2 tablespoons Dijon mustard

1 4-pound whole chicken, cut into pieces (giblets, neck and backbone reserved for another use)
1/2 cup low-salt chicken broth
1 teaspoon lemon zest
1 tablespoon chopped fresh parsley leaves

Steps:

  • This recipe originally appeared on Everyday Italian. Episode: Dinner and a Movie.
  • Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag, seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.
  • Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.

2 teaspoons vegetable oil
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 clove garlic, minced (or more!)
4 (4 ounce) boneless skinless chicken breasts, pounded to 1/4 inch thickness
2 cups small mushrooms, halved,or quartered if using larger mushrooms
1/3 cup chicken broth or 1/3 cup white wine
1/4 teaspoon dried thyme leaves, crumbled

Steps:

  • In a nonstick skillet, heat 1 teaspoon of the oil.
  • In a bowl, mix 2 tablespoons of the vinegar, the mustard and garlic.
  • Add the chicken and coat both sides with the mixture.
  • Transfer the chicken and mixture to the skillet; saute until cooked through, about 3 minutes per side.
  • Transfer to a plate and keep warm.
  • In the skillet, heat the remaining teaspoon of oil.
  • Saute the mushrooms about a minute; add the broth/wine, thyme and remaining tablespoon of vinegar.
  • Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
  • Serve the chicken, topped with the mushrooms.

1/2 cup soft breadcrumbs

1 kg / 2 lb chicken thighs (5 pieces, bone in, skin on), or drumsticks or wings (any combination) (Note 1)
1/4 cup (65 ml) balsamic vinegar
2 1/2 tbsp / 50 ml soy sauce (, all purpose or light (not dark soy sauce))
1/4 cup (85 g / 65 ml) honey
1/4 cup (45g) brown sugar (, loosely packed (Note 2))
2 garlic cloves, minced ((or 1 1/2 tsp garlic paste from jar))

Steps:

  • Preheat oven to 180C/350F.
  • Line a baking dish with foil and baking / parchment paper.
  • Mix together Sauce in a bowl.
  • Place chicken in baking dish, skin side down for thighs and wings. Make sure the pan is big enough so the chicken is squished up next to each other (sauce may not reduce enough), but not so large that there is more than 4"/10 cm between every piece of chicken (sauce may reduce too much).
  • Pour over Sauce. Bake 30 minutes. Turn chicken over, spoon over sauce.
  • Bake 20 minutes or until chicken is cooked through. The Sauce should have thickened.
  • Stand for 5 minutes, then spoon Sauce over chicken and serve.

1/2 cup mustard seeds (light or dark)
2 tablespoons mustard powder
1/2 cup water
1/3 cup balsamic vinegar
3 -4 tablespoons white wine vinegar (or rice vinegar)
2 tablespoons sugar
2 teaspoons salt
1 large garlic clove, sliced

Steps:

  • Grind mustard seeds in a spice grinder, mortar and pestle, or mini food processor, until a fine meal texture. (Add the mustard powder if the seeds aren't grinding up.).
  • Place in a bowl and stir in the water.
  • Let stand, uncovered and unrefrigerated, for 1 - 4 hours, stirring occasionally.
  • Scrape into food processor, add remaining ingredients, and process until quite smooth.
  • Taste and add balsamic vinegar, sugar, salt or garlic to taste, keeping in mind that the flavours will mellow over time.
  • Place mustard into a clean, dry jar and cover tightly.
  • Note: The original recipe states that the mustard will keep indefinitely on the shelf or refrigerated. I have not tried keeping it unrefrigerated so please do so at your own discretion.

2 tsp dried thyme leaves
1 tsp paprika
1 tsp salt, divided
½ tsp pepper, divided
8 bone-in, skinless chicken thighs
1 tbsp canola oil
1 apple, peeled, cored and chopped
1 cup sodium-reduced chicken broth
⅓ cup apple juice, divided
¼ cup balsamic vinegar
1 tbsp Dijon mustard
2 cloves garlic, minced
1 tbsp cornstarch
2 tbsp chopped green onion

Steps:

  • Place the flour, thyme, paprika and half the salt and pepper in a plastic re-sealable bag. Add the chicken, in batches, and shake until well coated. Shake off the excess flour and transfer to a plate.
  • Heat the oil in a large nonstick skillet set over medium-high heat. Add the chicken and cook for 2 to 3 minutes per side or until browned; stir in the chopped apple. Whisk the broth with ¼ cup (60 mL) juice, the vinegar, mustard, garlic and remaining salt and pepper. Pour into skillet and bring to a boil.
  • Reduce heat and simmer, uncovered, for 20 to 25 minutes or until chicken is tender and cooked through. Transfer the chicken to a platter and tent with foil. 2 split chicken breasts
4 chicken thighs
6 sprigs of fresh rosemary
2 tbsp grainy mustard
2 tbsp Dijon mustard
1/4 cup balsamic vinegar
1/4 cup honey
2 tbsp olive oil + more for sauteing
Kosher salt and fresh cracked pepper to taste

Steps:

  • Season the chicken on all sides with salt and pepper. Add a small amount of olive oil to a very large sauté pan on high heat and add in the chicken to caramelize (about 3 to 4 minutes). Once the chicken is brown, flip them over add a sprig of rosemary on top of each piece of chicken and finish cooking in the oven on 350° for 12 to 14 minutes or until it is cooked through (no pink). In a medium bowl, add in the mustards, vinegar and honey and whisk until combined. Finish by slowly whisking in the 2 tablespoons of olive oil. Season with salt and pepper. Steps:

  • Place chicken in a gallon size resealable bag (or you can use a bowl).
  • In a mixing bowl whisk together balsamic vinegar, olive oil, garlic, rosemary, thyme, dijon mustard, salt, and pepper.
  • Pour marinade over chicken in bag (or bowl). Seal bag while pressing out excess air.
  • Rub marinade over chicken (I also like to twist and tie top of bag so marinade fully covers the chicken).
  • Let marinade in fridge for 2 to 8 hours for breasts and 2 to 24 hours for thighs.
  • Heat over medium-high heat to 400 degrees. Partway through heating don't forget to clean and oil grill grates (with a little vegetable oil or olive oil using tongs and a balled up paper towel).
  • Remove chicken from marinade while shaking excess marinade off back into bag. Transfer to grill and cook covered about 5 to 8 minutes per side.
  • Cook time varies based on thickness, check internal temperature of chicken in thickest portion to 165 degrees for doneness.
  • Garnish with parsley if desired. Serve warm.
