HAUPIA (HAWAIIAN COCONUT PUDDING)
This is a great traditional coconut recipe. We serve this at our family luau every year.

Steps:
- Stir coconut into boiling water in a large bowl. Let sit for 15 minutes, then strain through cheesecloth, squeezing out all of the liquid to yield 3 cups.
- Stir together the cornstarch, sugar, nutmeg, and salt. Bring the coconut milk to a simmer in a saucepan over medium-high heat. Whisk in the sugar mixture, and cook until thickened, stirring constantly. When very thick, remove from heat ,and stir in vanilla. Pour into an 8x8-inch pan, and cover with plastic wrap. Refrigerate until set.

HAUPIA
Haupia is a delicious traditional Hawaiian gelled dessert that is prepared with coconut milk and cornstarch.

Steps:
- Pour the coconut milk into a saucepan and heat on medium heat.
- Meanwhile, mix the sugar and cornstarch in a bowl and add the water. Whisk until everything is smooth and homogenous.
- When the coconut milk starts to simmer, add the mixture from the bowl.
- On low-medium heat, continue to whisk until the mixture thickens and begins to appear slightly translucent. It should take about 10 minutes.
- Pour the mixture into an 8-inch (20 cm) square pan.
- Allow to cool before refrigerating for at least 4 hours, or until obtaining a semi-solid consistency.
- Cut the haupia into squares of about 2 inches (5 cm) and serve.
HAUPIA (HAWAIIAN COCONUT PUDDING)
Haupia is a classic Hawaiian dessert made from coconut milk, sugar, cornstarch, and water. It's like a cross between coconut jelly and pudding. Cut into square and eat chilled. Simple and refreshing!

- Mix cornstarch and water in a small bowl. Mix till the cornstarch is completely dissolved. Set aside.
- In a small saucepan over medium heat, combine the whole can of coconut milk and sugar. Whisk together, and keep whisking until it's just about to boil.
- Slowly pour in the cornstarch/water mixture while whisking.
- Turn the heat to low, and keep cooking for 10-15 minutes. You'll want to stay at the stove at this whole time, and whisk pretty frequently. You'll know the haupia is ready when it gets much thicker (almost "gluey") and starts to pull away from the side of the saucepan when you whisk.
- Pour into a greased (or parchment paper lined) 8x8 pan. Let cool at room temperature for 15 minutes. Then cool in the fridge for 1-2 hours until set. Cut into squares and enjoy chilled ^_^

- Stir over medium heat until thickened.
- Lower heat and cook for ten minutes, stirring constantly to avoid lumping or burning.

HAUPIA COCONUT PUDDING
This is my grandma's traditional Hawaiian recipe. Traditional Hawaiian dessert. Originally haupia was prepared with arrowroot (pia) mixed with coconut cream. It was wrapped in ti leaves and baked in the imu.

Steps:
- 1. Combine cold water with cornstarch and blend until smooth.
- 2. Then combine with coconut and sugar in a sauce pan and stir until thick over medium heat. Lower heat and cook for 10 minutes, stirring to prevent lumps and to keep from burning. Mixture will get smooth and glossy.
- 3. Pour into an 8 inch square pan and chill until set. Cut into 1 inch squares.
- 4. Haupia Twist: Substitute the coconut milk with 1 can of crushed pineapple and blend to liquify (use a blender or food processor). Continue with directions above and layer on top of the coconut layer.
HAUPIA LILIKO'I PIE (HAWAIIAN COCONUT AND PASSION FRUIT PIE)
Haupia is a traditional coconut milk-based Hawaiian dessert. Technically it's considered a pudding, but the consistency is closer to jello. This one is topped with a passion fruit glaze in a pie shell. Great to share with family and friends for the holidays.

- In a saucepan, combine cornstarch, sugar, and salt.
- Slowly add coconut milk, stirring until blended and cornstarch dissolves.
- Using a heat diffuser to prevent mixture from over-cooking, cook until thick and smooth.
- Pour into pie shell and chill until set.
- Blend sugar, cornstarch, juice concentrate, and water.
- Cook until thick, stirring constantly.
- Cool slightly and pour over chilled haupia filling; chill until set again.

- Place the cornstarch, sugar, and salt into a saucepan; stir in 1/4 of the coconut milk to make a smooth paste. Stir in the remaining coconut milk, and bring to a simmer over low heat, stirring constantly. Cook and stir until thickened so that it coats the back of a spoon, about 5 minutes. Pour into a 9x13 inch baking dish; refrigerate until cold.

- Place coconut milk in a small saucepan over medium heat.Meanwhile, combine sugar and cornstarch in a bowl, and add the water. Whisk until completely combined.
- When the coconut milk just starts to simmer, add the sugar/cornstarch mix, and whisk. Keep whisking until the mixture thickens and starts looking slightly translucent. This took me about 10 minutes. When you bring your whisk up, the haupia should flow off of it and you can see the trace of it for a few seconds before it "melts away".
- Pour into the 8x8 pan and allow to cool on the counter before refrigerating. Refrigerate until solid and completely cooled. If you are using the full 5 tablespoons, you should be able to pull the sides away from the pan and invert the whole thing onto a cutting board. If it seems too soft for that, just cut it while in the pan. Cut into 2 inch pieces (16 pieces total) and serve.
