3 tablespoons Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons reduced-sodium soy sauce
1 tablespoon sesame oil
1 teaspoon hot pepper sauce
1 pound tuna steaks, cut into thirty 1-inch cubes
Cooking spray
1/4 cup sesame seeds
1/2 teaspoon salt
1/4 teaspoon pepper
2 green onions, finely chopped

Steps:

  • In a small bowl, whisk the first five ingredients; set aside. Spritz tuna with cooking spray. Sprinkle with sesame seeds, salt and pepper. In a large nonstick skillet, brown tuna on all sides in batches until medium-rare or slightly pink in the center; remove from the skillet., On each of 30 wooden appetizer skewers, thread one tuna cube. Arrange on a serving platter. Garnish with onions. Serve with sauce.

1 pound skinless salmon fillet, sliced into 1-inch-thick strips
1 pound skinless tuna loin, sliced into 1-inch-thick strips
1 pound yellowtail fillet, sliced into 1-inch-thick strips
Canola oil
Salt and freshly ground black pepper
Garlic-Lime Aioli, recipe follows
Spicy Ponzu, recipe follows
Orange-Ginger Sauce, recipe follows
1 cup mayonnaise
2 cloves garlic, smashed to a paste with salt
Zest and juice of 1 lime
Salt and freshly ground black pepper
1/2 cup soy sauce
1/4 cup fresh lemon juice
1 teaspoon chile-garlic sauce
Pinch sugar
Freshly ground black pepper
1 tablespoon canola oil
2 tablespoons peeled and finely grated fresh ginger
1/4 teaspoon red chile flakes
1 1/2 cups fresh orange juice
2 tablespoons light brown sugar
2 tablespoons low-sodium soy sauce
Juice of 1 lime
2 tablespoons rice vinegar
1/2 teaspoon grated orange zest
1/4 teaspoon grated lime zest
1 large scallion (white and green part), thinly sliced
1 teaspoon toasted white sesame seeds

Steps:

  • Preheat a charcoal grill or kamado-style ceramic charcoal cooker for direct grilling over high heat.
  • Thread one strip of fish per skewer, brush with oil on both sides and sprinkle with salt and pepper. Grill until slightly charred on both sides and still rare in the middle, about 30 seconds per side. Serve on platters with the dipping sauces in small bowls.
  • Whisk together the mayonnaise, garlic, lime zest and juice and salt and pepper to taste. Let stand 10 minutes to allow the flavors to meld before serving.
  • Whisk together the soy sauce, lemon juice, chile-garlic sauce and sugar and season with pepper. Let the sauce sit at room temperature for at least 30 minutes before serving.
  • Heat the oil in a medium saucepan over medium heat. Add the ginger and red chile flakes and cook until the ginger is soft, about 2 minutes. Increase the heat to high, add the orange juice, brown sugar, soy sauce and lime juice and cook until the mixture is reduced by about one-quarter, stirring occasionally, 8 to 10 minutes.
  • Remove from the heat, stir in the rice vinegar and orange and limes zests and let cool to room temperature. Add the green onions and sesame seeds just before serving.

2 teaspoons grated fresh ginger
1/3 cup carrot juice
2 tablespoons fresh orange juice
2 teaspoons low-sodium soy sauce
1 tablespoon plus 2 teaspoons distilled white vinegar
1/8 teaspoon red-pepper flakes
1/4 teaspoon sesame oil
1 scallion, green part only, thinly sliced
3 tablespoons unhulled white sesame seeds
1 tablespoon unhulled black sesame seeds
1 pound sushi-grade yellowfin tuna, cut into 4-ounce rectangular pieces
1 tablespoon safflower oil

Steps:

  • Make the dipping sauce: Combine mirin, miso, ginger, carrot juice, orange juice, soy sauce, vinegar, red-pepper flakes, and sesame oil in a small bowl, whisking until miso dissolves. Sprinkle with sliced scallion.
  • Make the tuna: Combine sesame seeds in a shallow dish. Press tuna pieces into seeds, turning to coat each side. Heat oil in a medium saute pan over medium-high heat. Add tuna, and cook each side until white seeds are golden, about 20 seconds per side. Transfer tuna to a paper-towel-lined plate for 1 minute, then cut each piece into 1/4-inch-thick slices. Serve with dipping sauce.

Sesame-crusted ahi tuna with soy ginger lime sauce is a healthy and very simple dish to make! Pickled cucumbers add a sweet and tangy crunch with each bite.

