I tend to get cravings for chocolate chip cookie dough - yes, just the dough! - but don't want to make up an entire batch or eat the raw eggs. So, in all my searching for just an eggless dough recipe, I found one that I liked, scaled it down, and changed things just enough to make it work for me and my everlasting attempt to make junk food at least semi-healthy. Note: the "cooking time" is actually freezing time.

1 tablespoon butter (room temperature)
4 teaspoons brown sugar
4 teaspoons granulated sugar
2 teaspoons skim milk
1/4 teaspoon vanilla
3 tablespoons whole wheat flour
3 tablespoons semi-sweet chocolate chips

Steps:

  • In a small bowl (I used a cereal bowl), cream butter and sugars.
  • Blend in milk and vanilla.
  • Add flour and mix well.
  • Stir in chocolate chips.
  • Stick in freezer for about 10 minutes.
  • Eat up!

OR, cook via Option 2, Oven: Place a rack in the center of your oven and preheat to 350 degrees F. Spread the flour onto a parchment-lined baking sheet. Bake for 10 minutes. To check for doneness, gather the flour into a mound and insert an instant read thermometer into the center; it should register at least 160 degrees F. If it doesn’t, spread out the flour back out and continue baking, rechecking the temperature every 3 to 5 minutes. Via either method: Let the flour cool completely to room temperature, about 30 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, beat the peanut butter, butter, maple syrup, granulated sugar, vanilla, molasses, and salt on medium speed until the mixture is smooth and creamy, about 3 minutes.
