- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Add onions and reduce heat to medium-low. Cook until very soft and almost mushy, 7 to 10 minutes. Add garlic and cook until fragrant, about 1 minute.
- Add ketchup, molasses, brown sugar, cider vinegar, Worcestershire, Dijon, liquid smoke, hot sauce, and black pepper. Bring to a simmer, cover, and cook for 15 minutes.

- For the potatoes: Put the potatoes in a pot with cold water and add the salt. Cover, bring to a boil and cook until fork-tender, 10 to 15 minutes. Drain, cut in half and transfer to a bowl.
- Fry the bacon in large skillet over medium heat until crisp, 12 to 15 minutes. Remove to a paper towel-lined plate, chop into 1-inch pieces and reserve.
- For the quick-pickled onion: Combine the red wine vinegar, honey, chile flakes and dill in a small bowl and whisk until the honey is completely dissolved. Add 1/2 cup water and the sliced onions. Toss well to combine and submerge the onions. Set aside or transfer to a container with an airtight lid. The quick-pickled onions can be stored in the refrigerator for up to 7 days.
- For the dressing: Mix together the mayonnaise, BBQ sauce, mustard, apple cider vinegar, pepper, Worcestershire and salt in a medium bowl until combined.
- Pour the dressing onto the potatoes, add a third of the pickled onions, two-thirds of the chopped bacon and half the chopped parsley and toss. To serve, garnish with the remaining parsley, bacon and pickled red onions.

BARBECUE BACON WEDGE SALAD WITH GRILLED CORN

- For the corn: Preheat the broiler. Line a baking sheet with foil.
- Rub the oil on the corn on the prepared baking sheet. Broil the corn, turning every few minutes, until charred on all sides, about 10 minutes. Remove the corn and let it cool slightly, then cut the kernels from the cob and set aside; discard the cob.
- For the bacon: Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
- Mix the barbecue sauce, vinegar and sugar in a small bowl. Put the bacon on the prepared baking sheet and brush with a layer of the sauce. Bake, flipping and basting with more sauce every 10 minutes, until the bacon is cooked through and juicy and the sauce is sticky and dark, 45 to 55 minutes. Cut the bacon in half crosswise to yield 4 pieces.
- To assemble the salad: Arrange the wedges of lettuce on a large platter. Add the tomatoes, corn and bacon around the wedges. Season the lettuce and tomatoes with salt. Top with coarsely ground pepper. Spoon the dressing over the lettuce wedges and top with the pickled onions. Serve immediately.
- Mix the mayonnaise, buttermilk, vinegar, sugar and hot sauce in a medium bowl. Season with a pinch each of salt and pepper, then fold in the blue cheese, leaving a few lumps of cheese.
- Place the onions and peppercorns in a jar. Whisk the vinegars together with the sugar, salt and 1 cup water in a medium bowl until the sugar is dissolved. Pour over the onions and refrigerate for 2 to 3 hours. The pickled onions will keep about 2 weeks in the fridge.
BARBECUE CHICKEN WITH ONION-BACON JAM
Dry-rubbed grilled chicken is the perfect base for a sweet and sour, smokey bacon jam spiked with bourbon.

- Make the chicken: Preheat a grill to medium high and oil the grates. Combine the brown sugar, chili powder, smoked paprika, mustard powder, garlic powder and cayenne in a small bowl.
- Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Rub the chicken with the sugar mixture; set aside while you make the onion-bacon jam.
- Make the onion-bacon jam: Heat the olive oil in a medium dutch oven over medium heat. Add the bacon and cook until crisp, 5 to 7 minutes. Remove to paper towels. Pour out all but about 2 tablespoons fat, then add the onions and cook over low heat, stirring, until caramelized, 20 to 25 minutes. Stir in the thyme and bourbon; simmer 1 minute. Season with salt and black pepper. Stir in the bacon, brown sugar, cider vinegar, Worcestershire sauce and 1/4 cup water; simmer 2 more minutes.
- Season the chicken with salt and black pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
- Top the chicken with the onion-bacon jam.
BEEF, BACON AND ONION SAUCE WITH BUCATINI