1/2 cup rice wine vinegar (Kikkoman)
1/2 cup water
1/3 cup sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon red chili flakes (dried )
2 6-inch japanese cucumbers (or Persian, cut into ⅛-inch slices)
2 teaspoons ginger (minced)
6 tablespoons lime juice (about 2 limes)
4 tablespoons soy sauce (plus 2 more teaspoons)
1 teaspoon sesame oil
2 tablespoons honey
2 teaspoons water
1/2 teaspoon red chili flakes (dried)
20 ounces ahi tuna ((four 5-oz pieces) about 1-inch thick)
8 tablespoons sesame seeds ((white, black or mixture of both))
2 tablespoons grapeseed oil (or vegetable oil)

Steps:

  • Combine vinegar, water, sugar, salt, and chili flakes in a medium saucepan and bring to a boil over high heat.
  • Remove from heat. Add cucumber slices and stir.
  • Let it rest for 10 minutes, then transfer cucumber to a sealable container and refrigerate until ready to use.
  • Whisk together all soy ginger lime sauce ingredients together in a small bowl. Set aside until ready to serve.
  • Place sesame seeds on a plate. Pat dry the tuna steaks with a paper towel to remove excess water.
  • Dredge and press tuna in sesame seeds, coating evenly. Sprinkle with more seeds as needed.
  • In a medium frying pan over medium-high heat, warm the oil until just smoking.
  • Frying two portions at a time, arrange the tuna steaks in the pan (do not overcrowd) and cook until the sesame seeds start to turn golden underneath, about 1 minute.
  • Turn the tuna over and cook for 1 minute.
  • Sear the edges of the tuna for 15 seconds on each edge.
  • Transfer the tuna to a plate with a paper towel, gently patting to soak up any excess oil. Repeat with remaining tuna portions.
  • Transfer tuna to a cutting board and cut ¼-inch thick slices.
  • Arrange tuna on individual serving plates or bowls. Serve with pickled cucumbers and soy ginger lime sauce.

2 lbs tuna
3 -4 tablespoons redfish blackening seasoning
1/4 cup olive oil
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons spicy mustard
1 lemon, juice of
2 tablespoons horseradish (or to taste)
1/4 teaspoon paprika

Steps:

  • Make the mustard first: Mix all ingredients in a small saucepan.
  • Bring to a boil, stirring often.
  • When somewhat smooth, it's done.
  • Now start the tuna: TUNA Cut up tuna in large bite size pieces Coat with blackening seasoning Heat oil in pan till very hot, but not smoking Sear tuna on all sides for about 7-10 minutes total.
  • Do not overcook.
  • It's good for the tuna to be slightly pink on the inside.
  • Serve right away with Cajun Mustard.
  • This can also be made with peeled jumbo shrimp.

Seared Tuna:
¾ cup sesame seeds (mixed white and black seeds, if possible)
4 (6 oz.) sushi-quality fresh tuna steaks, 1" thick
salt & fresh-ground pepper
2 tblsp. olive oil
Wasabi Dipping Sauce:
2 scallions, chopped fine
1 tsp. coriander chopped fine
2 tblsp. lime juice
3 tblsp. soy sauce
1 ½ tblsp. wasabi powder
6 tblsp. butter
Spicy Soy Dipping Sauce:
3 tblsp. soy sauce
1 tsp. sugar
¼ tsp. cayenne pepper flakes
½ cup chicken broth (canned or from cubes okay!)
1 tsp. sesame oil
1 scallion, chopped
3 cloves garlic, chopped

Steps:

  • First make the Dipping Sauces. For the Spicy Soy sauce, combine the soy sauce, sugar, cayenne pepper, and chicken broth in a bowl. Heat the sesame oil and saute chopped scallion and garlic for one minute. Turn heat down to low, add the soy sauce mixture, and simmer until reduced to 1/3 cup, about 2 minutes. For the Wasabi Dipping Sauce, Stir together all ingredients except the butter, bring to a boil, remove from heat, and whisk in the butter. Then wash & pat dry tuna steaks. Season with salt & pepper and roll them in sesame seeds to coat. In a non-stick pan, heat the oil until very hot (smoking), add tuna steaks and "saear" tuna, cooking only until the white sesame seeds start to turn gold, about one minute. While you can cook them longer, don't overcook! Carefully turn the tuna steaks and cook them for another minute. Transfer tuna steaks to a cutting board and cut them into appetizer-sized cubes. Spear with toothpicks and serve immediately with dipping sauces.

1 tablespoon honey

Tuna steaks with a sesame seed crust served with a Japanese dipping sauce. Very easy, quick and healthy meal to prepare.

olive oil
4 tuna steaks
sesame seeds (I haven't listed quantity as it will vary for size of steaks, but enough to cover one side of tuna)
18 g paste miso
3 tablespoons mirin
3 tablespoons sake
2 tablespoons sugar
2 tablespoons rice vinegar
2 teaspoons Japanese soy sauce
1/4 teaspoon wasabi

Steps:

  • The above ingredients can be found in a lot of regular grocery stores. But you will find them in just about any Asian grocery store. There are imitation mirins out there, which are without alcohol they are fine but tend to be sweeter I would use less if buying these.
  • Cover one side of tuna completely with sesame seeds and place steaks back in fridge.
  • Combine all the other ingredients in a saucepan heat until blended and sugar has dissolved. Leave on low heat to keep warm.
  • Heat some olive oil in a fry pan, place Tuna sesame seed side down cook for 4 minutes turn over and cook on the other side for a further 4 minutes. Tuna should be pink in the middle so vary cooking time for how thick the cut is. You can cook it all the way through if preferred, but the tuna will be a lot drier and tough.
  • Serve tuna on plate with dipping sauce in separate small serving bowls.
  • I served mine with spinach topped with a roasted sesame seed dressing.
