1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
⅓ cup vegetable oil
⅓ cup milk
1 egg
½ teaspoon almond extract
1 cup fresh pitted and quartered sweet cherries
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
  • Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
  • Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.
  • Bake muffins in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a wire rack to cool.

1 cup flour
3 tablespoons light brown sugar
2 tablespoons granulated sugar
1 teaspoon baking powder
1 pinch salt
6 tablespoons butter, melted
1 3/4 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1/2 cup canola oil
3/4 cup whole milk
1 teaspoon vanilla
1 1/2 cups pitted sweet cherries

Steps:

  • 1. Preheat oven to 375. Line muffin tins with liners or spray with cooking spray.
  • 2. Make the crumb topping: In medium bowl, combine all dry ingredients. Stir in butter then pinch mixture until it forms pea size chunks.
  • 3. Make the muffins: In a small bowl whisk the flour, baking powder and salt. In a large bowl, combine the sugar, eggs and oil and beat with a hand mixer until well combined. Beat in the milk and vanilla. Add the flour mix and beat on low speed until the batter is smooth. Stir in the cherries.
  • 4. Spoon the batter into muffin tins filling about 3/4 full. Sprinkle crumb topping on each muffin and bake for about 30 minutes until a toothpick inserted in center comes out with a few moist crumbs attached.
  • 5. Let cool for 10 minutes before removing from pan.

1/2 cup finely cut maraschino cherry
1 egg
1/4 cup milk
1/4 cup maraschino cherry juice
1/4 cup salad oil
1/3 cup mild flavored honey

Steps:

  • Sift together dry ingredients.
  • Drain cherries, reserving juice.
  • Preheat oven to 400.
  • Finely cut and measure 1/2 c cherries.
  • Beat egg slightly.
  • Add milk, cherry juice, salad oil, honey and cherries.
  • Make a well in center of flour mixture.
  • Pour in egg mixture all at once.
  • Stir quickly, just until dry ingredients are moistened.
  • Do not beat (batter will be lumpy).
  • Quickly spoon batter into 12 2 and 1/2 greased muffin cups.
  • Bake 12-15 minutes or until done.
  • Serve popping hot.

3/4 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon salt
2 large eggs
1 cup whole milk
1 3/4 sticks (14 tablespoons) unsalted butter, melted
1/3 cup almond paste, crumbled (about 3 ounces)
1 teaspoon pure vanilla extract
1/2 cup chopped candied lemon and/or orange peel
1/2 cup candied cherries, quartered
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Whisk the flour, sugar, baking powder, cinnamon, cardamom and salt in a medium bowl. Whisk the eggs, milk, 1 1/2 sticks melted butter, the almond paste and vanilla in a large bowl (it?s OK if the almond paste is still a little chunky). Add the flour mixture to the egg mixture and stir until combined. Stir in the candied citrus peel.
  • Divide the batter among the muffin cups, filling them three-quarters of the way. Top evenly with the candied cherries. Bake until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes. Let the muffins cool 5 minutes in the pan, then remove to a rack.
  • Warm the remaining 2 tablespoons melted butter in the microwave. Brush the muffins with the butter while still warm, then dust with confectioners' sugar. Let cool completely.

PINEAPPLE CHERRY MUFFINS

I experimented with different ingredients to make these muffins very tasty. I know you can't find Pure Pineapple Extract here, but I have a friend who lives in Hawaii and she sent me three bottles as her family makes it just for family and friends they also a specialty shop. But a friend in the lower 48 told me that I can find it in specialty shops for cooks. So that why I used the pure pineapple extract. I have also used Rum and coconut extracts they are very good to.

2/3 cup Splenda granular
2/3 cup sugar
1 (20 ounce) can crushed pineapple
1 (10 ounce) jar maraschino cherries, chopped
1 teaspoon pure vanilla extract
1 1/2 teaspoons pure pineapple extract
1 egg, beaten
1/4 cup margarine, melted

Steps:

  • Mix all dry ingredients in a bowl. Add the crushed pineapple, chopped cherries and the extracts. Add the beaten egg and melted margarine. Mix well. The batter will be very thick. Spray the muffin tins with a vegetable spray. Put the batter in the muffin tins. Sometimes I use 3/4 cup chopped pecans with 3/4 cup Splendor Brown Sugar substitute for a topping. Makes them even more yummy.
  • Bake at 400 degrees for 20 minutes.

1 egg
⅔ cup milk
1 (21 ounce) can cherry pie filling, divided
¼ cup all-purpose flour
¼ cup packed brown sugar
2 tablespoons melted butter
¼ tablespoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 12 cup muffin pan with paper baking cups.
  • Stir together the baking mix, white sugar, egg, and milk in a bowl just until combined. Stir in 1/2 of the cherry pie filling. Fill the lined muffin cups 2/3 full. Top each muffin with 3 cherries from the remaining cherry pie filling.
  • Mix flour, brown sugar, melted butter, and cinnamon together in a small bowl with a fork until crumbly. Sprinkle evenly over unbaked muffins.

1/2 cup sugar
2 teaspoons baking powder

1 egg
1/2 cup milk

1 jar (10 ounces) red maraschino cherries
3/4 cup miniature semisweet chocolate chips
1/2 cup chopped pecans
1 cup confectioners' sugar
Softened cream cheese, optional

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk and oil; stir into dry ingredients just until moistened. Drain cherries, reserving 2 tablespoons of juice for glaze (discard remaining juice or save for another use). I used to make these muffins a lot when I had fresh cherries on hand, and I kept bags of them in the freezer pre-measured for this recipe. These are not sweet eating cherries - these are baking cherries. The original recipe came from a flyer from the Cherry Marketing Institute.

2 1/2 cups frozen unsweetened tart red cherries, pitted,divided
1/2 cup sweet unsalted butter
1 cup sugar
2 eggs
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup half-and-half cream, whole milk or 1/2 cup light cream

Steps:

  • While cherries are still frozen, cut them into halves, then set aside to thaw and drain in a mesh colander over a bowl.
  • Cream butter and sugar using an electric mixer.
  • Add eggs, almond extract, and vanilla and beat well.
  • Crush 1/2 cup of the thawed cherries with a fork; add the mashed cherries to the batter.
  • Mix flour, baking powder, and salt in a separate bowl.
  • Fold half of the flour mixture into the butter mixture using a spatula; do not overmix.
