Time 35m

Number Of Ingredients 8

3 large eggs
2 tablespoons organic honey (preferably local)
2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1 cup whole milk
1 teaspoon pure vanilla extract
1 stick salted butter, melted

Steps:

  • Preheat the waffle iron to high. Rub the plates with a little butter or oil (particularly if it's not a non-stick iron).
  • Whisk the eggs and honey together in a large mixing bowl. In a large measuring cup, mix the milk, butter and vanilla together, and then whisk the mixture into the eggs.
  • Sift the flour, baking powder and salt into the egg mixture, then stir it together until it's just combined.
  • Spoon the batter onto the waffle iron, spreading it out so that it's about 1/2" thick, and then cook for 3-4 minutes, or until the outside is a dark golden brown.

Time 45m

Yield 8 serving(s)

Number Of Ingredients 12

2 eggs
1 cup whole wheat flour
1 cup all-purpose flour
2 cups buttermilk
1 tablespoon Splenda granular
3 tablespoons vegetable oil
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup low-fat granola
3 tablespoons unsalted butter (optional)
1/2 cup sugar-free honey (optional)
1/4 cup natural no-sugar-added peanut butter (optional)

Steps:

  • Lightly oil waffle iron (if needed) and preheat.
  • In mixing bowl, beat eggs until foamy, then add remaining waffle ingredients, stirring until smooth.
  • Pour batter onto hot waffle iron (your manufacturer's guide should say how much since waffle irons are different sizes).
  • Bake about 5 minutes or until the steaming stops.
  • Keep extras warm while making the remaining batter. And while waffles bake, mix honey with peanut butter and microwave about 30 seconds to 1 minute to soften it up. Stir to mix.
  • Top waffles with butter and drizzle with peanut-honey topping.

WHOLE GRAIN WAFFLES

Whole Grain Waffles image

I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

WHOLE WHEAT-OAT WAFFLES

Whole Wheat-Oat Waffles image

Mix the batter with a fork until it just barely comes together. A lumpy batter now means a light and tender waffle later.

Categories     Bon Appétit     Breakfast     Brunch     Waffle     Whole Wheat     Oat     Blueberry     Butter     Lemon     Vegetarian     Soy Free     Peanut Free     Tree Nut Free     Kid-Friendly

Yield 4-6 servings

Number Of Ingredients 15

Syrup:
1 lemon, zest removed in wide strips, halved
⅓ cup granulated sugar
1 (10-12-oz.) bag frozen blueberries
1 Tbsp. cornstarch
Waffles and assembly:
1 cup (125 g) whole wheat flour
½ cup plus 2 Tbsp. (60 g) quick-cooking old-fashioned oats
1 tsp. baking powder
½ tsp. baking soda
1 tsp. Diamond crystal or ½ tsp. Morton kosher salt
1½ cups plain yogurt (not Greek)
4 Tbsp. unsalted butter, melted, plus more room-temperature for serving
1 large egg
Nonstick vegetable oil spray or melted unsalted butter (for iron)

Steps:

  • Syrup:
  • Bring lemon zest, sugar, and ⅔ cup water to a boil in a heavy medium saucepan, stirring until sugar dissolves. Cook (do not stir) until a thin syrup forms, 6-8 minutes. Add blueberries and bring to a simmer. Reduce heat to medium; cook, stirring constantly, 2 minutes.
  • Transfer 2 Tbsp. syrup to a small bowl, add cornstarch, and stir until smooth. Add back to syrup; simmer until thickened, about 1 minute. Remove from heat. Fish out lemon zest and discard. Squeeze in lemon juice to taste and let cool slightly.
  • Waffles and assembly:
  • Whisk flour, oats, baking powder, baking soda, and salt in a large bowl. Make a well in the center and add yogurt, then melted butter, then egg to well. Using a fork, stir together wet ingredients, then mix, incorporating dry ingredients a little at a time, until a lumpy batter forms.
  • Heat waffle iron on medium-low. Lightly coat with nonstick spray and pour a heaping ½ cup batter onto iron (or up to 2 cups if using a larger one). Cook until waffles are golden brown and cooked through, about 5 minutes. (Keep warm on a baking sheet in a 300° oven if desired.) Repeat with remaining batter, coating iron with more nonstick spray as needed. Serve with butter and warm syrup.

  • Add the maple syrup, egg, milk, melted butter and vanilla. Stir the wet ingredients together a little bit before mixing them in with the dry ingredients. Don’t overmix the batter. It’s OK to have a few lumps.
  • Pour the batter into your waffle iron. See your manufacturer’s instructions for how much to use for each waffle; mine is about 1/2 cup of batter per waffle.
