1 pound ground breakfast sausage
3 cups lowfat (2 percent) milk
1 cup quick-cooking grits
3 cups grated Cheddar
4 large eggs
1 tablespoon hot sauce
4 scallions, white and light green parts, thinly sliced, dark green tops reserved for garnish

1 jalapeno, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • In a 10-inch cast-iron skillet over medium heat, cook the sausage until browned and the fat is rendered, about 10 minutes, breaking up the chunks of sausage with the back of a wooden spoon. Remove the sausage to a bowl and set aside.
  • Add 2 cups of the milk and 2 cups water to the skillet and bring to a boil. Whisk in the grits slowly until smooth and no lumps remain. Reduce the heat and continue to cook, whisking, until very thick, about 5 minutes. Remove from the heat and stir in about half of the grated cheese.
  • In a medium bowl, whisk together the eggs with the hot sauce and remaining 1 cup milk. Slowly stream the egg mixture into the skillet with the grits while continuously whisking. Fold in the cooked sausage, scallions and jalapeno and season with salt and pepper. Top with the remaining cheese and bake until a knife inserted in the center comes out mostly clean, 50 minutes to 1 hour.
  • Slice the reserved scallion tops and sprinkle on top just before serving.

2 cups water
2 cups chicken broth
1/2 teaspoon salt
1-1/4 cups quick-cooking grits
1 pound sharp cheddar cheese, shredded

6 large eggs, beaten

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain., In a large saucepan, bring the water, broth and salt to a boil. Slowly stir in grits. Cheesy grits are a filling, versatile vegetarian staple. They can be dressed up or down, and topped with heaps of your favorite things. If you have it, Manchego provides creaminess and rich, salt flavor, but a combination of Cheddar and Parmesan works equally well. If you're using a vegan cheese, opt for one with the creamiest texture like a soy mozzarella, Cheddar or Cheddar Jack. To finish, let your favorite taco toppings guide you-avocados, radish and scallions are a surefire trifecta, but a spoonful of pico de gallo or salsa would be welcome here, too. You could also amp up the beans big time, adding chopped garlic, ground cumin or oodles more heat, but don't go so crazy that you can't pull this off on a weeknight with ease.

Steps:

  • In a pot, combine 2 cups of the broth or water along with the milk, grits and 1 teaspoon salt. Cook over low heat, stirring frequently, until completely tender, 20 to 25 minutes.
  • Meanwhile, in a small saucepan, combine the remaining 3/4 cup broth or water with the black beans and cayenne and cook over low heat, stirring occasionally, until warm and saucy. Season to taste with salt and add broth or water by the tablespoon, if desired, for saucier beans.
  • When the grits are tender, remove from the heat, and vigorously stir in the 1/2 cup cheese and the butter, if using, until the grits are creamy and almost fluffy.
  • Spoon into four bowls, and top with the bean mixture, avocado, radish and scallion. Finely grate more cheese over the top, if desired, and serve warm, with hot sauce and lime wedges if desired.

1/2 ounce canned jalapenos, diced
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup grits
1/2 cup sour cream
1 cup grated Cheddar
1 cup grated Monterey jack
1 cup diced green peppers
1 cup diced onions
3.5 ounces canned pimentos, drained
6 ounces sugar-cured ham or deli ham, diced
1/4 cup diced scallions
1/4 cup diced tomatoes

Steps:

  • In a large pan, combine 3 1/2 cups of water, the butter, jalapenos, garlic powder, salt, and cayenne pepper and bring it to a boil. Add the grits and stir. Reduce the heat to medium and continue stirring until the grits start to thicken. Add the sour cream, half of the Cheddar, and half of the Monterey jack and stir until creamy.
  • Preheat the oven broiler.
  • In a small skillet, add the remaining 1/4 cup water, green peppers, onions, and pimentos and cook over high heat until tender. Pour the grits mixture into a large flameproof casserole dish and top it with the cooked vegetables and ham. Add the remaining cheese on top and broil in the oven until the cheese is melted. Garnish each serving with scallions and tomatoes and serve immediately.

