BLUEBERRY DUMPLINGS
This easy blueberry dumpling recipe from Paula Deen is a kid-friendly summer dessert. Ingredients include fresh or frozen blueberries, milk and softened butter. Prep time is approximately 10 minutes and cooking time takes 20 to 30 minutes to boil.

Steps:
- Stir flour, 1 tablespoon sugar, baking powder, and salt together in a bowl. Cut butter into dry ingredients, using a pastry cutter or fork. Add milk to form dough.
- Mix berries, the 1 1/2 cups sugar, and water together in a saucepan and bring to a boil.
- Drop dumplings into hot boiling berries by the tablespoonful.
- Cover pot, reduce heat, and cook slowly for 20 to 30 minutes. Do not remove lid before 20 minutes has passed. Do not stir dumplings.
- Serve with vanilla ice cream or fresh cream.
JUANITA'S BLACKBERRY DUMPLINGS
My mother's specialty, she was the oldest of 6 children, her mother died when she was 12 and she cooked for the family from 12 on. Blackberries were plentiful in Southern Missouri in summer and she made the blackberry dumplings for her siblings instead of a cobbler. I have never seen a recipe for the dumplings so I am thinking this is something my mother devised herself perhaps a quart of blackberries went further by making dumplings instead of a cobbler.

Steps:
- Place blackberries, sugar, water, butter, and cinnamon in a large saucepan. Cook and stir occasionally over medium heat until have started to break down and form a sauce, about 20 to 30 minutes.
- Meanwhile, whisk together the flour and salt in a mixing bowl. Cut in the shortening with a knife or pastry blender until the mixture resembles coarse crumbs. Stir the egg yolk into the crumbs. Add the milk a tablespoon at a time, tossing with a fork, until the flour mixture is moistened. Do not add more milk than you need: when you squeeze a handful of the moistened pastry mixture, it should form a ball. Divide the dough in half and shape into balls.
- Roll one ball into a 1/4-inch thick round, like a pie crust. Using a floured knife cut lengthwise 2 to 3 inch wide strips of dough. Repeat with the second ball of dough.
- Holding each strip of dough over the boiling blackberries pinch off 4-inch lengths and drop into the berries. Repeat until all the dough has been used. Cook the dumplings over medium heat for 15 minutes. You may push the dumplings down into the juice but do not stir until they are fully cooked or they will clump together.

BAKED FRUIT DUMPLINGS
A wonderful light dessert. Good with apples, pears, blueberries, raisins, nuts, and probably anything you think of. Serve with vanilla ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 7x11 inch baking dish.
- In a large bowl, mix flour, baking powder, salt and brown sugar. Cut in butter. Pour in milk and stir to form a dough. Turn out onto a well-floured surface and roll out. Cut into 6 - 6 inch squares.
- Place a whole apple in the center of each square. Fill the core with blueberries. Drizzle with maple syrup. Pull up corners of dough and pinch edges together to seal. Place dumplings in prepared pan and sprinkle with cinnamon and nutmeg.
- Combine remaining maple syrup with enough water to pour over dumplings to a 1 inch depth in dish. Submerge remaining blueberries and apple peelings with dried orange peel in liquid.
- Bake in preheated oven 45 minutes, basting as necessary, until crisp and browned. Serve warm with sauce.

- In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 teaspoon salt and extract; bring to a boil. Reduce heat and simmer for 5 minutes. Meanwhile, in a bowl, combine flour, baking powder, nutmeg, remaining sugar and salt. Add milk; stir just until mixed (dough will be very thick)., Drop by tablespoonfuls into six mounds onto simmering blackberry mixture. Cover and simmer for 15 minutes or until a toothpick inserted into a dumpling comes out clean (do not lift cover while simmering). Spoon into serving dishes. Serve with cream or whipped cream if desired.

Had this at a friend's house and loved them. Wouldn't you know, my sister went to her office collected recipes and found the recipe. Wanted to put it here before it was lost.

Steps:
- Cream butter with sugar.
- Add eggs, stirring hard.
- Add cottage cheese and flour.
- Stir well and gradually add enough milk to make a soft dough.
- Roll out on floured board (not too thin), and cut in squares. Into each square put a blue plum, apricot or sweet cherries. Pinch corners together and roll into a ball.
- Boil dumplings in a large pot filled with rapidly boiling, salted water for 10-12 minutes.
- Serve with melted butter and a mixture of sugar and cinnamon.
GRANDMA'S DUMPLINGS FROM SCRATCH: 100+ YEAR OLD RECIPE
Grandma would always make these for us when we were under the weather. She would cook a chicken in a pot with water, carrots, onions, and celery until it was done. Then she would pull all the chicken meat of the bone, and put it back into the broth (she would taste it after the meat was added and then add salt, pepper, and a little parsley). I always sat on the counter and watched her throw everything in a pan without measuring, and they were AMAZING. Finally, I asked her to write it down for me, and I'm glad I did. Posting on here so I never lose this recipe! She always rolled them out thin and used a knife to cut them into pieces. They were never the same shape, but that's how we knew when Grandma made them :) NOTE: Grandma learned how to make these from her mother, so this is the OLD school recipe for dumplings. I am writing it like she gave it to me. Scant teaspoon means a little under the measurement: not quite to the top but not 1/4 less.

- Mix the first 6 ingredients together until combined. Slowly add the water until you form a dough. You may have to add more or less water to form the ball.
- Roll out the dumpling dough on a floured surface thin and cut into bite size pieces.
- Drop them one at a time into simmering chicken/broth. She would always drop a few then wait a bit, then drop a few more. She said this kept them from sticking together in the end. After they are all added, give a gentle stir (once or twice around the pot, then leave it alone).
- Let the dumplings simmer in the chicken/broth mixture until they float to the top (about 15 minutes or so). I have let them simmer a longer, and that's fine. She would taste the broth one last time after the dumplings were done for seasoning before we got to eat them!

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
- Prepare buckle: beat sugar and butter in a bowl using an electric mixer until creamy and smooth. Beat in eggs. Whisk flour, baking powder, and salt together in a separate bowl. Stir flour mixture into creamed butter mixture, alternating with milk, until batter is just combined; fold in blueberries. Pour batter into the prepared pan.
- Prepare topping: combine sugar, flour, and cinnamon together in a bowl. Cut in cold butter using a pastry blender or 2 knives until topping is crumbly. Sprinkle topping over batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Cool buckle on a wire rack.

- Start a large pot of boiling water.
- Beat eat whites.
- Mix in cottage cheese.
- Add flour until the mixture turns to a doughy consistency.
- Dice onion.
- Put butter in frying pan and brown the onions and add garlic minced.
- Use a large cutting board for this process.
- Dust the cutting board with flour (will have to multiple times through the process).
- Cover your hands in flour.
- Grab hand fulls of dough.
- Roll the dough until it is about 1in thick.
- Cut about 1/4in pieces of dough.
- Roll them slightly and place them on a large dish.
- Drop the pieces in boiling water for about 12 minutes. (this will be done in two batches).
- Strain and rinse dumplings with cold water.
- Mix in the onion/butter mix.
- Bacon is also good added to the dumplings!

- Bring both cans of Tomato Products to a fast boil.
- Pinch biscuits and drop in (May want to use a spoon because it splatters and will burn skin).
- While you are placing pinched biscuits in sauce push biscuits down in sauce to insure they get cooked.

- Mix berries,water, 1 cup sugar, 1/4 t salt and lemon in large, wide saucepan.
- Bring to a boil.
- Reduce heat and simmer 5 minutes.