- Heat the EVOO in a large skillet over medium to medium-high heat. Add the guanciale, and cook to render the fat, 2 to 3 minutes. Season with black pepper, and then add the garlic, onions and bay leaf and cook until the onions are soft and sweet but not brown. Add the wine and reduce by half, then add the Beef and Tomato Base. Cool and store for a make-ahead meal.
- When ready to serve, reheat over medium heat and remove the bay leaf before serving.
- Bring a large pot of salted water to a boil for the bucatini, and cook the pasta to al dente. Reserve a cup of the starchy cooking liquids. Drain the pasta, and return it to the pot with the butter and half of the reheated sauce. Toss with the cheese to combine, and serve in shallow bowls. Top with additional sauce and cheese.
- Heat the oil in a large pan over medium-high heat. When the oil is very hot, pat the meat dry with paper towels and add half of the beef to the pan. Crumble the beef with a potato masher or wooden utensil. Cook to develop a deep brown color, season with salt and pepper, and then remove to a plate. Repeat the process with the remaining beef. Add the tomato paste to the pan and stir until fragrant. Then add the stock and the browned beef. Stir to combine, then reduce the heat to a simmer.
BACON, ONION, GARLIC & TOMATO SAUCE
This recipe is something I created the other night for some friends and they loved it. It is probably your "Doctor's Worst Nightmare" kind of recipe, but try it and indulge yourself now and again.

Steps:
- Cut bacon slices into 4 pieces and cook over medium heat in a large sauce pan. You may have to do this in 2 batches.
- Cook bacon until a golden brown, but NOT crispy. You do not want any burnt edges.
- Remove bacon and place on paper towels to absorb fat.
- Add roughly diced onions and cook on medium heat until translucent.
- Add your garlic and continue cooking until onions appear to start turning golden brown.
- Strain mixture with a sieve over a bowl, as you want to reverse the bacon fat.
- Put mixture back into pan and add a half of the diced tomatoes.
- Cook, toss and turn for about 5 minutes.
- Return bacon and bacon fat back into mixture and heat through.
- Pour over your favourite pasta and sprinkle with cheese and fresh basil leaves.

BBQ BACON
Sounds easy, right?! Well with the proper preparations, you can take your bacon to a whole new level. You can cook it ahead of time and have an awesome BLT, or you want some really flavorful bacon bits added to your salad, or to those main dishes that have bacon in them. Well this is a great alternative answer. Also by BBQ the bacon, it drips alot of the grease that it normally bathes in while you pan fry. The prep time is so the bacon can marinate and get all nice and cozy with the BBQ sauce. Double or triple for large potluck meal batches. **NOTE** - Recently we started adding Rum to the mix, it comes out awesome. So if your inclined to do so, add a cup of good dark rum to the marinating bag.

- Dice Onion up really nice.
- Add diced Onion, Bacon, BBQ sauce and Rum (optional of course) to a ziploc freezer baggy (large enough to hold everything together).((I use a vacuum sealer for this)).
- Pretend it is a gel sack and mix things up really well after you seal the bag.
- Freeze combination for at least 6 hours, the freezing causes the ice crystals to cause mini-tears in the meat, allowing the Bacon to be extremely tender.
- Take freezer pack out of freezer and allow to thaw normally (in the fridge).
- Ready your BBQ, when hot, cook to doneness that you normally like your bacon (tender or crispy).
- NOTE: Watch the flames, the dripping grease causes fires, and if you don't remain observant, you will end up with little charcoal sticks. :).

- Sauce.
- In a large frying pan heat oil over high heat.
- Add onions and lower the heat to medium.
- Add salt& pepper mix thoroughly.
- Sweat onions down for about 15 minutes stirring often.
- You want the onions very soft.
- Add sugar and reduce heat to low.
- Mix well& cook 5-10 minutes or until most of liquid is absorbed.
- Add balsamic vinegar.
- Mix well cook for 20-40 minutes until sauce becomes a dark rich syrup.
- Steak.
- Pre-heat ove to 450 degrees.
- Heat oil in a oven proof skillet.
- Wrap a piece of bacon around each filet, secure with toothpick if needed.
- sprinkle steaks with crushed peppercorns.
- Sear each side of filets about 2 minutes.
- Place skillet in oven and bake 10 minutes.
- Steakes will be medium rare.
- Remove filets from skillet.
- Allow to rest 1-2 minutes Pour warm sauce over top& serve.

- Cut beef steak lengthwise in half and then crosswise into 1/4" strips; set aside.
- Shake flour in oven bag.
- (Leave excess flour in bag).
- Place sauce ingredients and onion in bag.
- Squeeze bag to mix well, blending in flour.
- Place beef in bag, turning to coat.
- Place bag in 13 x 9" pan, arranging ingredients in even layer.
- Close bag with nylon tie.
- Cut 6 1/2-inch slits in top.
- Bake 45-50 minutes or until beef is tender.
- Serve beef in rolls.
