LOW FAT CREAMSICLE JELLO
A great lowfat dessert using sugar free orange jello and vanilla pudding combined with mandarin oranges, mini marshmallows and light or fat free cool whip. A great 10 minute dessert!

Steps:
- In a large bowl, mix together orange jello (dry mix) and vanilla pudding (dry mix).
- Fold whipped topping into the dry mixes.
- Add 2 to 4 T reserved mandarin orange liquid and stir well.
- Add mandarin oranges and marshmallows and mix well.
- Chill well.

Steps:
- Mix Jell-O with 1 cup boiling water.
- Dissolve Jell-O completely and add 1 cup cold water and let it sit for 5 minutes.
- Using electric beater, beat in pudding mix until well combined.
- Fold in Cool Whip.
- Chill and serve until set.
- 4 servings (1 cup each).
DECADENT 5 MINUTE STRAWBERRY CHEESECAKE FOR 2- REG OR SUGAR-FREE
This is amazingly good! It's perfect for a special occasion (like Valentine's Day) or when you just have to have something sweet and yummy in a hurry. There's no baking or complicated stuff so you can literally put this on the table within a few minutes. I top mine with strawberry topping but you can use any flavor you like. It can be made with sugar, splenda or even stevia. You can used regular or reduced fat cream cheese. I use reduced and splenda. It will actually serve up to 4 adults if you really want to share it.

- You want to use a 1 quart casserole dish. For special occasions I use a heart shaped one. Whatever dish you choose should be about 5 or six inches across and have short sides.
- Using your hands, crumble up the cookies into the dish. Crumble them pretty finely and spread them out evenly.
- In a small bowl, combine the cream cheese, half and half, vanilla and your sweetener of choice (use the smaller amount of sweetener, taste and add more if you want it sweeter). Using a fork, mix everything up until smooth and well combined. Spread this carefully over top of the cookie crumbs.
- Spread strawberry filling over the top and serve or you can chill to serve later. Try not to eat it before dessert.

- Preheat oven to 350 degrees.
- In one bowl, mix together dry pudding mix, unsweetened cocoa, Splenda, and oat flour. Add the milk and whisk 2-3 minutes until pudding mixture thickens.
- In another bowl, beat egg whites till they start to become foamy. Add the cream of tartar, continue beating until whites "peak.".
- Fold together egg whites and puddig, pour mousse into 4 individual cups, and bake for 13 minutes.
- 100 calories per serving! Garnish with fruit & sugar-free fat-free whipped topping if desired.

CAULIFLOWER MOUSSE
This is a low-calorie recipe that I found on the WebMd site. I have yet to try it but I want to because I love cauliflower and it seems so easy and healthy. I'm sure you could add whatever spices and seasonings you like. I'm not sure what is meant by the ambiguous 2nd step. If anyone has an idea, please enlighten me!