1 1/2 cups water
1/2 cup grits, gluten free
salt
1/2 cup grated cheese (A combination of cheddar and Monterrey jack is very good.)
1/8-1/4 cup chopped green chili pepper
2 eggs
3 ounces grilled steak or 3 ounces grilled pork, thinly sliced
1/2 medium avocado, diced
1/4 cup chopped onion
1 serrano chili pepper, minced
1 roma tomato, diced
lemon juice
salt
pepper
fresh cilantro, to garnish

Steps:

  • Bring the 1 1/2 cups water to a boil, whisk in grits and season to taste with salt. When grits return to boil, cover and reduce heat to medium low. Cook for 5 minutes.
  • While grits cook prepare the avocado salsa by combining the avocado, onion, pepper and tomato. Sprinkle liberally with lemon juice and season to taste with salt and pepper.
  • When the grits are cooked, remove from heat and stir in cheese and green chili. Cover and allow to rest while cooking the eggs.
  • Cook eggs in a lightly seasoned skillet to your liking; i.e., sunny side up, over easy, etc. When finished cooking eggs toss the sliced meat onto the hot pan and toss to just warm.
  • To assemble, divide the grits between 2 shallow bowls. Top each with a cooked egg, half the meat and a generous helping of avocado salsa. Sprinkle all with fresh cilantro or parsley if desired and serve.

I originally acquired this recipe for an Our House program. Serving quantity will change depending on if you want bite size pancakes or a few large ones.

1 kg pontiac potato, peeled
1/2 bunch shallot, chopped
2 large eggs
2 tablespoons self-raising flour

125 (1/2 cup) ml oil, for frying
1 tablespoon butter
1 large avocado
1 hot chili pepper, deseeded and chopped finely
2 ripe roma tomatoes, chopped finely
1 small lemon, juiced
1 bunch chives, finely chopped

Steps:

  • Grate the potatoes and squeeze out the water.
  • Place in a bowl with the shallots, eggs, flour, salt and pepper and mix together well.
  • Heat the oil in a frying pan, then add the butter.
  • Drop dessertspoonfuls of the potato mixture into the hot oil and cook until golden brown on each side.
  • Remove and drain on absorbent paper.
  • Keep warm.
  • Mash the avocado, then add the diced tomato, chilli,*lemon juice, salt and pepper.
  • Sprinkle with chives and serve with drinks.
  • *If you don't like a lot of lemon juice, you can add less but make sure there is enough lemon juice to stop the avocado from discolouring.

7 ounces chipotle chiles in adobo
4 large garlic cloves
2 tablespoons vegetable oil
1 teaspoon kosher salt
3 small whole chickens, cut into halves or 3 small whole chickens, cut into quarters
3 ripe Hass avocadoes, pitted, peeled, and cut into 1/2 inch pieces

1/3 cup finely diced white onion
3 fresh cilantro stems, stemmed and chipped

Steps:

  • In a food processor, puree the chipotles, garlic, oil, and salt. Wipe the chickens with paper towels. Thoroughly coat the pieces on all sides with a layer of the chipotle paste.
  • Place in a nonreative baking dish or in resealable bags and refrigerate for 2 hours, or as long as overnight.
  • Heat the grill to medium. With the lid open, grill the chicken on both sides until well marked but not burned- about 7 minutes per side. Turn the heat to low, close the lid, and cook the chicken, skin side up, until an instant-read thermometer inserted in the thickest part of the thigh reads 165 degrees. (Alternatively, bake at 350 degrees for approximately 30 to 40 minutes.).
  • Serve with tortillas and salsa.

  • Rub spice mixture generously on both sides of the tuna.
  • Preheat oven to 350°F for the taco shells.
  • Heat a nonstick pan on the stove over high heat. When pan is smoking hot, add olive oil, wait 10 seconds, then add tuna. Sear for 1 minute per side, or until fish is cooked on the outside, but rare on the inside. Transfer to a plate.
