½ cup packed brown sugar
1 ½ pounds ground beef
¾ cup crushed unsalted saltine crackers
2 eggs
¾ medium onion, chopped
3 cloves garlic, minced, or more to taste
2 tablespoons Dijon mustard
salt and pepper to taste
2 tablespoons Worcestershire sauce
6 slices bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a loaf pan with cooking spray.
  • Spread ketchup over the bottom of the loaf pan; spread brown sugar over the ketchup.
  • Combine ground beef, crackers, eggs, onion, garlic, mustard, Worcestershire sauce, salt, and pepper in a bowl. Form mixture into a loaf and place in the prepared pan. Lay bacon strips on top in a lattice or other pattern.
  • Bake in the preheated oven until juices run clear and bacon is cooked, about 1 hour.

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

4 tablespoons brown sugar
4 teaspoons cider or white vinegar
Meat Loaf
2 teaspoons vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
2 large eggs
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 cup whole milk or plain yogurt
2 pounds meat loaf mix (50 percent ground chuck, 25 percent ground pork, 25 percent ground veal)
2/3 cup crushed saltine crackers or quick oatmeal

1/3 cup minced fresh parsley leaves
8 slices thin-sliced bacon (more as needed, depending on loaf shape)

Steps:

  • For the glaze: Mix all ingredients in small saucepan; set aside. For the meat loaf: Heat oven to 350 degrees F. Heat oil in medium skillet. Add onion and garlic; saute until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple tablespoons at a time, until mix no longer sticks.) Turn meat mixture onto work surface. 1 pound thick-cut bacon

Steps:

  • Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
  • Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
  • Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.

1 onion, finely chopped
1 red pepper, finely chopped
2/3 c. dry bread crumbs
1 egg, beaten
1/3 c. grated Parmesan cheese
1 t. Cajun seasoning
1 t. Worcestershire sauce
1/2 t. salt
1/4 t. pepper
1/3 c. milk
1/2 c. barbecue sauce

Steps:

  • Toss bacon slices with brown sugar; place in a skillet over medium heat. Cook bacon for 2 to 3 minutes; drain and set aside. In a large bowl, combine remaining ingredients except barbecue sauce. Form into a loaf and place on a lightly greased, aluminum foil-lined baking sheet. Spread barbecue sauce over loaf and top with bacon slices. Bake, uncovered, at 350 degrees for one hour to one hour and 10 minutes, until bacon is crisp and meatloaf is firm. Let stand for 10 minutes before slicing. Serves 6.

1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1/2 teaspoon dried thyme leaves

1/4 teaspoon hot red pepper sauce
