2-1/2 cups cubed peeled butternut squash
1 large sweet potato, peeled and cubed
3 medium carrots, sliced
1/4 cup thawed orange juice concentrate
3 cups fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons reduced-fat sour cream
2 tablespoons minced chives
1 tablespoon sesame seeds, toasted

Steps:

  • Place the squash, sweet potato and carrots in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 12-16 minutes or until tender. Cool slightly. Transfer to a food processor; add juice concentrate. Cover and process until smooth. , Transfer to a large saucepan; stir in the milk, salt and pepper. Cook and stir over low heat until heated through (do not boil). Top each serving with 1-1/2 teaspoons sour cream, 1 teaspoon chives and 1/2 teaspoon sesame seeds.

Number Of Ingredients 10

1 can (28 ounces) stewed tomatoes
1 pound ground beef
1 cup chopped onion
1 cup diced carrot
1 cup diced celery
1 cup diced peeled potato
1 cup diced peeled rutabaga
1 bay leaf
1/8 teaspoon dried basil
4 cups water

Steps:

  • Puree tomatoes in a blender; set aside. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in tomatoes and remaining ingredients. Bring to a boil; reduce heat and simmer 25-30 minutes or until the vegetables are tender. Discard bay leaf before serving.

2 tablespoons butter
2 medium onions, chopped
2 cloves garlic, minced
3 medium carrots, chopped
1 small zucchini, peeled,chopped
2 stalks celery, chopped
2 medium potatoes, peeled,chopped
2 medium tomatoes, peeled,chopped
3 tablespoons parsley
2 cups chicken stock
1/4 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
2 cups milk

Steps:

  • In dutchoven (large pot) on medium heat, melt butter, add onions and garlic and saute until golden.
  • Add the rest of the ingredients EXCEPT the milk.
  • Boil for 25 minutes.
  • Puree soup with blender, return to heat and add milk.
  • DO NOT BOIL!
  • Just heat through.
  • Recipe may be doubled.

1 (6-ounce) piece lean smoked bacon, diced
1 1/2 cups diced (1 medium-large) white onion
1 cup diced celery
2/3 cup diced (1 medium) carrot
2 large cloves garlic, minced
1 tablespoon minced fresh thyme or 1 teaspoon dried
2 teaspoons minced fresh rosemary leaves or 1/2 teaspoon, dried
6 cups chicken stock or canned chicken broth
Salt and freshly ground pepper, to taste
2 (1-pound) cans cannellini beans, rinsed well and drained
3 large firm ripe tomatoes, seeded and chopped or 2 (1-pound) cans tomatoes, drained and chopped
1 cup small pasta shells
3 garlic cloves, chopped
1 1/2 cups packed basil leaves
1/2 cup freshly grated Parmesan
Freshly ground black pepper, to taste
2/3 cup extra-virgin olive oil
Salt, to taste

Steps:

  • In a soup pot or casserole cook the bacon over moderate heat, stirring occasionally, until it is golden. With a slotted spoon transfer to a plate lined with paper towel.
  • Pour off all but 2 tablespoons fat from the pan and add the onion, celery, carrot, garlic, thyme and rosemary and cook over moderate heat, covered, stirring occasionally, for 5 minutes. Add the chicken stock or broth and salt and pepper to taste, bring to a boil and simmer the soup, stirring occasionally, for 20 minutes. Add the beans and tomatoes and simmer, stirring occasionally, for 5 minutes. Stir in the pasta and simmer the soup, covered, for 10 minutes, or until pasta is al dente. Let stand off heat, covered, for 5 minutes.
  • Make the Pistou: In a small food processor or blender, combine garlic, basil, Parmesan and pepper and with machine running, add oil in a stream. Puree until well blended. Add salt to taste.
  • Ladle the soup into bowls and serve topped with the Pistou and accompanied by fontina and Parmesan toasts.

1 medium to large butternut squash (about 2 cups cooked pulp)
1 large Spanish onion, chopped (about 3 cups)
2 tablespoons vegetable oil
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon dried thyme
2 bay leaves
1 medium carrot, diced
2 celery stalks, chopped
1 1/2 cups water
11/2 cups tomato juice
1 cup apple juice
1 cup orange juice
Salt and ground black pepper

Steps:

  • Bake or boil the squash. To bake, halve the squash and scoop out the seeds. Place the squash halves cut side down on an oiled baking sheet and cover loosely with aluminum foil. Bake at 350 degrees until tender, about one hour. Scoop out the pulp and discard the skin. To boil, peel the squash, halve it, and scoop out the seeds. Cut it into chunks and place them in a saucepan with water to cover. Bring the water to a boil and cook until the squash is tender, about 15 minutes. Drain and reserve the liquid.
  • Meanwhile, saute the chopped onion in the oil with the nutmeg, cinnamon, thyme, and bay leaves until the onion is translucent. Add the diced carrot and celery and the water (if you boiled the squash, use the reserved liquid). Cover and simmer until the carrots are Tender. Remove the bay leaves.
  • In a blender or food processor, puree the cooked squash, the onioncarrot mixture, and the juices in batches. Gently reheat the soup. Add salt and pepper to taste.

2 Tbs. olive oil
3 medium carrots, cut into medium dice
1 large yellow onion, cut into medium dice
2 medium cloves garlic, minced
2 cups 1/2-inch-cubed peeled butternut squash (about half a 2-lb. squash)
1/4 tsp. ground allspice
Pinch cayenne pepper; more to taste
Kosher salt
1 quart lower-salt chicken broth
1 14.5-oz. can no-salt-added diced tomatoes
4 sprigs fresh thyme
2 cups lightly packed, coarsely chopped kale
1 cup lower-salt canned chickpeas

Steps:

  • Heat the oil in a large soup pot over medium-high heat. Add the carrots and onion and cook, stirring occasionally, until they begin to soften, about 6 minutes. Add the garlic and cook for 1 minute more. Add the squash, allspice, cayenne, and 1 tsp. salt and stir to combine. Add the broth, tomatoes with their juice, and thyme. Bring to a boil, reduce the heat to medium, cover, and simmer for 10 minutes. Add the kale and the chickpeas and cook uncovered until the squash is tender and the kale has wilted, about 10 minutes more. Discard the thyme springs before serving. Season to taste with more salt and cayenne.

4 dried shiitake mushrooms
6 cups water
2 tablespoons extra virgin olive oil
1 large onion (diced)
3 garlic cloves (minced)
1 tablespoon grated fresh ginger
3 carrots (diced)
4 cups chopped kale or collard greens
2 cups cooked cannellini beans
¼ cup mirin
Splash of tamari
Splash of apple cider vinegar
4 -5 dashes toasted sesame oil
Freshly ground black pepper

Steps:

  • Place dried mushrooms in medium pot with 6 cups water. Bring to boil, then reduce heat and simmer 15 minutes. Remove from heat and set aside to cool slightly.
  • When mushrooms are soft, remove from broth and cut off and discard stems. Dice caps and place back in pot with broth.
  • In large pot over medium heat, sauté onion, garlic and ginger in oil 3 minutes. Add carrots and sauté 3 minutes. Add kale or collard greens, beans and mirin and sauté until greens are deep green and tender.
  • Pour broth and mushrooms into pot with kale, add tamari and vinegar and simmer 5-7 minutes.
  • Season to taste with toasted sesame oil and black pepper and serve.
