This is from my cookbook entitled "Recipes from the Old South" I used to make these to take to cookouts as an appetizer. It says to serve with any highly seasoned dip, but I never did. I have guessed at the number it makes. Hope you enjoy!

1 lb bacon
4 tablespoons chopped green peppers
3 tablespoons chopped fresh mushrooms
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon dry mustard
1 egg, beaten
1/2 cup milk
1/4 cup bacon drippings, saved from frying the bacon

Steps:

  • Preheat oven to 425 degrees.
  • Fry bacon until crisp.
  • Save the drippings.
  • Crumble the bacon into small pieces.
  • Combine bacon, green pepper and mushrooms.
  • Sift together the flour, dry mustard and baking powder.
  • Mix bacon and vegetables with the flour mixture.
  • Combine the egg, milk and bacon drippings.
  • Add this to the flour and vegetable mixture.
  • Stir mixture with fork until blended well.
  • Drop by teaspoonfuls onto a greased cookie sheet.
  • Bake for about 8 minutes.
  • Serve on wooden toothpicks with any highly seasoned dip.

4 slices thick-cut bacon
2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon chopped fresh chives
6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

1 (10 1/4 ounce) can pillsbury grands refrigerated southern style biscuits (5 biscuits) or 1 (10 1/4 ounce) can refrigerated buttermilk biscuits (5 biscuits)
1 1/3 ounces shredded monterey jack cheese (1/3 cup) or 1 1/3 ounces cheddar cheese (1/3 cup)
10 refrigerated or frozen cooked meatballs, thawed
1/4 cup butter, melted
2/3 cup finely crushed seasoned croutons
1 1/2 cups pasta sauce, heated

Steps:

  • Heat oven to 375ºF.
  • Line cookie sheet with parchment paper or spray with nonstick cooking spray.
  • Separate dough into 5 biscuits.
  • Split each biscuit to make 10 rounds.
  • Press out each biscuit half to form 3-inch round.
  • Sprinkle each biscuit round with cheese to within 1/2 inch of edge.
  • Top each with meatball.
  • Bring sides of dough over meatball; pinch edges to seal.
  • Brush rounded tops and sides of dough with butter; coat with croutons.
  • Place seam side down on paper-lined cookie sheet.
  • Bake at 375ºF for 10 to 15 minutes or until golden brown.
  • Place appetizer pick in each biscuit-wrapped meatball to form biscuit ball.
  • Serve with warm pasta sauce for dipping.

4 ¾ cups digestive biscuit, or substitute Graham Crackers
1 banana
1 can dulce de leche, or toffee
1 cup chocolate, for coating

Steps:

  • *"Toffee"/Dulce De Leche can be purchase already prepared - or can be made at home through a process of heating Sweetened Condensed Milk - Recipes/instructions can be found online.
  • Crush Digestive Biscuits in a large plastic bag.
  • Pour into a large bowl and add Banana and about half the can of Dulce De Leche.
  • Use a fork to mash and incorporate the banana and toffee into the biscuit crumbs. Add additional Toffee as needed - just enough to coat all the biscuit crumbs without it becoming too sticky.
  • Form the mixture into 1 inch (2 ½ cm) balls and freeze for 15 minutes until firm.
  • Microwave chocolate for 60 Seconds - stopping after 30 seconds to check and stir.
  • Remove balls from freezer and dip into the melted chocolate.
  • Set on wax paper and sprinkle with additional biscuit crumbs (optional).
  • Allow chocolate coating to harden (chill in fridge to speed up this process).
  • Drizzle with additional toffee just before serving.
  • Enjoy!

4 slices bacon, roughly chopped
2 cloves garlic, minced
9 large eggs, divided
¼ cup scallions, chopped
salt, to taste
pepper, to taste
6 yellow potatoes, peeled, grated, excess moisture squeezed out
¾ cup all-purpose flour
1 cup shredded cheddar cheese, divided
1 egg, beaten
fresh parsley, chopped, for garnish
ketchup, for serving

Steps:

  • In a large skillet over medium-high heat, cook the bacon until crispy, 4-6 minutes. Remove the bacon from the pan and drain on a paper towel-lined plate.
  • In the same pan, add the garlic. Cook over low heat for about 30 seconds, or until it starts to brown. In a medium bowl, beat 8 eggs and add to the pan, along with the scallions, salt, and pepper. Scramble the eggs until mostly set but still a little wet, about 3 minutes. Remove the pan from the heat.
  • Peel the potatoes and grate on the large holes of a box grater onto a clean kitchen towel set over a bowl. Wring out any excess liquid.
  • Transfer the shredded potatoes to a clean, large bowl and add the remaining egg, the flour, and ½ cup (50 g) cheddar cheese, and season with salt and pepper. Mix to combine.
  • Line a 4-inch (10 cm) diameter bowl with plastic wrap.
  • Place ½ cup (75 g) of the grated potato mixture in the bowl. Use the back of a spoon to smooth the potatoes against the sides of the bowl in an even layer, creating a divot in the center.
  • Fill the well with a bit of cheddar cheese, a spoonful of scrambled eggs, a bit of bacon, and top with another sprinkle of cheese.
  • Pick up the sides of the plastic wrap, twisting to create a sealed ball. Repeat with the remaining ingredients.
  • Chill the potato balls for 20 minutes.
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or foil and grease with nonstick cooking spray.
  • Unwrap the balls, place them on the prepared baking sheet, and brush with egg wash. Bake for 35-45 minutes, or until the potatoes are crispy and brown.
  • Sprinkle with parsley and serve with ketchup on the side.
