COUNTRY TOMATO AND BACON PIE
Country Tomato and Bacon Pie is comfort food at its finest. Fresh tomatoes with layers of cheese and bacon all baked in a yummy pie crust!

Steps:
- If using a frozen pie crust, you'll need to let it defrost on the counter for about 10 minutes, then prick the crust with a fork (this keeps the crust from getting too puffy while baking).
- Then bake it using the instructions on the back of your package (usually 400F degrees for about 10-12 minutes).
- If using my Wham Bam Pie Crust, you'll prepare as directed, prick the crust with a fork, and then prebake at 400F degrees for about 10-12 minutes.
- Allow crust to cool slightly.
- Turn oven down to 350F degrees.
- Start layering tomato slices on the bottom of the pie.
- Season with some freshly ground black pepper.
- Then top with green onions, basil and crumbled bacon.
- In a bowl, combine mayonnaise with shredded cheese.
- Spread the cheese mixture on top of your pie.
- Bake at 350F degrees for about 30-35 minutes (until golden brown).
- If the the edges of your pie crust are becoming too brown while baking, you may want to put some aluminum foil around the edges of the pie, just covering the crust for the duration of baking.

BACON ONION TOMATO PIE
This reminded us of a BLT. It does sound strange, but we loved the way all the textures and flavors were perfect together. It's sweet, smoky, and savory. This is a great way to use up the abundance of tomatoes this time of year.

Steps:
- 1. Prick pie shell with fork and bake at 350 degrees for about 10 minutes.
- 2. Fry bacon. Cook till tender. Drain, set aside.
- 3. Peel and slice tomatoes to fill bottom of pie shell.
- 4. Sprinkle with chopped onion and salt and pepper.
- 5. Layer more tomatoes, salt and pepper (again).
- 6. Mix mayo, bacon and cheese and milk.
- 7. Spoon on top and pat down to cover tomatoes.
- 8. Sprinkle with Ritz crackers mixed with melted butter
- 9. Sprinkle Scallions on top.
- 10. Bake 350 degrees for 30 minutes.

- 1. Bake pie shell for 5 minutes at 425 degrees. "Fork" crust to keep it from rising up. Reduce heat to 400 degrees.
- 2. Fry bacon and add onion. Cook till tender. Drain, set aside.
- 3. Place tomatoes in browned pie shell. Combine salt, pepper and basil flakes. Sprinkle over tomatoes. Place bacon and onions over tomatoes.
- 4. Mix mayonnaise and cheddar cheese. Spread and seal over pie. Bake for 35 minutes until cheese melts and is golden brown. Cool before cutting.
SAUSAGE, BACON AND TOMATO COTTAGE PIE

Steps:
- Peel, chop and boil your potatos. (while potatos are boiling).
- Cook Sausages and cut each sausage into four.
- Fry chopped onion, bacon and cooked chopped sausages.
- Crumble oxo cubes into the above along with mixed herbs and stir.
- Quater tomatos and mix in with above,
- Leave to simmer for about 10 minutes stiring occasionaly, (you may want to add a touch of water to add a bit of juice but not to much).
- Transfer the sausage mixture to a caserole or oven dish.
- Drain and mash your potatos using your prefered method.
- Spoon on top of sausage mixture like you would a shepherds pie.
- Bake in a preheated oven at 200c until crispy on top.
- Cover with grated cheese and bake again until cheese has melted.
- Serve on its own or with vegetables.
MUSHROOM, TOMATO, BACON AND EGG PIE
This is based on a Pampas Pastry recipe that I've had for years. I added the tomato and onion to give it just that bit more pizazz! Also, I substituted puff pastry for the shortcrust pastry in the original recipe. If you make too much filling for the pie case, you can refrigerate it for up to two days and use it in a savoury omelette or scramble.

- Preheat oven to 190-200 degrees.
- Line a 20cm pie dish with baking paper.
- Place 1 sheet of pastry over the paper.
- Trim edges.
- Place bacon, mushrooms, tomato and onion in pastry case.
- Season with black pepper.
- Crack eggs over filling.
- Top pie with remaining sheet of pastry.
- Trim and crimp edges.
- Glaze top of pie with milk.
- Cut a vent in centre of pie.

- Preheat the oven to 200°C/400°F/gas mark 6.
- --------Forthe pastry----------.
- Sift the flour and salt into a bowl.
- Rub in the fat and add just enough water to make a dough.
- Or put it all in the food processor!
- Chill for 30 minutes before using.
- -------Forthe filling---------.
- Grill the bacon and then cool and cut into strips.
- Finely chop the mushrooms, melt the butter, add shallots and mushrooms and cook until dry.

- Roll out just over half the pastry, line a 17cm flan ring.
- Smooth the mushroom mix onto the base of this.
- Sprinkle with bacon, break in 6 eggs, season and roll out the rest of the pastry.
- Make a glaze of egg wash with the remaining egg.
- Lay the pastry on top of pie.
- Seal with egg wash and decorate.
- Bake in the oven for 30-35 minutes .
- Rest for 10 minutes, remove flan ring and serve hot or cold.
